8 whole graham crackers, or as needed
½ cup semisweet chocolate chips
¾ cup butter
¾ cup brown sugar
1 teaspoon vanilla extract
2 cups miniature marshmallows

Steps:

Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
Place graham crackers side-by-side to cover the bottom of a 9x13-inch pan. Sprinkle chocolate chips evenly over graham crackers.
Heat butter, brown sugar, and vanilla in a heavy saucepan over medium heat until butter is melted and mixture starts to bubble. Pour mixture over chocolate chips and crackers. Sprinkle miniature marshmallows over the top.
Place baking pan under the broiler until lightly browned, 3 to 5 minutes. Remove from broiler, cool completely, and cut into squares.

1 sheet (4 crackers) low-fat honey graham crackers
1/4 cup fat-free whipped topping, thawed from frozen
1 teaspoon mini semi-sweet chocolate chips
8 miniature marshmallows

Steps:

Break graham cracker sheet into two squares. Set aside.
In a small bowl, lightly stir together whipped topping, chocolate chips, and marshmallows. Don't over-stir.
Place one graham cracker square on a plate, and top with whipped-topping mixture. Lightly place the other square on top.
Freeze until solid, about 1 hour. Store in the freezer until ready to serve. Enjoy!

1 tbs. creamy peanut butter
1 tbs. chocolate syrup
1/2 oz. Kahlua or coffee liqueur
1/2 oz. dark rum
1/2 oz. vodka
1 oz. almond milk
Ice
Torched mini-marshmallows for garnish

Steps:

In a pint glass, mix together the peanut butter and chocolate syrup. Stir in the Kahlua until well blended. Stir in the vodka and rum and then add the almond milk. Fill a martini shaker with ice and add mixture. Shake vigorously until very well chilled. Drizzle the insides of a martini glass with chocolate syrup. Strain cocktail into the martini glass. Put 3-4 mini-marshmallows onto a skewer and toast with a butane torch. Place over glass.

¼ cup dark chocolate, melted
¼ cup cinnamon graham cracker crumbs
chocolate syrup, for drizzling
ice, for shaking and serving
1 oz chocolate liqueur, chilled
½ oz vanilla-flavored vodka
1 ½ oz heavy cream
3 mini marshmallows

Steps:

Dip the rim of a glass in the melted chocolate, then into the graham cracker crumbs to coat. Drizzle chocolate syrup inside the glass.
Add the chocolate liqueur, vanilla vodka, and ice to a cocktail shaker. Shake until well combined and the outside of the shaker is cold.
Add more ice to the prepared glass, then strain the cocktail into the glass. Pour the heavy cream on top.
Thread 3 mini marshmallows onto a toothpick, then broil until golden brown. Place on the drink as a garnish.
