LIME AND COCONUT CAKE

This delicious cake is baked in a tray so it feeds a crowd, the perfect balance of tart limes and sweet icing.

Number Of Ingredients 14

1 Tbsp lime zest (zest of 2 limes)
¼ cup lime juice (juice of 2 limes)
½ cup canola oil (or other flavourless vegetable oil)
1 cup white sugar
2 eggs
1 cup coconut cream
1 cup desiccated coconut
2 cups plain flour
1 tsp baking powder
1 tsp baking soda
2 cups icing sugar
2 Tbsp coconut cream
Zest of 1 lime
2 Tbsp lime juice (juice of 1 lime)

Steps:

  • Preheat oven to 180°C fanbake.
  • In a large bowl mix together lime zest, lime juice, oil, sugar, eggs and coconut cream until well combined.
  • Add the desiccated coconut and sift in flour, baking powder and soda.
  • Fold all ingredients slowly to mix everything together.
  • Pour into a lined cake tray (Mine is 22 x 30cm) and bake for 35-40 minutes or until golden and a skewer comes out clean.
  • Once cooked remove cake from tray after 10-20 minutes and place on a wire rack to cool.
  • Icing: Mix all of the ingredients together then smooth over the cooled cake.

Put the lime in the coconut and shake your taste buds up! This cake reminds us of a cross between banana bread and a lime coconut cake. It's dense and moist with a delicious citrus lime flavor. Yum! The creamy frosting adds a nice tangy taste.

2 large eggs
1 zest of lime, minced
1 Tbsp lime juice
1/2 c buttermilk
3 bananas, very ripe, mashed
3/4 c unsalted butter, softened
1 1/2 c granulated sugar
2 c all-purpose flour
1/2 tsp baking soda
2/3 c shredded coconut
FROSTING
1 pkg cream cheese, reduced fat, softened; 8 oz.
1 c powdered sugar, sifted
1 c coconut shredded

Steps:

  • 1. FOR THE CAKE: Preheat oven to 350 degrees. Then grease a 9-inch springform pan and line it with parchment paper.
  • 2. In a medium bowl, combine eggs, zest, lime juice, buttermilk, and mashed bananas. Then whisk together until well combined. Set aside.
  • 3. In a large bowl, using an electric mixer beat together the butter and sugar until light and fluffy.
  • 4. Add banana mixture. Beat on low until combined.
  • 5. In another bowl, whisk together the flour and baking soda. Then add this to the banana/buttermilk mixture, whisking until well combined
  • 6. With a large metal spoon, gently fold in coconut until just combined.
  • 7. Spoon the batter into the prepared springform pan. Bake for 50 minutes or until golden and a skewer inserted in the center comes out clean.
  • 8. Cool in the pan for 10 minutes. Then remove the springform sides before transferring the cake to a wire rack to cool completely.
  • 9. Meanwhile, in a pan over medium heat, toast the remaining cup of shredded coconut. Stir constantly until golden in color. Then remove from the heat.
  • 10. FOR THE ICING: Using an electric mixer, in a bowl combine the cream cheese and powdered sugar. Beat until smooth.
  • 11. Spread over the cake. Then sprinkle with the toasted coconut before slicing and serving.

CAKE INGREDIENTS:
1 c butter, softened
2 c sugar
1 tsp coconut oil
4 eggs
2 1/2 c all purpose flour
1/2 tsp salt
1 tsp baking soda
1 c canned coconut milk
GLAZE:
1 c sour cream or yogurt (i used sour cream)
1 c sugar
2 limes, zested and juiced
1/4 c canned coconut milk
1 c shredded coconut
FROSTING:
1/2 c butter
1/2 c shortening
4 oz cream cheese
1 lb powdered sugar, sifted
1/4 c canned coconut milk
1 tsp vanilla
2 c shredded coconut

Steps:

  • 1. Preheat oven to 350 degrees F and grease and flour 2 (9-inch) cake pans. With an electric mixer beat butter and sugar until fluffy. Next, add coconut oil and then eggs 1 at a time, mixing after each one. In a mixing bowl combine flour, salt, baking soda and powder. To mixer add coconut milk and flour to creamed mixture alternately, beginning and ending with flour. Pour batter into prepared pans and bake for 25 to 28 minutes. Allow to cool 10 minutes then unmold onto rack(s) over a sheet pan and allow to cool completely.
  • 2. For Glaze: In a medium bowl combine sour cream or yogurt, sugar, lime zest and juice, coconut milk, shredded coconut.
  • 3. With a bamboo skewer, poke holes in cake and spread glaze on both sides of both cakes. Cover with plastic wrap, chill until ready to frost cake.
  • 4. With an electric mixer beat together the butter, shortening, and cream cheese until well blended and fluffy. Add the powdered sugar gradually at low speed. Beat in coconut milk and vanilla. Frost cake. Then, coat top and sides with shredded coconut.
  • 5. Slice your delicous cake and you are ready to eat.

200g caster sugar
200g softened butter
4 eggs , beaten
200g self-raising flour
1 tsp baking powder
2 tbsp milk
200g block of creamed coconut
zest and juice of 2 limes
100g butter , softened
140g icing sugar , sifted
tbsp Malibu (optional)
100g toasted desiccated coconut

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Butter two 20cm sandwich tins and line with non-stick baking paper. Grate the 200g block of creamed coconut and keep half of it aside. Then in a large bowl, beat all the cake ingredients (including half of the grated block of creamed coconut) together until you have a smooth, soft batter.
  • Divide the mixture between the tins, smooth the surface with a spatula or the back of a spoon, then bake for about 20 mins until golden and the cake springs back when pressed. Turn onto a cooling rack and leave to cool completely.
  • For the frosting, mix together the remaining creamed coconut, zest and juice of 2 limes. Microwave on High for 30 secs until the coconut melts.
  • Make the buttercream by beating the butter until smooth and creamy and gradually beating in icing sugar . Then beat in the cooled coconut mix and 2-3 tbsp Malibu (optional) until it becomes marshmallowy.
  • Fill the cooled sponges with a third of the frosting, cover the sides and top with the rest and coat the sides with the toasted desiccated coconut. Keep in an airtight container and eat within 2 days.

4 ounces cream cheese
1 lb powdered sugar
1 cup powdered sugar
1/4 cup coconut milk
1 teaspoon vanilla
2 cups shredded coconut

Steps:

  • Preheat oven to 350 degrees F and grease and flour 2 (9-inch) cake pans.
  • In an electric mixer or using a hand beater, cream butter and sugar until fluffy. Add coconut oil and eggs 1 at a time.
  • In a mixing bowl or on a sheet of parchment paper, combine flour, salt, baking soda and powder. To mixer add coconut milk and flour to creamed mixture alternately, beginning and ending with flour.
  • Pour batter into prepared pans and bake for 25 to 28 minutes. Allow to cool 10 minutes then unmold onto rack(s) over a sheet pan and allow to cool completely.
