1 package (3.4 ounces) instant vanilla pudding mix
1/2 teaspoon ground nutmeg

  • In a bowl, combine the first four ingredients. Beat for 2 minutes. Spoon into individual dishes. Sprinkle with nutmeg if desired.

1/2-1 cup Egg Beaters egg substitute
1/4 cup Splenda granular
3 tablespoons sugar-free instant vanilla pudding mix
2 teaspoons vanilla extract
1/2 teaspoon rum extract
1/2 teaspoon brandy extract
1/2 teaspoon ground nutmeg

Steps:

  • Place all of the ingredients in a blender, and blend for 30-60 seconds, or until smooth. Chill for several hours.
  • Shake or stir eggnog well to blend before serving. Serve in glasses or mugs with an additional sprinkle of nutmeg.
  • NOTES: You can use 6 packets of Equal instead of the Splenda Granular. If you'd rather not use artificial sweeteners, then substitute the Splenda with 1/4 cup sugar, and use 1/2 cup regular instant vanilla pudding instead of the 3 Tbsps sugar-free pudding.

12 Pirouette cookies or cookies of your choice
1/2 cup graham cracker crumbs (about 8 squares)
3 tablespoons butter, melted
2 packages (8 ounces each) cream cheese, softened
2 cups cold eggnog, divided
1-1/2 cups cold milk
2 packages (3.4 ounces each) instant vanilla pudding mix
2 to 3 teaspoons rum extract
1/8 teaspoon ground nutmeg
Whipped topping

Steps:

  • Crush four cookies; set remaining cookies aside for garnish. In a small bowl, combine the crushed cookies, graham cracker crumbs and butter. Divide among eight serving dishes., In a large bowl, beat cream cheese until smooth. Gradually beat in 1 cup eggnog. Add the milk, pudding mix, extract, nutmeg and remaining eggnog. Beat on low speed for 2 minutes or until thickened. , Spoon about 3/4 cup into each dish. Cover and refrigerate for 8 hours or overnight. Garnish with whipped topping and reserved cookies.

6 (.25 ounce) envelopes unflavored gelatin
1 ½ cups water
2 quarts prepared eggnog
6 egg whites
½ cup white sugar
½ teaspoon ground nutmeg
1 (12 ounce) package frozen raspberries, thawed

Steps:

  • Mix gelatin and water in the top of a double boiler over simmering water, stirring frequently until gelatin is dissolved and mixture is warm, 5 to 10 minutes.
  • Pour eggnog into a large bowl; gradually stir gelatin mixture into eggnog. Refrigerate eggnog-gelatin mixture until thickened, 2 to 3 hours.
  • Beat eggnog mixture with an electric mixer until light and fluffy.
  • Beat egg whites in a glass or metal bowl until foamy. Gradually add sugar and nutmeg, continuing to beat until stiff peaks form. Lift your beater or whisk straight up: the egg whites will form sharp peaks. Fold egg white mixture into eggnog mixture.
  • Pour eggnog pudding into a serving bowl and refrigerate until set, about 1 hour. Spoon pudding into 8 individual serving bowls; add raspberries to each serving.

A simple but very tasty dessert. I noted in my cookbook "Good enough for company" when I first tried this. Adapted from a Joanna Lund cookbook. The brandy extract and the fresh nutmeg really makes this special. I have made this only using brandy flavor extract, but I think it would be also nice with rum flavoring.

1 (1 1/2 ounce) package sugar-free instant vanilla pudding mix (4 serving size)
2 cups skim milk
1/2 cup sugar-free Cool Whip (or you can use Cool Whip Free if your concern is fat more than sugar)
1 teaspoon brandy extract or 1 teaspoon rum extract
1/4 teaspoon ground nutmeg (I prefer freshly grated)

Steps:

  • Combine dry pudding mix with milk using a whisk to beat well.
  • Fold in Cool Whip and brandy extract to blend.
  • Spoon into 4 glass goblets or custard dishes and grate a bit of fresh nutmeg over the top of each.
  • Chill at least 20 minutes (if you need to chill longer, cover them with some plastic wrap).
