Steps:

  • Whip the cream and sugar together until soft peaks form. Stir in the wine, most of the lemon zest and the juice. Spoon into glasses or bowls, sprinkle with the remaining zest and serve with almond thins or berries.

Traditional British everlasting syllabub with spices, sherry and lemon.

⅛ tsp ground cloves
⅛ tsp ground cinnamon
⅛ tsp nutmeg
50 g caster sugar
1 lemon (zest and juice)
4 tbsp sherry (dark cream)
300 ml double cream
120 g ginger biscuits

Steps:

  • Zest and juice the lemon.
  • Put the spices, sugar, zest, lemon juice and sherry in a bowl and stir so that the mixture dissolves.
  • Pour the cream into the spice mix, whisking continuously.
  • Continue to whip until the cream reaches the soft peak stage.
  • Break the biscuits roughly and blend in a food processor until the biscuits become crumbs.
  • Divide the biscuit mixture between 4 glasses and top with the syllabub.
  • Leave in the fridge for an hour to set before serving.

This is a deliciously light, creamy, sophisticated little dessert from days gone by. I first tasted it at a supper given by a lecturer in seventeenth-century literature when I was at college, and it took our tastebuds right back to the Restoration. It can be prepared as either a parfait or a punch--please note that either version contains alcohol, so you may not want to serve this to younger family members.

1 cup heavy whipping cream, chilled
½ cup white sugar
¼ cup white wine
⅛ cup fresh lemon juice
1 teaspoon grated lemon zest
¼ teaspoon ground nutmeg (or to taste)
1 sprig fresh mint leaves for garnish
lemon slices for garnish

Steps:

  • Whip the cream and sugar in a chilled bowl, until the cream begins to thicken. Gradually whip in the white wine, lemon juice, and lemon zest. Continue to whip until light and fluffy, but not grainy. Cover the mixture and chill until serving time.
  • Serve in chilled parfait glasses, garnished with a dash of nutmeg, a sprig of mint, and a slice of lemon. Syllabub should be eaten with a small spoon, and savored.

This is really an Anglo-Italian hybrid: the syllabub is entirely English, though the liqueur used makes it Italian in the extreme. The crumbled Amaretti biscuits give a trifle-like contrast of soaked sponge and soft cream. Utterly delicious, and the work of moments to make, this is something you can pull out anytime you want to end a dinner party with aplomb.

1/3 cup amaretto liqueur
2 tablespoons sugar
1 tablespoon lemon juice
1 cup heavy cream
1 (8-ounce) packet amaretti morbidi (soft almond macaroons)

Steps:

  • Pour the amaretto liqueur into a bowl with the sugar and lemon juice and whisk to mix.
  • Whisk in the heavy cream and whip this mixture until it has thickened but is still soft and billowy.
  • Crumble 2 little amaretti biscuits into each of the 4 glasses (each with a yield of about 2/3 cup).
  • Divide the syllabub between the glasses on top of the crumbled biscuits.
  • Crumble another macaroon or 2, and sprinkle this golden rubble over the top of all the glasses to give a fine sprinkle of crumbs on each. Serve the remaining amaretti alongside the syllabub.

So many times they have made this dessert called syllabub and I've always wanted to know how. Please note that there is a healthy option listed as the last step. This recipe is from a British cooking magazine. Enjoy!

A simple but nice dessert. I use my homemade lemon, lime or orange curd for this. I like it best with gingersnap cookies but you can use lemon or shortbread biscuits/cookies. The almonds you toast in a dry frying pan.

4 cookies, of your own choice
1/2 cup white wine
1 cup double cream
4 tablespoons icing sugar
8 tablespoons lemon curd
2 tablespoons toasted sliced almonds
mint leaf (to garnish) (optional)

Steps:

  • Set out 4 serving glasses and crumble a biscuit in each one, use half of the wine to moisten the crumbs.
  • Whip the cream together with the sugar until you have soft peaks.
  • Fold in the remaining wine, after that the lemon curd, try to achieve a marbled effect.
  • Spoon into the glasses, sprinkle with the almonds, garnish with the mint and serve.
