My Light and Fluffy Chocolate Chip Pancakes are simply the BEST! Just one bite will turn you into a believer.

2 cups all-purpose flour
1/4 cup granulated sugar
1 and 1/2 teaspoons baking soda
3/4 teaspoon baking powder
3/4 teaspoon salt
1/2 teaspoon cinnamon (optional, but I love the depth of flavor it adds)
2 large eggs, at room temperature
1 and 3/4 cups whole milk
1 cup full-fat sour cream
2 teaspoons pure vanilla extract
1 and 1/2 cups semi-sweet chocolate chips, plus more for serving
Maple syrup and/or fresh whipped cream, for serving

Steps:

  • In a large bowl add the flour, sugar, baking soda, baking powder, salt, and cinnamon (if using); whisk well to combine. In a separate bowl add the eggs and lightly beat them with a whisk. Add in the milk, sour cream, and vanilla and beat until well combined. Stir the wet mixture into the dry ingredients, stirring just until everything is combined. Quickly fold in the chocolate chips, stirring until evenly combined. Be careful not to over mix the batter.
  • Pour batter by 1/3 cupfuls onto a buttered hot pan or griddle, adding only a few at a time so that they do not blend together. Cook for 3 to 4 minutes before flipping them over, or until small bubbles form on top. Cook on the second side until golden brown, about 2 minutes. Repeat with all pancake batter. Serve pancakes warm, with syrup, whipped cream, and/or extra chocolate chips. See notes for freezing options.

4 tablespoons (1/2 stick) unsalted butter
1 cup whole, 2 percent fat, or 1 percent fat milk
1 1/4 cups flour
1 tablespoon sugar
4 teaspoons baking powder
3/4 teaspoon salt
2 eggs
6 ounces semisweet chocolate chips, or less to taste
Butter, for cooking

Steps:

  • In a small saucepan, combine the butter and milk. Place over low heat just until warm and the butter is melted. Let cool slightly. In a bowl, combine the flour, sugar, baking powder, and salt; mix well.
  • In a large bowl, whisk the eggs with a fork. Whisk in the milk mixture. Add the dry ingredients and mix just until barely blended. Add the chocolate chips and mix.
  • Heat a griddle or large skillet over medium heat. Add about 1 teaspoon of butter and melt until bubbly. Ladle 3 tablespoons of batter for each pancake onto the hot surface and cook until bubbly on the top and golden brown on the bottom. Turn and cook until golden brown on the other side, about 30 seconds more. Repeat until all the batter is used up. Serve hot.

I have experimented many times and have been improving - this recipe gives instructions from my experiences for the best results that I've had so far. Oatmeal pancakes form scratch for two servings, or a hearty single serving. Uses egg whites and nonfat milk and no added sugar.

Number Of Ingredients 9

1/2 cup rolled oats
1/4 cup nonfat milk
1/4 cup water
3 tablespoons whole wheat flour
1 egg white
1 teaspoon baking soda
1/2 teaspoon white vinegar
1 tablespoon chocolate chips
1 tablespoon Splenda granular (more or less to own personal preference)

Steps:

  • Pour water and milk over oats, let sit for 10 minutes, or until oats has noticeably soaked some of the liquid.
  • Add baking soda, splenda and flour.
  • Mix in egg white and white vinegar to combine well.
  • Stir in chocolate chips.
  • Spray skillet and set over high heat.
  • Wait until well heated, about 5 minutes.
  • Add batter, 1 tbsp at a time, and tilt the pan so that it spreads and the size becomes bigger.
  • Wait until bubbles set, about 1 minute, before flipping.
  • Repeat for the remaining batter until finished.
  • Serve hot!
