TUSCAN-STYLE ROASTED ASPARAGUS

- Preheat oven to 400°. Place the asparagus, tomatoes and pine nuts on a foil-lined 15x10x1-in. baking pan. Mix 2 tablespoons oil, garlic, salt and pepper; add to asparagus and toss to coat. , Bake 15-20 minutes or just until asparagus is tender. Drizzle with remaining oil and the lemon juice; sprinkle with cheese and lemon aest. Toss to combine.

POACHED SALMON WITH ASPARAGUS
It is so much easier to remove the skin from the salmon while it is still warm - otherwise it will stick firmly to the salmon.

Steps:
- Preheat the oven to 180C/160C Fan/Gas 4.
- Lightly butter a large sheet of kitchen foil big enough to wrap the salmon.
- Put a few sprigs of dill to one side of the foil. Season the foil and place the salmon on top, skin-side up. Pour over the white wine and lemon juice. Fold the foil over the fish to make a parcel, sealing the edges at the side.
- Lift into a large roasting tin and bake for about 25 minutes, or until just cooked, pale pink and matte. Leave to rest for 10 minutes, then carefully remove the skin and scrape off any grey fat.
- To make the garnish, blanch the asparagus in a pan of boiling water for 3 minutes. Drain and refresh under cold water. Cut into small pieces.
- To make the dressing, mix all of the dressing ingredients together in a jug.
- Using two fish slices, transfer the salmon onto a serving platter. Arrange the asparagus along the length of the fish, scatter the shrimps over the top and spoon over some of the dressing. Garnish with slices of radish or micro herbs.
- Serve with the remaining dressing in a jug.
EASY LEMON PARMESAN BAKED SALMON
This is very quick, very healthy, and very easy. I served this with a quick and easy saute (see: "Quick Sauteed Curry Style Vegetables" in my recipes).

- Cooks tip: don't worry about the skin before cooking. It helps to keep the fish moist and flavorful, and comes away easily when the fish is cooked.
- Preheat oven to 425 F./broil.
- In a small rectangular baking dish, pour oil and the juice from the lemon.
- Coat both sides of the fish in the oil/juice; season fish with salt, pepper, thyme leaves, and garlic powder; place Parmesan on a plate and press fish side down into the Parmesan (not the skin side) and place fish fish side up (skin side down) in the baking dish. Sprinkle any escaped cheese onto top of the fish.
- Broil about 4-6 inches from element (top rack) for 10-12 minutes, or until fish flakes easily.

- Preheat oven to 400°F (200°C). Line a rimmed 17 by 12-inch baking dish with parchment paper. Place salmon in center of pan (or see note below).
- In a mixing bowl whisk together 1 1/2 Tbsp olive oil, the lemon zest, lemon juice, 2 cloves garlic, dijon, onion powder. Brush evenly over top of salmon then sprinkle with 1/2 tsp salt and pepper (add more pepper to taste if desired). Top with lemon slices.
- Toss asparagus with remaining 1 Tbsp olive oil, remaining 2 cloves garlic and season with salt, then place around salmon.
- Bake in preheated oven 10 minutes. Remove from oven, toss asparagus then sprinkle asparagus with parmesan. Return to oven and bake until salmon has cooked through, about 5 - 10 minutes longer. Cut salmon into portions. Serve warm.

- Preheat oven to 400 degrees. Line a large baking sheet with foil and lightly grease with cooking spray.
- Arrange salmon in the center of the pan and arrange asparagus around the sides of the pan. Arrange lemon slices under the edges of the salmon. Season salmon and asparagus with salt and pepper.
- In a small sauce pan, melt butter over medium high heat. Once melted stir in garlic, lemon juice, and Italian seasoning. Pour mixture over salmon and asparagus. Sprinkle parmesan over salmon and asparagus.
- Bake for 10 minutes, then change oven to broil and cook another 5-7 minutes. Top with fresh herbs if desired and serve.
