Steps:
- Mix olive oil, garlic, thyme, salt and pepper in a shallow pan.
- Toss aparagus in the mixture and coat thoroughly. Cook immediately, or for more flavorful asparagus, let sit in fridge for twenty minutes.
- Fire up the grill and cook until asparagus are browned or until desired.
- Serve immediately.

- Preheat your grill to High (about 400 degrees F)
- Trim the woody, tough ends off of the asparagus and lay them out in a single row on a baking sheet or cutting board.
- Drizzle with the olive oil, season with the salt and pepper, and sprinkle with the lemon zest, juice, and garlic. Roll around gently on the pan to ensure the asparagus are all evenly covered.
- Place the asparagus directly on the grill and roast the asparagus for 8-10 minutes, or until the ends have just started to brown and the shoots are still crisp tender. Serve warm or chilled.

THYME MARINATED GRILLED ASPARAGUS

Steps:
- Bring 2 quarts of salted water to a boil in a large stockpot. Add asparagus and cook until it is crisp tender, 3 or 4 minutes, depending on the size. Drain and dip in icy cold water. Set aside.
- In a bowl combine vinegar, shallots, garlic, thyme, orange juice concentrate, and mustard. Slowly whisk in the oil to blend well. Season with salt and pepper.
- Pour mixture over asparagus. Let marinate while you light the coals or start the grill.
- To make the grilling easier, you can place the asparagus on skewers, running a skewer through each end of the spear and fitting about 5 spears on each pair of skewers. Grill the asparagus on each side just to mark it, 1 or 2 minutes per side. Remove from the grill. Serve warm or at room temperature. Or, you can just broil them till they start to brown, 3 to 4 minutes.

LEMONY FRESH ASPARAGUS WITH THYME
It's amazing how something so simple can be so good! Fresh asparagus spears sauteed in extra virgin olive oil with garlic, lemon thyme, Dijon mustard, and fresh lemon. Delicious! I will never go back to plain old steamed asparagus. Serve either hot, cold, or at room temperature. This is a great make-ahead dish.

Steps:
- Warm the olive oil in a large saucepan over medium heat. Add the garlic and saute for 3 minutes.
- Add the asparagus, thyme, Dijon mustard, lemon zest, lemon slices, and salt & pepper; stir to combine.
- Cover and cook until tender-crisp, about 5 minutes, stirring occasionally. Do not over cook.
- Arrange on serving platter and squeeze with fresh lemon juice.
- Serve hot, cold, or at room temperature.
