SOPA DE LENTEJAS (ANDALUCIAN LENTIL SOUP)



Sopa de Lentejas (Andalucian Lentil Soup) image

This is a great soup to have during cold winter months, although it's wonderful anytime of year! It's loaded with fresh veggies and has a hearty flavor anyone will enjoy! Add additional root veggies like carrots if you like.

1 ¼ cups dry brown lentils, soaked overnight and drained
2 slices bacon, chopped
1 tablespoon extra-virgin olive oil
1 onion, chopped
1 green bell pepper, chopped
1 clove garlic, minced
2 roma (plum) tomatoes, chopped
2 links Spanish chorizo sausage, casing removed, chopped
1 bay leaf
2 cups water, or as needed
2 potatoes, peeled and cubed

Steps:

  • Heat olive oil in a large pot over medium heat. Cook the bacon just until it starts to brown a bit, 5 to 8 minutes. Add the olive oil, onion, and bell pepper; cook and stir until vegetables begin to soften, about 5 minutes.
  • Stir in the garlic, tomatoes, sausage, and bay leaf; cook about 4 minutes. Add lentils and water (water should be about an inch deeper than the level of the lentils). Bring to a boil over high heat. Reduce heat to low; simmer, uncovered, until lentils are just cooked, 15 to 20 minutes.
  • Put the potatoes into the soup and continue simmering until potatoes are cooked through, 12 to 15 minutes.

Number Of Ingredients 11

1 cup dry lentils
3-1/2 cups water
1 chicken bouillon cube
1/4 cup KRAFT Zesty Italian Dressing
1 red pepper, chopped
1 small onion, chopped (about 1/2 cup)
6 slices OSCAR MAYER Ham, any variety, chopped
6 slices OSCAR MAYER Ham, any variety, chopped
2 Tbsp. chopped cilantro
2 hard-cooked eggs, sliced
3 Tbsp. KRAFT Grated Parmesan Cheese

Steps:

  • Place lentils in medium saucepan. Add water and bouillon cube; stir. Bring to boil on medium-high heat. Reduce heat to medium-low; simmer 30 min. or just until lentils are tender.
  • Meanwhile, heat dressing in medium skillet on medium-high heat. Add peppers and onions; cook and stir 6 min. or until vegetables are tender. Spoon into medium serving bowl; set aside.
  • Add lentils to vegetable mixture along with the ham and cilantro; mix lightly. Top with the eggs; sprinkle with cheese.

1 taza de lentejas secas
3-1/2 tazas de agua
1 cubo de caldo de pollo
1/4 taza de aderezo italiano fuerte KRAFT Zesty Italian Dressing
1 pimiento (pimentón) rojo, picado
1 cebolla pequeña, picada (aproximadamente 1/2 taza)
6 rebanadas de jamón OSCAR MAYER Ham (cualquier variedad), picadas
2 cucharadas de cilantro picado
2 huevos duros, en rebanadas
3 cucharadas de queso parmesano rallado KRAFT Grated Parmesan Cheese

Steps:

  • Coloca las lentejas en una cacerola mediana. Agrega el agua y el cubito de caldo; mézclalo. Pon el fuego a temperatura media-alta hasta que hierva. Reduce el fuego a medio-bajo; mantén un hervor suave por 30 minutos o hasta que las lentejas estén tiernas.
  • Calienta el aderezo, mientras tanto, en una sartén mediana a fuego medio-alto. Agrega el pimiento y la cebolla; revuelve y cocina los vegetales durante 6 minutos o hasta que estén tiernos. Usa una cuchara y viértelos en un tazón mediano de servir; ponlos a un lado.
  • Agrega las lentejas, el jamón y el cilantro a la mezcla de vegetales; revuélvela con cuidado. Ponle los huevos por encima y espolvoréala con el queso.

  • Prepare the chorizo by either cooking it through as a whole link and slicing into medallions or by removing it from its casing and browning.
