JALAPEñO LIME ROASTED CHICKEN



Jalapeño Lime Roasted Chicken image

Roast chicken is the perfect comfort food no matter the time of year and this jalapeño lime version will brighten your evening and help get rid of the Sunday scaries.

Number Of Ingredients 13

Whole chicken (4-5 lbs.)
3 Tbs unsalted butter (melted)
2 Tbs minced garlic (about 6 cloves)
1 1/2 Tbsp diced jalapeño pepper
1 tsp lime zest
1 tsp freshly squeezed lime juice
2 whole limes
2 medium sweet potatoes (cut into 1-inch chunks)
1 1/2 cups halved brussels sprouts
1 cup fresh cranberries
2 Tbsp olive oil
Salt and pepper
1 tsp chili powder

Steps:

  • Pre-heat oven to 400 degrees.
  • Remove giblets from chicken and pat dry with paper towels.
  • In a small bowl, stir together melted butter, minced garlic, diced jalapeño pepper, lime zest, and lime juice.
  • Rub the chicken with the butter mixture, making sure to get under the skin and in the chicken cavity.
  • Slice one lime into quarters and place in the chicken cavity.
  • Place chicken in roasting pan breast side-up. Tuck wings behind back and tie legs with string if desired.
  • Slice remaining lime into thin slices and place on top of chicken.
  • Place sweet potatoes, brussels sprouts, and cranberries in a bowl and toss with olive oil, chili powder, and salt and pepper.
  • Put vegetables in roasting pan around chicken.
  • Roast at 400 degrees for about one and a half hours, until thermometer inserted into the thickest part of the thigh registers at 165 degrees.
  • Remove chicken from pan and let rest on cutting board for about 10 minutes before carving.

1 cup thawed orange juice concentrate
2/3 cup chopped onion
1/2 cup lime juice
1/2 cup honey
1 jalapeno pepper, seeded and chopped
2 teaspoons ground cumin
2 teaspoons grated lime zest
1/2 teaspoon garlic salt
2 garlic cloves, minced
10 boneless skinless chicken breast halves (4 ounces each)

Steps:

  • In a 4-cup measuring cup, combine the first nine ingredients. Pour 2 cups into a large bowl; add chicken. Turn to coat; cover and refrigerate for 2-4 hours. Cover and refrigerate remaining marinade for basting., Drain and discard marinade. On a lightly oiled grill rack, grill chicken, covered, over medium heat or broil 4 in. from the heat for 4-6 minutes on each side or until a thermometer reads 170°, basting frequently with the reserved marinade.

½ cup orange juice
¼ cup lime juice
½ teaspoon ground cumin
½ teaspoon minced garlic
2 jalapeno peppers, seeded and minced
4 skinless, boneless chicken breast halves

Steps:

  • Whisk together the orange juice, lime juice, cumin, garlic, and jalapeno pepper in a bowl; pour into a resealable plastic bag. Add the chicken breasts, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator 2 to 4 hours.
  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Remove the chicken from the marinade and shake off excess. Discard the remaining marinade. Place the chicken on a broiling pan.
  • Broil the chicken breasts until no longer pink in the center and the juices run clear, about 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

I was reading the intro of this recipe and realized that yes, now I have tried it and even posted a picture so I decided to update. This is an easy recipe that is heart healthy. The recipe was in an issue of Diabetic Cooking.

1 tablespoon olive oil
1 teaspoon lime zest
1 tablespoon lime juice
1 jalapeno pepper, seeded and diced
1 teaspoon ground cumin
2 -3 cloves garlic, peeled and minced
1/4 teaspoon fresh ground black pepper
1/4 teaspoon salt
1 lb boneless skinless chicken breast half
1 sliced jalapeno pepper, for garnish
sliced black olives, for garnish

Steps:

  • Combine the oil, lime zest, lime juice, jalapeno, cumin, minced garlic, pepper and salt in a resealable plastic bag.
  • Place chicken in bag and press to remove excess air; seal tightly.
  • Turn bag over several times in order to coat chicken with mixture.
  • Chill 30 minutes or up to 8 hours.
  • Preheat grill, oven broiler or indoor grill to medium high heat.
  • Place the chicken on grill or in broiler pan.
  • Cook 12 to 15 minutes or until chicken is no longer pink and juices run clear when pierced with a fork, turning twice to get grill marks.
  • Garnish with jalapeno slices and black olives if desired.
  • Please note: When handling jalapeno peppers take caution.
  • They can sting and irritate the skin; wear rubber gloves when handling and do not touch face or eyes.
  • Wash hands throughly with soap and water after handling.
  • The time to make does not include the marinade time.

¼ cup chopped fresh cilantro
2 tablespoons olive oil
2 tablespoons freshly squeezed lime juice
1 tablespoon grated lime zest

1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon salt
½ teaspoon freshly ground black pepper
5 (4 ounce) bone-in, skin-on chicken thighs
1 ½ cups chicken stock
1 tablespoon olive oil
1 ¼ cups water
1 ½ cups long-grain white rice
1 ½ tablespoons freshly squeezed lime juice
½ teaspoon salt
2 tablespoons finely chopped fresh cilantro
1 ½ teaspoons lime zest

Steps:

  • Combine cilantro, olive oil, lime juice, lime zest, minced garlic, chili powder, cumin, salt, and pepper in a bowl or plastic storage container. Add chicken and coat well in the marinade. Cover and refrigerate for at least 2 hours, turning chicken occasionally.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat olive oil in a Dutch oven over medium-high heat. Remove chicken thighs from the marinade, rubbing garlic onto both sides of the chicken. Add chicken to the hot oil and cook until browned, about 4 minutes per side. Turn off burner and transfer chicken to a plate; set aside.
  • Pour chicken stock and water into the Dutch oven, scraping the bottom of the pot with a wooden or plastic spoon to loosen any browned bits. Stir in rice, lime juice, and salt. Place chicken on top of the rice and cover with a lid.
  • Bake in the preheated oven for 30 minutes. Uncover and remove chicken to a plate using tongs. Stir rice from bottom to top then place the chicken back on top of the rice.
  • Return to the oven and cook, uncovered, until all the liquid is absorbed, and the rice is soft, 15 to 18 more minutes.
  • Transfer cooked chicken to a plate and stir 2 tablespoons chopped cilantro and 1 1/2 teaspoons lime zest into the rice. Fluff with a fork and serve with the chicken.
