SZECHUAN TOFU AND RED BELLPEPPER



Szechuan Tofu and Red Bellpepper image

This stuff is so tasty and easy to cook. You can use red pepper flakes instead of chile garlic sauce or sriracha chile sauce if you don't have any.

2 tablespoons soy sauce
1 tablespoon rice vinegar
2 teaspoons sugar
1/2 teaspoon chili-garlic sauce
1/4 teaspoon white pepper
1 tablespoon vegetable oil
12 ounces extra firm tofu, cut 1/2-3/4 inches cubes
1 red bell pepper, sliced
1 tablespoon vegetable oil
1 tablespoon garlic, minced
2 teaspoons fresh ginger, minced

Steps:

  • In a small bowl, mix soy sauce, rice vinegar, sugar, chile garlic, and white pepper. Set aside.
  • Heat a large frying pan or wok with oil over med-high heat. Carefully add tofu and sear for a minute then add bellpeppers. Cook until peppers until tender and slightly crunchy. Add a bit more oil if needed.
  • Add the last 3 ingredients: oil, garlic, and ginger to pan; stir until garlic are lightly browned, 1 to 2 minutes. Stir soy mixture and add to pan; bring to a boil and stir until most of the liquid has evaporated and tofu and peppers are coated, 2 to 3 minutes. Pour into a serving dish.

7 1/2 ounces tofu (I used organic sprouted tofu)
12 ounces green beans, trimmed
2 tablespoons tamari soy sauce
1 tablespoon sake or 1 tablespoon water
1 -2 teaspoon hot chili paste
2 teaspoons raw sugar
1 tablespoon sesame oil
1 garlic clove, minced
1 tablespoon ginger, minced
salt
pepper

Steps:

  • A few hours before cooking, place a tofu block in a bowl and put a weight on top of it to squeeze out water as much as possible.
  • Cook green beans in salted boiling water for about 3 minutes.
  • Transfer beans to a colander and run cold water. Cut them in half.
  • Dice tofu into 1/2 inch cubes.
  • In a small bowl, mix tamari soy sauce, sake or 1 Tbsp water, chili paste, and sugar to make a sauce. Set aside.
  • In a sauté pan, heat sesame oil and sauté garlic and ginger for a minute.
  • Add beans and tofu and sauté until heated.
  • Add the sauce and sauté until the sauce is bubbly.
  • Season with salt and pepper.
  • Infuse love and serve!

  • Start by making the sauce. In a small saucepan, add all of the sauce ingredients and whisk together.
  • Over medium heat, bring the sauce mixture to a low boil. When slightly bubbling, remove from heat and set aside.
  • Next, coat the tofu pieces in the cornstarch by adding them to a bowl and lightly tossing them with your fingertips. Be careful to not break up the tofu pieces.
  • Over medium-high heat, add the olive oil to a large skillet and add the tofu bites gently - allow the excess cornstarch to fall off the tofu bites before adding them to the skillet.
