1 Pkg. Pillsbury Moist Supreme Classic White Premium Cake Mix
1 cup water
1/3 cup Crisco Pure Vegetable Oil
4 large egg whites
1/3 cup fresh lime juice
1 TBS. grated lime peel
2 drops green food coloring
WHIPPED CREAM FROSTING:
1 cup heavy cream
1 cup powdered sugar
1 TBS fresh lime juice
2 TSP grated lime peel
1 drop green food color
12 lime crescent-shaped candy slices, halved

Steps:

  • 1. HEAT oven to 350 degrees F. Line 24 muffin cups with paper baking cups. 2. FOR CUPCAKES: Beat cake mix, water, oil, egg white, lime juice, lime peel and food color in large bowl with electric mixer on low speed until moistened. BEAT 2 minutes on medium speed or until blended. Divide evenly into prepared muffin cups. 3. BAKE 18-20 minutes or until toothpick inserted into center comes out clean. Cool 5 minutes. Remove from pans. Cool completely on wire rack. 4. FOR FROSTING: Beat cream and powdered sugar in large bowl with electric mixer on low speed until beginning to thicken. Add lime juice, lime peel, and food color. Beat on high speed until stiff peaks form. Chill until ready to use. Place frosting in decorator bag fitted with a decorator tip (# 12). Starting at outside edge, work toward center creating a spiral. Decorate with jelly candies, if desired.

1 tablespoon baking powder
1/2 teaspoon salt
2 sticks (1/2 pound) unsalted butter
2 cups granulated sugar
6 eggs
2 tablespoons key lime zest
1/2 cup milk
5 to 6 cups powdered sugar
2 sticks (1/2 pound) unsalted butter
8 ounces cream cheese
2 tablespoons key lime zest
2 tablespoons key lime juice
3 eggs
3/4 cup granulated sugar
1/4 cup key lime juice
1 tablespoon key lime zest
4 tablespoon cold unsalted butter
2 cups pop rock candy

Steps:

  • For the cupcakes: Preheat the oven to 300 degrees F. Line cupcake or muffin pans with 24 cupcake liners.
  • Sift the flour, baking powder and salt and set aside in a bowl.
  • In the bowl of electric stand mixer with a paddle attachment, cream the butter and granulated sugar together for about 2 minutes. Then scrape down the bowl and add the eggs one at a time. After adding all the eggs, scrape down bowl and add the milk and dry ingredients. Mix on low until well incorporated. Scrape down the bowl again and hike up from low speed to medium speed for about 20 seconds, and then scrape down the bowl for the last time.
  • Fill the cupcake liners three-quarters full with batter. Bake for 20 to 22 minutes, rotating the cupcakes after 12 minutes, and bake until the cupcakes are baked through. Cool the cupcakes completely.
  • For the frosting: Sift the powdered sugar and set aside in a bowl.
  • In the bowl of electric stand mixer with a paddle attachment, cream the butter and cream cheese on low speed. Scrape down the bowl and add the sifted powdered sugar 1 cup at a time. Slowly add the key lime juice and zest until well incorporated. Scrape down the bowl and mix on low speed. Then hike up to medium to high speed for about 2 minutes until creamy and fluffy.
  • For the curd: Whisk the eggs, sugar and key lime juice in a steel bowl and set aside while you prepare a double boiler.
  • Put a small pot half full with water on the stove over medium to high heat. Place the steel bowl with the whisked eggs on top of the pot and mix with a spatula until your mixture has become creamy like sour cream, 6 to 8 minutes. Remove the mixture and strain, getting rid of excess egg particles. Grab a second steel bowl and dump your egg mixture inside, adding your zest and cold butter. Mix until well incorporated and place in the fridge until it slightly thickens, 10 to 15 minutes (or until desired consistency is achieved).
  • Hollow out the middle of the cooled cupcakes with an apple corer or melon ball scooper and set aside. Fill the cupcakes with the curd. Put the frosting into a pastry bag and cut 1/2-inch off the tip. Swirl on the frosting, and then edge the sides in pop rock candies.

3 cups cake flour
1 tablespoon baking powder

1 medium lime, zested
1 ¼ cups white sugar
4 large eggs, at room temperature
3 large eggs
¾ cup white sugar
¼ cup freshly squeezed lime juice
¼ cup unsalted butter, cubed
1 ¼ cups whipping cream
¼ cup powdered sugar
¼ teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line two 12-cup muffin tins with paper liners.
  • Combine crushed graham crackers, melted butter, and sugar for crust in a bowl until combined. Put about 1 tablespoon crumb mixture into each prepared cup and flatten with the bottom of a shot glass.

1/4 cup confectioners' sugar
2 teaspoons non-fat or skim powdered milk
2 cups cold heavy whipping cream (see Cook's Note)
2 teaspoons pure vanilla extract

Steps:

  • Place a large mixing bowl or the bowl of a stand mixer in the freezer until cold, about 5 minutes. Alternatively, fill the bowl with ice water and let stand for 5 minutes. Pour out the ice water and quickly wipe the bowl dry.
  • Sift the sugar and powdered milk into the chilled bowl, then add the cold cream and vanilla. Whip the mixture on high speed until stiff, but smooth peaks form, about 2 minutes. If you accidentally overwhip, the peaks will look like they are cracking. Add about a tablespoon more heavy cream and hand whip the frosting until it smooths out.
