Lime cooler cookies have it all! A little bit tart, a little bit sweet, and light and tender-score!

1/2 cup unsalted butter
1/2 cup powdered sugar
1/2 tsp pure vanilla extract
1 pinch salt
1 zest of lime (about 2 tsp)
1 cup all-purpose flour
1/2 tsp baking powder
1 Tbsp lime juice (freshly squeezed )
1 cup powdered sugar (for coating)

Steps:

  • Preheat oven to 325 degrees and line a baking sheet with parchment paper. In a large bowl mix butter and powdered sugar together until sugar is completely dissolved and no lumps remain. Add vanilla, salt and lime zest then stir until combined.
  • Sift flour and baking powder over butter mixture and mix just until dry ingredients are mixed into butter and no dry spots remain-the dough will still look a bit dry and will not yet have formed a cohesive mass.
  • Add lime juice and mix only until the dough comes together-don't overwork the dough or cookies will become tough. Scoop approximately 2 tsp of dough and roll into a 1" ball. Place on baking sheet and repeat with all remaining cookie dough-they'll spread in the oven so there's no need to press them down.
  • Bake 14-16 minutes or until the cookies become just slightly golden brown around the edges. Remove from oven and carefully transfer to a cooling rack, as they're quite fragile when warm.
  • When the cookies have cooled a bit but are still slightly warm, add approximately a cup of powdered sugar to a small bowl. Gently roll the cookies in the sugar to coat then allow them to cool completely on the rack.

2 cups butter or margarine, softened
1 cup powdered sugar
3 1/2 cups Gold Medal™ all-purpose flour
1/2 cup cornstarch
2 tablespoons grated lime peel
1 teaspoon vanilla
Granulated sugar
1 cup powdered sugar
2 tablespoons Key lime or regular lime juice
2 tubes (0.68 oz each) Betty Crocker™ green decorating gel, if desired

Steps:

  • Heat oven to 350°F. In large bowl, beat butter and 1 cup powdered sugar with electric mixer on medium speed, or mix with spoon. Stir in flour, cornstarch, lime peel and vanilla until well blended.
  • Shape dough into 3/4-inch balls. Place about 2 inches apart on ungreased cookie sheet. Press bottom of glass into dough to grease, then dip into granulated sugar; press on dough balls until 1/4 inch thick.
  • Bake 9 to 11 minutes or until edges are light golden brown. Remove from cookie sheet to wire rack. Cool completely, about 30 minutes.
  • In small bowl, stir together 1 cup powdered sugar and the lime juice. Stir in additional juice if necessary. Spread glaze over cookies. Squeeze drops of decorating gel on glazed cookies; drag toothpick through gel for marbled design.

1 cup white sugar
1 egg
1 egg yolk
1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
¼ cup fresh lime juice
1 ½ teaspoons grated lime zest
½ cup confectioners' sugar for decoration

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a large bowl, cream butter, sugar, egg, and egg yolk until smooth. Stir in lime juice and lime zest. Combine the flour, baking powder, and salt; blend into the creamed mixture. Form dough into 1/2 inch balls, and arrange on the prepared cookie sheet.
  • Bake 8 to 10 minutes in the preheated oven, or until lightly browned. Cool on wire racks. Sift confectioners' sugar over cookies while still warm.

1 cup butter, softened (1 cup)
1 1/2 cups sugar
1/2 teaspoon double strength vanilla extract (or 1 tsp. regular strength vanilla)
1/2 teaspoon lemon extract
2 large eggs
2 1/2 cups all-purpose flour
4 -5 key limes, juice and grated peel (about 8 Tablespoons juice and 1 Tablespoon peel)
powdered sugar, for dusting

Steps:

  • 1. Preheat oven to 375.
  • 2. Cream together the butter, sugar, and extracts. Add the eggs and mix well. Gradually add the flour and mix well. Lastly, mix in the grated lime peel and juice (save the squeezed limes.) Drop the dough onto greased cookie sheets by rounded tablespoons. Bake at 375 for 10-12 minutes.
  • 3. As soon as you have removed the cookies from the oven, pat the top of each cookie with squeezed lime to get a drop of juice on top of each cookie. Then immediately dust well with powdered sugar.

1/2 cup coconut
1 tablespoon grated lime peel (about 1 lime)
3 tablespoons lime juice
6 tablespoons butter or margarine, melted
1 egg
1/4 cup powdered sugar

Steps:

  • Heat oven to 350°F. In large bowl, stir cookie mix, coconut, lime peel, lime juice, butter and egg until soft dough forms.
  • Drop dough by level tablespoonfuls 2 inches apart onto ungreased cookie sheets.
  • Bake 9 to 13 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheet. Cool completely, about 15 minutes.
  • With small strainer, sift powdered sugar over cooled cookies. Store covered at room temperature.

1 cup confectioners' sugar
3 tablespoons grated lime zest
1 tablespoon grated lemon zest
1/4 cup lemon juice
2 cups all-purpose flour

Steps:

  • In a small bowl, beat butter and confectioners' sugar until blended. Beat in citrus zest and lemon juice. Gradually beat in flour., Shape into a disk; wrap. Refrigerate 2 hours or until firm enough to roll., Preheat oven to 325°. On a lightly floured surface, roll dough to 1/8-in. thickness. Cut with a floured 2-in. round cookie cutter.
