TOBY'S MUSSEL CHOWDER

Number Of Ingredients 14

1 cup white wine
1 tablespoon butter
1 tablespoon chopped garlic
1 tablespoon dried basil, plus 1 tablespoon
2 to 3 pounds mussels, scrubbed and debearded
1/4 pound bacon, chopped
2 cups chopped onions
2 cups chopped celery
4 cups (1/2-inch dice) potatoes
1/4 teaspoon dried thyme
2 cups clam juice or fish stock
2 teaspoons salt
1 teaspoon pepper
1 to 2 cups milk (depends on how thick you want chowder)

Steps:

  • Place wine, butter, garlic, and 1 tablespoon basil in a stockpot and brings to a simmer. Add mussels and steam, covered, over high heat, for 8 to 12 minutes. Check to see when shells begin to open, be careful not to overcook. When mussels open, remove them from the heat, and drain, reserving liquid. Set mussels aside to cool, discarding any unopened mussels. When cool, remove meat from shells, chop coarsely, and refrigerate until needed.
  • In a stockpot, over medium-high heat, saute bacon until fat is rendered and bacon begins to brown. Add onions, celery and cook until onions turn translucent, 6 to 8 minutes. Add potatoes and thyme and cook for 3 to 4 minutes. Add stock or clam juice, reserved mussel liquid, remaining 1 tablespoon basil, salt and pepper. Bring to a boil, lower heat and simmer, covered, for 30 minutes, or until potatoes are soft and begin to thicken chowder. Add milk, chopped mussels and bring back to simmer. Reheat for 2 to 3 minutes. Check for seasoning. Serve with garlic bread.

4 1/2 lb mussels (preferably cultivated), cleaned and steamed , using half white wine and half water and reserving cooking liquid
2 medium leeks (white and pale green parts only), finely chopped
2 medium carrots, finely chopped
2 large orange bell peppers, finely chopped
1 large shallot, finely chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 stick (1/4 cup) unsalted butter
2 tablespoons olive oil
2 large garlic cloves, minced
1/2 cup dry white wine
1/4 cup heavy cream
Accompaniment: crusty bread

Steps:

  • Pour reserved mussel cooking liquid through a fine sieve lined with a dampened paper towel into a bowl. Set aside 24 mussels in their shells, then shuck remainder and halve them crosswise.
  • Wash chopped leeks in a bowl of cold water, then lift out and drain well.
  • Cook leeks, carrots, bell peppers, and shallot with salt and pepper in butter and oil in a 5-quart heavy pot over moderate heat, covered, stirring occasionally, until tender, about 7 minutes. Stir in garlic and cook, uncovered, stirring, 1 minute. Add strained mussel cooking liquid and wine and simmer 10 minutes.
  • Stir in halved mussels and cream and simmer, stirring, 5 minutes. Add reserved mussels in their shells and simmer until just heated through, about 1 minute. Season with salt and pepper.

1 tablespoon butter
1 1/4 cups frozen corn or 1 1/4 cups canned corn
2 1/2 cups milk
1 leek, chopped
4 slices bacon, diced
1/4 teaspoon minced garlic
1 small green bell pepper, diced
1 medium potato, diced
1 tablespoon flour
1 1/2 cups vegetable stock
4 sea scallops, sliced 1/4 inch thick
4 ounces cooked fresh mussels
1/8 teaspoon sweet paprika
2/3 cup light cream
salt and pepper

Steps:

  • Process 1/2 cup corn with 1/2 cup milk; set rest of corn and milk aside.
  • Melt butter in a large saucepan and over medium heat fry leek through garlic 4-5 minutes until the leek is soft.
  • Turn heat to low, add green pepper and potato and cook, stirring, 3-4 minutes.
  • Stir in flour and cook 1-2 minutes until mixture turns frothy.
  • Stir in stock, corn-milk puree and rest of milk and corn; season with salt and pepper.
  • Turn heat to high, bring to a boil, lower heat and simmer, partially covered 15-20 minutes until pepper and potato are tender.
  • Stir in the scallop slices and cook 4 minutes.
  • Stir in the mussels and paprika and heat 2 minutes.
  • Stir in the cream and heat through; adjust seasonings and serve hot.

1 tablespoon coconut oil
½ red onion, chopped
1 tablespoon minced fresh ginger root
1 tablespoon green curry paste
1 teaspoon green curry paste
1 teaspoon lemon zest
1 clove garlic, minced, or to taste
8 ounces coconut milk
1 tablespoon fish sauce
1 tablespoon water
1 teaspoon water
1 lime, juiced
1 ½ pounds fresh mussels, scrubbed and debearded
¼ cup chopped fresh cilantro

Steps:

  • Heat coconut oil in a pan over medium-high heat. Saute onion in the hot oil until softened, 4 to 5 minutes. Add ginger, green curry paste, lemon zest, and garlic. Stir in coconut milk, fish sauce, water, and lime juice. Bring to a vigorous simmer.
  • Place mussels in a steamer above simmering sauce; cook until mussels open, 4 to 5 minutes. Remove mussels from heat and place into a large serving bowl.
  • Place cilantro into the sauce mixture and cook just until it turns bright green, 30 to 60 seconds. Pour sauce over mussels and serve.

A rich-tasting low-fat chowder with lots of spicy curry flavor.

Number Of Ingredients 10

2 cups water
1 cup dry white wine
2 teaspoons curry powder
1 large garlic clove, crushed
1 bay leaf
1/2 teaspoon turmeric
2 pounds mussels, scrubbed, debearded
4 cups 1/2-inch cubes peeled russet potatoes (about 3 medium)
1 1/2 cups low-fat (1%) milk
1/2 cup frozen green peas

Steps:

  • Combine water, wine, curry powder, garlic, bay leaf and turmeric in large pot. Bring to boil. Reduce heat; cover and simmer 8 minutes. Add mussels. Increase heat to high, cover and cook until mussels open, about 4 minutes(discard any mussels that do not open). Pour mixture into strainer set over large bowl; reserve cooking liquid in bowl. Cool mussels. Remove mussels from shells; discard shells.
  • Meanwhile, cook potatoes in large pot of boiling salted water until tender, about 10 minutes. Drain. Transfer 1 cup potatoes to heavy large saucepan. Puree remaining potatoes and 1 cup milk in processor until smooth. Add puree to saucepan. Add reserved mussel cooking liquid, remaining 1/2 cup milk and peas. Bring to simmer. Stir in mussels. Season to taste with salt and pepper and serve.

2 cups white wine
1/2 cup water
2 tablespoons fresh lemon juice
5 pounds mussels, scrubbed, beards removed
2 teaspoons unsalted butter
4 medium leeks, halved lengthwise and thinly sliced crosswise
2 carrots, peeled and cut into 1/4-inch dice
2 cups red potatoes, cut into 1/4-inch dice
2 cups whole milk
1/2 cup heavy cream
1/4 teaspoon saffron threads
2 teaspoons kosher salt
Freshly ground pepper to taste
1/4 cup fresh basil leaves, cut crosswise into thin strips

Steps:

  • Place 1 cup of wine, the water and the lemon juice in a large pot and bring to a boil. Lower heat, add the mussels, cover and steam, shaking the pot from time to time, until the mussels open, about 7 minutes. Set aside until cool enough to handle. Pull the mussels from the shells and refrigerate. Reserve the broth.
  • Melt the butter in a large, wide pot over medium heat. Add the leeks and cook until wilted, about 5 minutes. Add the carrots and potatoes and cook for 4 minutes longer. Add the mussel broth and the remaining wine and simmer for 15 minutes.
  • Turn the heat to low and stir in the milk and cream. With the liquid barely at a simmer, cook for 30 minutes. Stir in the saffron and cook for 5 minutes longer. Add the mussels, salt and pepper and cook just until the mussels are warmed. Ladle into bowls and garnish with the basil. Serve immediately.

5 lbs mussels, in shells
1 cup dry white wine or 1 cup water
1 lb thin-skinned potato
1 onion (1/2 lb.)
1 stalk celery (3 oz.)
2 tablespoons butter or 2 tablespoons margarine
2 teaspoons curry powder
1 1/2 teaspoons dried basil
1 (28 ounce) can tomato sauce
2 cups whipping cream
salt and pepper

Steps:

  • Scrub mussels in cool water and pull off beards; discard any whose shells don't close when tapped.
  • In an 8- to 10-quart pan, combine mussels and wine; bring to a boil over high heat. Cover and simmer over medium heat until mussels open, 5 to 8 minutes.
  • Pour into a colander set in a large bowl to collect juices.
  • Let mussels stand until cool enough to touch.
  • Meanwhile, peel potatoes and cut into 1/2-inch cubes.
  • Peel and chop onion. Rinse celery and cut into 1/2-inch pieces.
  • In the pan used for mussels, melt butter over medium heat.
  • Add onion and celery; stir often until onion is limp, 6 to 8 minutes.
  • Add curry powder and basil; stir until spices become more fragrant, about 30 seconds.
  • Pour mussel juices from bowl into pan.
  • Add tomato sauce, cream, and potatoes.
  • Turn heat to high; when mixture is boiling, cover, reduce heat to low, and simmer, stirring occasionally, until flavors are well blended, about 30 minutes.
