We'll take a banana split, but hold the ice cream. That's right, the bananas get to shine in this warm caramel delight.

Steps:
- Melt butter in large skillet on medium heat. Add sugar; cook until melted, stirring occasionally. Gradually mix in sour cream; cook on low heat 1 min.
- Cut bananas lengthwise, then crosswise in half. Add, cut sides down, to skillet; cook 1 min., basting occasionally with sauce from bottom of skillet. Stir in nuts.
- Spoon bananas evenly into 4 dessert dishes; top with remaining sauce in skillet. Drizzle with chocolate; top with COOL WHIP.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
- Place the bananas into a large plastic zipper bag, seal the bag, and smoosh the bananas with your fingers until very well mashed. Set the bananas aside. Place the brown sugar and butter into a mixing bowl, and mix on medium speed with an electric mixer until light and fluffy, 1 to 2 minutes. Cut a corner from the plastic bag, and squeeze the mashed bananas into the bowl of brown sugar mixture. With the electric mixer on medium speed, beat in the bananas, egg, cinnamon, vanilla extract, and milk until the mixture is well combined. Switch the mixer to low speed, and gradually beat in the flour, baking soda, baking powder, and kosher salt just until the batter is smooth, about 1 minute. Spread the batter into the prepared loaf pan.
- Bake in the preheated oven until the bread is set and lightly browned on top, about 40 minutes. A toothpick inserted into the center of the loaf should come out clean.

BANANAS IN BROWN SUGAR AND RUM
Be very careful to stand away from the stove when you add the rum -- the flames will be brief but dramatic.

- Peel bananas, and carefully cut in half lengthwise.
- In a medium saute pan over medium heat, melt 1 tablespoon butter. Add 2 tablespoons brown sugar, and swirl until dissolved.
- Add 2 bananas, cut side down, and cook for about 2 minutes on each side, turning very carefully.
- Pouring from a measuring cup, with the pan off the heat, add 1/4 cup rum. Stand back from stove, and return pan to heat. Shake the pan, allowing rum to ignite. Let the alcohol burn off, and again shake the pan, to coat the bananas. Cook until glazed and translucent, about 1 minute longer.
- Remove bananas to warm plates, divide sauce between them, and repeat with remaining 2 bananas.
- Garnish each banana with a little dab of creme fraiche or sour cream, and serve immediately.
BROWN-SUGAR BANANAS
A spoonful of these sliced brown-sugar bananas are the perfect topping for a warm plate of buttermilk waffles.

- In a small bowl, whisk together honey, brown sugar, and 2 tablespoons water; set aside. Melt butter in a skillet over medium-high heat. When foam from butter subsides, add bananas in a single layer; cook, flipping once, until dark brown, 7 to 9 minutes total.
- Add reserved honey mixture; cook 45 seconds and serve immediately. Cooled bananas can be refrigerated in an airtight container up to 1 day. Reheat over medium-low before serving.
GRILLED ASPARAGUS WITH TANGERINE MAYONNAISE

- Put the tangerine juice in a small non-reactive saucepan and bring to a boil. Cook until reduced to 1/2 cup. Let cool to room temperature.
- Peel the tangerines, removing all the white pith, and segment over a bowl to catch both the segments and the juices. Cover and refrigerate until very cold.
- Combine the reduced juice, tarragon, egg yolk, and salt and pepper, to taste, in a blender and blend until well mixed. With the machine running, add the 1 cup olive oil, at first by drops and then, as mixture emulsifies, in a thin, steady stream until all the oil is incorporated. Taste, for seasoning. Scrape into a jar, cover, and refrigerate until needed. You should have about 1 2/3 cups mayonnaise. Keeps 2 to 3 days, refrigerated.
- Prepare the grill and let burn down to medium coals. Toss the cooled asparagus with about 1 tablespoon olive oil and season with salt and pepper. Grill over medium to low coals, turning the spears as needed, until they take on a little color and are just tender, about 6 minutes. Cover the grill, if necessary, to maintain the heat.
- Arrange the asparagus on a platter with the reserved tangerine segments. Dot with the mayonnaise, and drizzle with any tangerine juice left in the bowl. Garnish with fresh or candied zest and the nuts, if using. Serve at once.
- Cook's Note: Every cook has insecurities. One of mine is mayonnaise. I always get a little anxious until I see it coming together in the blender. If the mayonnaise is too thick, thin it, with the machine running, by pulsing in a little cool water. If you are concerned about raw eggs, use a pasteurized egg product or an egg substitute such as Egg Beaters.

- Whisk dulce de leche sauce and liqueur in small saucepan over low heat until sauce is just warm. Whisk lemon juice, sugar, cinnamon, and nutmeg in large bowl to blend; add bananas and toss to coat.

- Add sugar; cook until melted, stirring frequently.
- Reduce heat to low.
- Gradually add sour cream; cook 1 minute.
- Cut bananas in half lengthwise and crosswise, creating 4 half slices.
- Add banana slices, cut side down, and peanuts to skillet.
- Cook 1 minute, or until bananas are evenly coated and tender, basting occasionally with sauce.
- Spoon bananas into 4 dessert dishes, and spoon sauce over.
- Place unwrapped chocolate square in microwaveable bowl.
- Cook on HIGH for 2 minutes, stirring after 1 minute.
- Stir until completely melted and drizzle over bananas.
- Finish with a dollop of whipped topping.

BANANAS IN BROWN-SUGAR SAUCE
OMG, this recipe had me drooling, it is so very good. We had it tonite in the kitchen - so that only the kitchen staff could eat (8+) we followed the directions so there was enough for only a taste! I think if you chose to you could add a decade4nt ice-cream such as butter-pecan ripple & follow through with nuts as well! (Just a thought!) WOW! It's bananas cooked in a delectable brown-sugar-rum sauce for a quick yet impressive dessert! Found this in an Eating Well Newsletter in the June 2008 edition.

WARM BANANAS KAHLUA

- Caramelize sugars in a hot, dry sauté pan, being careful not to burn the sugar. Add sliced bananas, Kahlua, and butter. Remove pan from burner (butter and Kahlua should not cook). This is excellent served directly, or over ice cream. Editor's Extra: An ounce is 1/8 cup or 1 1/2 tablespoons. Dry sugar will liquify and turn brown-carmelize-when heated quickly in a skillet. Fun Fact: Bananas do not grow on trees! They grow on tropical plants that have no trunk. Bananas are really gigantic herbs that spring from underground stems.
