The Best BLT (Bacon, Lettuce, and Tomato) Sandwich image

Use the best tomatoes. Put away the fancy bread. And most importantly: Don't mess with it.

3 strips thick-cut, naturally cured bacon (see note)
2 slices high-quality sandwich bread, such as shokupan
2 tablespoons (30ml) homemade or store-bought mayonnaise (see note)
1 1/2 cups finely shredded iceberg lettuce (see note)
4 thick slices ripe tomato (see note)
Coarse sea salt, such as fleur de sel or Maldon
Freshly ground black pepper

Steps:

  • Place a griddle or skillet over medium-low heat. Add bacon and place a bacon press, skillet, or masonry trowel on top of it to keep it flat as it cooks. Cook until lightly browned on first side, about 5 minutes, then flip, cover again, and continue cooking until bacon is browned on both sides and fat has rendered, about 3 minutes longer. Transfer bacon to a paper towel-lined plate and set aside.
  • Place bread on same skillet or griddle and toast in bacon fat over medium-low heat, swirling occasionally, until evenly browned on first side. Flip and brown second side.
  • Lay toasted bread on a work surface and spread mayonnaise on both top faces. Divide lettuce evenly between both pieces of bread. Layer tomato slices on 1 piece of bread and sprinkle generously with coarse salt and freshly ground pepper.
  • Break bacon slices in half and layer them onto the sandwich in 2 layers of 3 half slices each, alternating the orientation of bacon in each layer for more structural stability. Close sandwich and cut in half diagonally. Serve immediately.

4 slices beefsteak tomato
1/3 cup bread and butter pickle brine
Kosher salt and freshly ground black pepper
6 slices thick-cut bacon, cut into 6-inch strips
1/2 cup mayonnaise
2 tablespoons lemon juice
1/2 teaspoon Worcestershire sauce
2 cloves garlic, grated
1 avocado, sliced
4 slices Pullman bread, toasted
4 Bibb lettuce leaves, washed

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the tomato slices in a baking dish or plate. Pour the pickle brine over the tomatoes and season with pepper to taste. Place in the refrigerator for 30 minutes or up to 2 hours.
  • Arrange the bacon in a single layer on a rack set inside a sheet tray. Season with 1/2 teaspoon black pepper. Roast the bacon until crispy, 10 to 12 minutes per side.
  • In a medium bowl, combine the mayo, lemon juice, Worcestershire and garlic. Mix until well blended. Season with salt and pepper. Set aside.
  • Season the avocado with salt and pepper.
  • Assemble the sandwiches by spreading the aioli on each slice of bread. Layer 2 slices of bread with the lettuce and then the avocado. Top the other 2 slices of bread with the bacon and tomatoes (let the brine drip off first). Close the sandwiches. Cut the sandwiches in half and serve.

A recipe for a brave day when one day I may take the plunge if I can find others who will follow me into the world of Bacon Fat! It's not mayonnaise with crumbled bacon, but mayonnaise made with bacon fat. The recipe makes only a small amount, about enough for 4 sandwiches. It's best to use it all up at once because any leftover mayonnaise must be refrigerated, and the bacon fat will turn it solid." 1 egg yolk
3/4 teaspoon Dijon mustard
1 teaspoon lemon juice (freshly squeezed)
1/8 teaspoon sea salt
1/8 teaspoon ground black pepper
1/2 cup bacon fat (liquid)
2 tablespoons mayonnaise (bacon)
2 slices bread (of your favorite)
1 small head lettuce
2 tomatoes
1/8 teaspoon black pepper
4 ounces bacon (cooked slices)

Steps:

  • Method:To prepare the bacon mayonnaise, combine the egg yolk, mustard, and lemon juice in the small bowl of a food processor or in a blender and process to mix. Season with salt and pepper.
  • Have the bacon fat liquid, but not hot. With the machine running, gradually add the bacon fat until the mixture starts to stiffen and emulsify, about 2 minutes. Once it starts to emulsify, you can add the fat more quickly. If the mayonnaise is too thick, just blend in 1 teaspoon of boiling water to thin it. Taste and adjust the seasoning.
  • Spread 1 tablespoon of mayonnaise on each slice of bread. Arrange the lettuce and tomato slices on 1 slice of bread and season well with pepper. Top the tomato with the bacon slices and then the second slice of bread. Press together gently and serve.

This American classic is available at deli counters year-round, but at 'wichcraft, it's a seasonal sandwich served only when local tomatoes are at their peak. For us, this is a tomato sandwich, with crisp bacon (be sure it's good quality!) and Bibb lettuce serving almost as condiments. We use a thick slice of tomato, say 1/2 inch, well seasoned with sea salt, really good pepper, and even a little olive oil. This is one of the sandwiches for which architecture matters, so please pay attention to the assembly instructions. For a special kick, rub a peeled garlic clove over the bread before assembling. A mix of heirloom tomatoes is ideal, combining colors and tones, sweetness and acidity. Imagine a slice of red plum, a slice of green zebra, and a slice of German yellow: summer in a sandwich.

1 pound thick-cut bacon
8 slices country bread
4 tablespoons Mayonnaise (page 176)
1 pound ripe heirloom or beefsteak tomatoes, sliced into 1/2-inch rounds (see Note)

Steps:

  • In a heavy skillet, over medium-high heat, cook the bacon until golden brown and crisp on both sides. Transfer to paper towels to drain. Toast the bread on one side only. Evenly spread the mayonnaise on the toasted side of 4 slices of bread. Place the tomatoes on top of the mayo, making sure that the slices don't overlap and the surface of the bread is covered. Season the tomatoes with salt and pepper. Place the bacon over the tomatoes, followed by the lettuce. Close the sandwiches with the remaining 4 bread slices, toasted side down. Carefully cut into halves and serve.
  • Sit the tomato stem side down on the counter and using a very sharp knife, slice it horizontally to prevent the juices from running out.
