- Preheat oven to 300 degrees F (150 degrees C). Line a baking sheet with parchment paper.
- Toss the rolled oats, spelt flour, brown sugar, cinnamon, ginger, canola oil, applesauce, maple syrup, dried apricots, pecans and ground flax seed together in a bowl, and mix well. Spread the granola mixture on the lined baking sheet.
- Bake for 20 minutes, stir the granola, then bake for another 15 minutes until dry. Cool completely before serving.

- Heat the oat drink and spread in a pan over a low heat. Stir until the spread has melted completely, then stir in the agave nectar. Set aside to cool until lukewarm
- Combine the flour, yeast, mixed spice, cinnamon and a pinch of salt in a large bowl. Make a well in the centre and pour in the cooled oat mixture. Mix to form a dough, then add the mixed fruit, granola and zest - keep mixing until everything is fully incorporated. Turn out onto a work surface dusted with flour and knead for about 10 mins, until the dough is smooth and elastic. Add the dough to a large bowl, cover and leave in a warm place to rise for 1 hr, or until doubled in size
- Once risen, form the dough into a loaf shape and put into a greased 2lb loaf tin. Cover with oiled cling-film and leave to rise for 30 mins, or until doubled in size
- Heat the oven to 220C/200C fan/gas 8. Brush the risen dough with a little oat milk and bake for 25-30 mins, or until the dough rises, browns and sounds hollow when tapped on the bottom. Allow to cool before slicing
MIGHTY GRANOLA
It took years of tinkering to come up with my own personal favorite granola recipe. Granola recipes are meant to be modified, but maybe you can start with this. Enjoy warm with milk or by itself! Does well in the freezer for several months!

- Preheat oven to 325 degrees F (165 degrees C). Line two baking sheets with parchment paper.
- Combine oats, amaranth, sunflower seeds, pecans, walnuts, almonds, flaxseed meal, and ground chia seeds in a very large bowl; stir until thoroughly mixed.
- Mix honey, maple syrup, coconut oil, brown sugar, butter, vanilla extract, cinnamon, and salt together in a large saucepan over medium heat. Bring to a boil, stirring constantly. Cook and stir, about 1 minute. Remove maple syrup mixture from heat.
- Pour maple syrup mixture over oat mixture in the bowl; stir until oat mixture is moist. Spread evenly on the baking sheets.
- Bake in the preheated oven until toasted, stirring mixture halfway through, about 20 minutes. Remove from oven and let cool, about 5 minutes. Transfer to a very large bowl. Add raisins, cherries, and blueberries; stir until thoroughly mixed.

I love, love, love this granola recipe! It's very healthful but, even better, it's really good. I like to eat it for a snack. I also like to eat it just like breakfast cereal. It's one of my go-to recipes and I fix it all of the time.

- TIP: I never buy oat flour. I just dump some oats into my food processor, whiz for about a minute, and then I have oat flour! It's so much cheaper this way and is so easy-to-do.
- Preheat oven to 275°F In a large bowl, combine the oats, oat flour, salt, cinnamon, and Brown Sugar Splenda. Stir to combine. Add the syrup and stir well until the syrup is evenly distributed. Add the melted butter and again stir until all of the oats are evenly coated.
- I like little, crunchy nuggets of granola when I eat it. To make the nuggets, grab a small handful of the granola mixture and firmly squeeze it in your fist to make glob. The mixture should hold together fairly well. Over a rimmed sheet pan, gently break the blob into smaller nuggets. Repeat with the remaining mixture. When finished, you should have a single layer of larger nuggets, smaller nuggets, and loose pieces of oatmeal. Don't move the granola once it is in the sheet pan or the nuggets will fall apart. Some people do not like larger nuggets of granola. If you prefer granola with loose pieces of oats, just dump the granola directly onto a sheet pan after you have mixed everything together. Just give the sheet pan a quick shake to evenly spread everything out.
- Bake the granola for 20 minutes. Take the sheet pan out of the oven and very, very gently stir the granola. You, after all, do not want to break apart the nuggets you made earlier. Put the sheet pan back in the oven for another 8 minutes or so for a lightly toasted granola. If you like your granola really toasted, you can leave it in for several more minutes. Remove it from the oven and leave it in the sheet pan until it has cooled completely. The granola will get crispier as it cools. Toss with your desired mixed dried fruits, nuts, and seeds. Store in a sealed container.
- After you make this the first time, make a note to yourself and decide if you would prefer the next batch to be sweeter or less sweet. I actually prefer my granola less sweet so I often add less Splenda than this recipe calls for. Others have preferred more sugar in theirs. You decide!

HONEY GRANOLA BREAD
I've made this bread for several occasions, and it always gets rave reviews. The granola gives it a wonderful texture that makes it perfect for toast in the morning and also for sandwiches.

- In a large bowl, combine 3 cups all-purpose flour, granola, yeast and salt; blend well. In a medium saucepan, combine water, yogurt, honey and oil; heat to 120° to 130°. Add to flour mixture along with eggs; mix on low speed. Stir in whole wheat flour and 1 cup all-purpose flour to form a soft dough. Turn onto a floured surface; knead about 8-10 minutes, adding enough remaining all-purpose flour until dough is smooth and elastic. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down. Shape into two loaves; place in a greased 9x5-in. loaf pans. Cover and let rise until doubled, about 45 minutes. - Preheat your oven to 350F.
- In a large bowl, thoroughly mix the the flaked or rolled oats and sprouted rye, oil, sweetener, and salt. Honey can be briefly microwaved to make it more mixable.
- Spread the mixture on a baking sheet lined with parchment paper, a silicone mat, or lightly sprayed with oil. The layer should be about 1/2 inch thick.
- Bake for 15 minutes. Remove from the oven and add the nuts, flaxmeal, and coconut on top of the half-baked granola.
- Return the sheet to the oven and bake 10 minutes more until everything is lightly toasted.
- Remove from the oven and don't stir the granola unless you prefer a loose granola. Add the dried fruit on top if desired.
- Let the granola cool for at least 30 minutes before breaking it into chunks to store in a jar, tupperware, or bag.
BUTTERMILK GRANOLA BREAD

- In large bowl, mix 1 cup of the flour, the salt and yeast. In 1-quart saucepan, heat water, buttermilk, honey and butter over medium heat, stirring frequently, until very warm (120°F to 130°F); stir into flour mixture until blended. Stir in granola. Stir in enough remaining flour to make dough easy to handle.
- Place dough on lightly floured surface; gently roll in flour to coat. Knead about 8 minutes or until smooth and springy. Grease large bowl with shortening or cooking spray. Place dough in bowl, turning dough to grease all sides. Cover; let rise in warm place about 1 hour or until dough has doubled in size. (If using fast-acting yeast, do not let rise 1 hour; cover and let rest on floured surface 10 minutes.)
- Grease large cookie sheet with shortening or cooking spray. Shape dough into round loaf, about 5 inches in diameter and 3 inches high. Place on cookie sheet. Cover; let rise in warm place 45 to 60 minutes or until about 7 1/2 inches in diameter.
- Heat oven to 400°F. Make 2 long cuts in top of dough to resemble one large "+" sign with sharp knife. Brush or spray top of dough with water. Bake 20 to 25 minutes or until loaf is golden brown and sounds hollow when tapped. Remove from cookie sheet to cooling rack; cool.

This is a light, not too sweet bread. I had a ton of granola so I decided to experiment and I came up with this bread! If you dont grease the pan properly the sides will get stiff, so be careful! :-) Very nummy! I hope you enjoy it

- Combine flours, baking soda, baking powder, and salt in medium bowl and set aside.
- Put granola in a large bowl and add raisins, milk, and lemon juice and allow to sit for 10 minutes.
- Add sugar, banana, vanilla, brown sugar, honey, orange juice concentrate, egg whites, oil, and yogurt, and mix very well (I use a whisk).
- Add wet mixture to dry ingredients and combine just until mixed through.
- Pour mixture into greased loaf pan.
- Sprinkle tablespoon of sugar over the top of the mixture, and bake at 350 degrees for 45-50 minutes, or until toothpicks comes clean.
- Allow loaf to cool 10 minutes before removing from pan.
- Allow to cool completely on wire rack before slicing.
- ENJOY!
- Tastes good with apple butter!
