Lemony Shrimp over Brown Rice image

This shrimp dish was something I threw together one night and my family loved it. It's really easy, healthy, and tasty!

1 cup brown rice
1 ⅔ cups water
3 tablespoons butter
3 tablespoons olive oil
2 cloves garlic, minced
½ cup white wine
2 tablespoons fresh lemon juice
1 ½ pounds medium shrimp - peeled and deveined
¼ cup chopped fresh flat-leaf parsley
½ teaspoon cornstarch

Steps:

  • Combine the brown rice and water in a small saucepan. Bring to a boil, reduce heat to low and cook until all the water is absorbed, about 25 minutes.
  • Melt the butter with the olive oil in a skillet over medium heat; cook the garlic in the butter and oil until fragrant, 1 to 2 minutes. Pour in the wine and lemon juice; reduce heat to medium-low and simmer. Stir in the shrimp and cook until the shrimp turns pink, stirring regularly, 5 to 7 minutes. Sprinkle the parsley over the shrimp and cook another 2 minutes. Add the cornstarch to the liquid and stir until it thickens, about 1 minute more. Serve hot over the brown rice.

2 tablespoons butter or margarine
1 package (6.2 oz) rice and vermicelli mix with almonds and Oriental seasonings
2 cups water
2 tablespoons orange marmalade
1 teaspoon grated lemon peel
1 lb uncooked peeled deveined medium shrimp, thawed if frozen, tail shells removed
1 1/2 cups frozen sugar snap pea pods

Steps:

  • In 12-inch nonstick skillet, cook butter, rice and vermicelli mix and contents of seasoning packet over medium heat about 2 minutes, stirring frequently, until rice and vermicelli are light golden brown.
  • Stir in water. Heat to boiling; reduce heat to low. Cover and cook about 15 minutes or until most of liquid is absorbed.
  • Stir in marmalade, lemon peel and shrimp. Cover and cook 5 to 6 minutes, stirring occasionally, until shrimp are pink and firm. Stir in pea pods. Cover and cook 3 to 4 minutes or until pea pods are crisp-tender.

2 packages (6.2 ounces each) fried rice mix
1-1/2 pounds uncooked medium shrimp, peeled and deveined
1 tablespoon canola oil
1/4 cup orange marmalade
2 teaspoons grated lemon zest
3 cups frozen sugar snap peas, thawed

Steps:

  • Prepare rice mix according to package directions, simmering for 10-15 minutes or just until rice is tender. Remove from the pan., In the same skillet, cook and stir shrimp in oil over medium-high heat for 4-6 minutes or until shrimp turn pink; stir in orange marmalade and lemon zest. Add snap peas and rice; heat through, mixing gently to combine. Serve immediately.

1/2 cup orange juice
1 tablespoon grated ginger
1 tablespoon honey
1 tablespoon soy sauce
1 teaspoon cornstarch
1/2 teaspoon crushed red pepper
Splash of rice vinegar
Splash of sesame oil
Pinch kosher salt
1 clove garlic, grated
Vegetable oil, for frying
1/2 cup all-purpose flour
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 large eggs
1 1/2 cups panko breadcrumbs
1 pound peeled and deveined jumbo shrimp, butterflied and tails removed
Rice, for serving
2 scallions, sliced thin, for garnish

Steps:

  • For the sauce: Put the orange juice, ginger, honey, soy sauce, cornstarch, crushed red pepper, vinegar, sesame oil, salt and garlic in a small nonstick skillet over medium heat and whisk thoroughly to incorporate the cornstarch into the liquid. If you have a few lumps remaining, that is fine. Heat until bubbling and starting to thicken, about 5 minutes. Remove from the heat and set aside.
  • For the crispy shrimp: Heat about 1/2 inch of vegetable oil in a nonstick skillet over medium heat to 350 degrees F.
  • Add the flour, salt and pepper to a shallow dish. Crack the eggs into a second shallow dish and beat well. Place the panko in a third dish. Bread the shrimp by dipping them first in the flour mixture and shaking off any excess, then in the egg and finally in the breadcrumbs, pressing to make sure each shrimp has an even coating.
  • Fry the shrimp in 2 batches, flipping halfway through, until golden, 1 to 2 minutes per side. Drain on a paper towel-lined plate.
  • Before serving, add the sauce to the bottom of a bowl. Add the shrimp and toss gently to coat. Serve over rice and garnish with the sliced scallions.

1 cup dry white wine, such as Sauvignon Blanc
1 tablespoon olive oil
3 garlic cloves, sliced
1/4 teaspoon red-pepper flakes
Coarse salt and ground pepper
1 pound medium shrimp, peeled and deveined
1 lemon, cut into 8 wedges and seeded
2 tablespoons chopped fresh parsley

Steps:

  • In a shallow 2-quart microwave-safe dish with a lid, combine rice, wine, oil, garlic, red-pepper flakes, and 2 cups water; season with salt and pepper.
  • Cover, and microwave on high until rice is tender and liquid is absorbed, 20 minutes, stirring twice during cooking.
  • Stir in shrimp and lemon wedges; cover, and microwave 3 minutes more. Let stand, covered, until shrimp are opaque throughout, 2 minutes. Stir in parsley; serve immediately.

Steps:

  • cook rice with water until done and fluffs up nice on fork; add lemon peel, chopped herb (cilantro or parsley) salt and pepper.
  • in another pan throw garlic, butter, sliced lemon, oregano, salt, pepper, red chili flakes.
  • When butter is melted add shrimp and cook until pink.
  • Serve rice and spoon shrimp and butter mix on top.
  • Serve with a simple spinach salad and fresh french bread and voila!

3/4 lb frozen cooked shrimp, peeled, deveined
1 tablespoon vegetable oil
1 cup sugar snap pea
1 small sweet red pepper, sliced
1/4 cup reduced sodium soy sauce
3 tablespoons frozen orange juice concentrate, thawed
1 tablespoon honey
1 teaspoon fresh gingerroot, minced
1 garlic clove, minced
1 (10 ounce) can mandarin orange segments, drained
1/2 cup green onion, chopped

Steps:

  • Prepare rice according to package directions. Reserve. Run cool running water over the shrimp until thawed; drain well.
  • Heat oil in a nonstick wok or large skillet set over medium-high heat. Add the sugar snap peas and red pepper. Stir-fry for 5 minutes or until tender and lightly browned.
  • Stir in the soy sauce, orange concentrate, honey, ginger, and garlic. Cook for 1 minute or until sauce has slightly thickened.
  • Stir the cooked rice, shrimp, orange segments and green onion into the sauce. Cook, tossing, until rice and shrimp are heated through and coated with sauce.
  • NOTE: Use up leftovers by stirring 1 1/2 cups sliced, cooked chicken, steak or pork into the stir-fry pan instead of the cooked shrimp.
