Steps:
- Pour the olive oil into a large skillet set over medium heat. Dump in the tomatoes and the garlic and cook, stirring often, until the tomatoes become a little soft, about 3 minutes. Turn off the heat and set aside.
- Pour the chicken stock and orzo into a large pot. Turn the heat to high and bring to a boil. Reduce the heat to a gentle simmer, cover, and cook for 7 minutes. Turn off the and let the pot sit, covered, for an additional 3 minutes.
- Stir in the thyme, capers, pine nuts, cheese, lemon zest, and the cooked tomatoes and garlic. Season with salt and pepper to taste.

LEMON ORZO PASTA
This is a 6-ingredient lemon orzo pasta made is a very flavorful and aromatic meal to make as a side or main course.

Steps:
- Heat a stainless steel pan for 30 seconds and then add vegan butter
- Once the butter has melted, add garlic cloves to the pan
- Add orzo to the pan and mix well. Let the butter coat every orzo
- Let it saute for about 1 minute
- Add water
- Next, add salt to the pan and mix well
- Cook on medium heat for 20-25 min or until all the water is gone (see notes)
- Be sure to stir occasionally so that the pasta doesn't stick at the bottom.
- When the water is gone, drizzle the lemon juice
- Transfer to a serving bowl and serve immediately
