SPARKLING LIME (OR LEMON) BEVERAGE
I find this beverage extermely refreshing, and I will drink it, or its lemon variant, around the order of once or twice a day. It provides a perky hint of flavor without making the beverage so tart one is driven to add sugar or sugar substitutes -- and it's simple and quick. And unlike commercially-flavored seltzer waters, it tastes real.

Steps:
- Squirt juice into water tumbler, add ice, add cold seltzer water to fill.
- Garnish, if desired, with a thin slice of lemon or lime or orange, and enjoy.

CHERRY-LIME SPARKLER

Steps:
- Place the pitted cherries in a large mixing bowl. Add the sugar, lime juice and salt. Stir until the cherries are evenly coated. Set aside at room temperature for 1 hour to macerate the cherries.
- Drain the cherry mixture, collecting and reserving all the juice. Thread the macerated cherries amongst 8 cocktail skewers and set aside for garnish.
- Stir together the reserved cherry juice and seltzer in a small pitcher.
- Fill 8 highball glasses with ice cubes. Pour the cherry sparkler over the ice and garnish each glass with a skewer of cherries and a sprig of mint. Serve immediately.

Steps:
- Place one teaspoonful of frozen limeade in each of 6 glasses. We also like to mix the flavors, a little limeade and a little cherry or raspberry to make it less sour.
- Recover frozen limeade cans and store in freezer for future use.
- Add crushed ice to each glass, to the top.
- Pour lemon-lime soda in each glass, pouring on the side of the glass to keep it fizzy. Do NOT stir. Leave the limeade flavoring on the bottom so it will look pretty and taste great.

LEMON-LIME LAYER BARS
True Minnesota church basement-style bars. Cool, refreshing, and original, these bars go nicely on a plate with others for contrast or are equally well served on their own. I haven't found another recipe for these online and thought it should be shared! Originating in the 1970s, this recipe comes from my Aunt Bev. Keep refrigerated.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Combine 1 cup flour, 1/2 cup softened butter, and 3 tablespoons brown sugar in a bowl. Pat into the bottom of a 9x13-inch baking pan.
- Bake in the preheated oven until slightly golden, 8 to 10 minutes. Remove from the oven; leave the oven on.
- Combine 1 cup brown sugar, coconut, pecans, eggs, 3 tablespoons flour, vanilla, baking powder, and salt in a bowl and spread over baked first layer. No need to cool in between.
- Bake in oven for 20 minutes.
- Meanwhile, stir pudding mix, white sugar, 1/4 cup water, and egg yolks together in a medium saucepan. Stir in remaining water. Bring to a boil over medium heat, stirring constantly, until slightly thickened. Remove from heat and stir in lime gelatin mix until dissolved. Spread over baked second layer in the pan while still warm.
- Refrigerate until well set, 8 hours to overnight. Cut into 24 squares and serve.
