LOW-CARB LETTUCE WRAP SANDWICH



Low-carb Lettuce Wrap Sandwich image

This Low-carb Lettuce Wrap Sandwich is a great option for lunch and a delicious alternative to the traditional wheat wrap. It only requires few ingredients and it's also gluten-free!

8 iceberg lettuce
1 tablespoon homemade mayo
1 teaspoon yellow mustard
3 Prosciutto slices
2 slices of deli meat - organic ham
3 slices of deli meat - organic chicken breast
5 slices cucumber
8 cherry tomatoes (cut in half)
1 piece of parchment paper (about 15″ x 15″)

Steps:

  • On a cutting board, place the parchment paper. Layer 5 to 8 lettuce leaves (or any other green leave you prefer) in the middle of parchment paper and the sides of the lettuce leaves should be on top of each other leaving no space between the lettuces. Layer the topping by spreading first the mustard and mayo.
  • Then, add Prosciutto and the slices of deli meat (ham and chicken breast), slices cucumber and cherry tomatoes.
  • Roll the lettuce wraps by using the parchment as your base. Roll the lettuce wrap as tight as possible.
  • Halfway through rolling, fold the edges of the wraps towards the center, and continue rolling like a burrito. When it is completely wrapped, roll the remainder of the parchment around the lettuce.
  • Using a knife, slice the lettuce wrap and enjoy!

4 hoagie buns, split
1/2 cup mayonnaise
TOPPINGS:
3 cups fresh baby spinach
1/2 cup thinly sliced red onion
1/2 cup chopped green or red pepper
1/4 cup sliced ripe olives
1/4 cup dill pickle slices
1/3 pound sliced deli roast beef
1/3 pound sliced deli turkey
8 thin slices cheddar cheese
8 thin slices provolone cheese
Optional seasonings: dried oregano, grated Parmesan cheese and pepper

Steps:

  • Spread buns with mayonnaise. Layer with toppings. Sprinkle with seasonings as desired; close sandwiches.

2 slices bread, toasted
1 tablespoon mayonnaise

Steps:

  • Cook the bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
  • Arrange the cooked bacon, lettuce, and tomato slices on one slice of bread. Spread one side of remaining bread slice with the mayonnaise. Bring the two pieces together to make a sandwich.

1 lb deli-style turkey thinly sliced
1 lb deli-style roast beef thinly sliced
1 medium red onion chopped
2 medium tomatoes sliced
1 jar(s) hamburger dill pickles
2 large avocados chopped
1 bag(s) shredded lettuce
8 slice cheddar cheese
mayonnaise
mustard

Steps:

  • 1. Toast mini buns lightly.
  • 2. Encourage guests to melt cheese on deli meat of their choice in microwave.
  • 3. Build sandwich with toasted mini-bun, chopped onion, pickles, tomato, deli meat & cheese, avocado and shredded lettuce and dressing of your choice.
  • 4.
