This is a great casserole that is quick and cheesy! You can add other veggies for a summery twist - sliced zucchini or chopped spinach work great!

2 (10 ounce) cans artichoke hearts in water, drained
8 ounces grated Parmesan cheese
2 teaspoons garlic powder
½ cup mayonnaise
2 tablespoons dried parsley
1 pinch paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place artichoke hearts in a glass mixing bowl. Mix in cheese, garlic powder, mayonnaise and parsley until well coated. Spread mixture in 9x13 inch glass baking dish and sprinkle with paprika.
  • Bake in preheated 350 degrees F (175 degrees C) oven until bubbly, about 25 to 35 minutes. Serve hot.

The flavors in this recipe remind me of the delicious stuffed, braised artichokes that my mom makes, but it much simpler and quicker to prepare. It is very flavorful and great for a healthy side dish or appetizer. I enjoy citrus flavors -- if you are not as much a fan or do not like stronger lemon flavors you may want to reduce the amount of lemon. I hope you enjoy it!

18 ounces frozen artichoke hearts
1 lemon, juice of
1 tablespoon fresh parsley, chopped
3 tablespoons seasoned dry bread crumbs
2 tablespoons grated parmigiano
2 garlic cloves, minced
1 pinch red pepper flakes (optional)
1 teaspoon extra virgin olive oil

Steps:

  • Preheat oven to 375°F.
  • Coat a 9-inch glass pie plate with cooking spray.
  • Place artichokes in a colander and, if needed, rinse with cold water to separate. Drain well and pat dry with paper towels.
  • Place artichokes in prepared pie plate. Add lemon juice and parsley; season with salt and pepper and stir to combine.
  • In a small bowl, combine breadcrumbs, cheese, garlic, olive oil, and red pepper. Sprinkle the mixture evenly over the artichokes.
  • Bake for 15-20 minutes or until topping is golden.

2-1/2 teaspoons salt, divided
1/2 pound fresh asparagus, trimmed and cut into 1-1/2-inch pieces
4 cups uncooked bow tie pasta (about 12 ounces)
3 tablespoons olive oil, divided
1 can (14 ounces) water-packed quartered artichoke hearts, well drained
2 garlic cloves, minced
1 cup crumbled goat cheese
2 tablespoons minced fresh parsley
1 tablespoon grated lemon zest
2 to 3 tablespoons lemon juice
1/3 cup grated Parmesan cheese

Steps:

  • Fill a 6-qt. stockpot three-fourths full with water; add 2 teaspoons salt and bring to a boil. Add asparagus; cook, uncovered, 1-2 minutes or just until crisp-tender. Remove asparagus and immediately drop into ice water. Drain and pat dry., In same pot of water, cook pasta according to package directions for al dente. Drain, reserving 1 cup pasta water. Return pasta to pot., Meanwhile, in a large skillet, heat 1 tablespoon oil over medium-high heat. Add artichoke hearts; cook and stir 3-4 minutes or until lightly browned. Add garlic; cook 1 minute longer. Add to pasta., Add asparagus, goat cheese, parsley, lemon peel, lemon juice and the remaining salt and oil; toss to combine, adding enough reserved pasta water to coat. Heat through. Serve with Parmesan cheese.

Steps:

  • Preheat oven to 350°F
  • Grease a 9x12-inch casserole dish.
  • In a large bowl, beat eggs for 4 minutes.
  • Add remaining ingredients and mix together.

1 cup grated Parmesan cheese
1 cup light mayonnaise
1 pinch garlic powder, or to taste
4 (4 ounce) skinless, boneless chicken breast halves
1 (14 ounce) can artichoke hearts, drained
1 (8 ounce) package crimini mushrooms, sliced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix Parmesan cheese, mayonnaise, and garlic powder together in a bowl.
  • Arrange chicken breasts in a 9x13-inch baking dish; top with artichoke hearts and crimini mushrooms. Spread cheese mixture over the artichoke and mushroom layer.

3 tablespoons olive oil
2 garlic cloves, minced
1 teaspoon salt
1 teaspoon coarsely ground pepper
1/3 cup shredded Parmesan cheese
