CHUNKY VEGETABLE SOUP WITH BEANS
Filling, delicious and nutritious, this simple soup makes for an easy and healthy meal. It's vegan, fat free and low in calories. Can be made on the stove top or in the Froothie Evolve.

Steps:
- Slice the celery and leeks and place in a pan or the heating jug of the Froothie Evolve.
- Cut the potatoes, carrots and courgette into chunks and add to the pan or jug.
- Chuck in the remaining ingredients, then either: 1) top up the Froothie Evolve jug to the 1,400 ml level with water 2) use the butter bean tin to add about 800ml of water.
- Ask the Froothie Evolve to make your chunky soup or select the programme. Alternatively, if using the stove top, bring the soup to a boil. Cover, turn the heat down then simmer for 20-25 minutes until everything is soft. Keep an eye on the water level, you might want to add a bit more as it cooks.

CHUNKY VEGETABLE AND BEAN SOUP
Our bitterly cold winter made me in the mood for a big bowl warm soup with lots of chunky vegetables in it, so that's exactly what I did! Tasty, hearty and so easy to make!

Steps:
- Heat the oil in a large saucepan and add the chopped onion, and garlic .
- Cook over a medium heat for a few minutes, until the onion is soft and translucent.
- Add the pumpkin,carrots,potato and celery.
- Cook for a further 10 minutes.
- Add the stock and salt and pepper to taste.
- Cook for a further 30 minutes
- Add more water as needed
- When the veggies are soft, remove about half the quantity from the saucepan and blitz with a stick blender or liquidiser.
- Return the blended soup to the saucepan adding a bit more water if the consistency is too thick.
- Add the cannellini beans and cook for a further 10 minutes.
- Serve the soup hot, topped with the crispy croutons, and some fresh parsley.

WHITE BEAN AND VEGETABLE SOUP
A delicious hearty soup packed with good-for-you vegetables and beans.

Steps:
- Place the dry beans in a pot, cover with 3" of cold water, and let them soak overnight.
- The next morning drain the beans in a colander and rinse very well with cold water. Return the beans to the pot, add just enough water to cover them, and bring the water to a boil. After a couple of minutes, remove the pot from the heat, drain the water again and rinse the beans again. (This step is important, not only you are getting rid of the impurities and the residue of the beans, but your beans will be easier to digest and more gentle on your stomach!)
- Return the rinsed beans to the pot along with 6 cups of cold water and the olive oil. Bring to a boil, reduce to a medium simmer, and partially cover with a lid. Cook for 15 minutes.
- While the beans cook start prepping the vegetables. Once prepared add the leeks, shallot, kale, carrots, celery and garlic to the pot. Next add the bay leaves, oregano, rosemary, and ground pepper. Finally, if you have it, add the Parmesan rind (it adds lots of flavor to soups and stews as it slowly melds with the broth). Cook the soup for another 30 minutes, or, until beans are almost cooked.
- Stir the potatoes and the tomato into the soup. Simmer for another 15 minutes or so, until the potatoes are tender. Lastly, stir in the soup the salt. Taste and adjust the seasoning, if necessary.
- Let the soup cool down slightly, then serve with a generous drizzle of olive oil and a good sprinkle of fresh Parmesan cheese.
CHUNKY BEEF AND VEGETABLE SOUP
Steps:
- Soak beans in cold water to cover by 2 inches in a bowl at room temperature at least 8 hours, or quick-soak (see cooks' note, below). Drain in a colander.
- Pat shanks dry and sprinkle with pepper and 1 teaspoon salt. Heat oil in a wide 6- to 8-quart heavy pot over moderately high heat until hot but not smoking, then brown shanks (in batches if necessary), turning, about 6 minutes total, and transfer with tongs to a bowl.
- Cook onion in fat remaining in pot over moderate heat, stirring, until golden, about 5 minutes. Add garlic and cook, stirring, 1 minute. Add browned meat along with any juices accumulated in bowl, carrots, 8 cups water, beef broth, and remaining 1/2 teaspoon salt and simmer, covered, until meat is very tender, about 1 1/2 hours.
- Remove shanks with a slotted spoon and transfer to a cutting board. When cool enough to handle, cut meat into 1-inch pieces, discarding bones, and return meat to soup.
- Meanwhile, simmer lima beans in remaining 4 cups water in a 4-quart saucepan, covered, until just tender, 20 to 30 minutes. Drain in colander.
- Peel potatoes and cut into 1-inch cubes, then add to soup with lima beans and tomatoes with their juice and simmer, covered, until potatoes are tender, about 15 minutes. Add cabbage and green beans and simmer, uncovered, until tender, about 5 minutes.
HEARTY VEGETABLE SOUP
This is a tasty, low-fat soup. It's all vegetables, beans and rice so there's not a lot of calories, either. You can replace the soy sauce with low sodium soy sauce, if desired.

- Heat olive oil in a large pot over medium heat. Cook and stir onion and celery in hot oil until onion is softened and translucent, about 5 minutes.

- In a medium size cooking pot, add vegetable stock, onion and potatoes; bring to boil, reduce heat and simmer covered for 10 minutes.

- Fit a food processor with the 1 millimeter slicing blade and process the onion, celery and scallions.
- Heat the oil and butter in a large stockpot and add the sliced vegetables. Saute about 3 minutes.
- Meanwhile, slice the carrots, zucchini, turnip, cabbage and potatoes in the food processor. Add these vegetables to the stockpot along with the salt and the water, and bring to a boil. Cover, reduce the heat and boil gently for 20 minutes.
