Sweet strawberries and tangy rhubarb are blended together with agave nectar, cranberry-raspberry juice and Greek honey vanilla yogurt for a rich and creamy smoothie in just 5 minutes.

  • In blender, place all ingredients. Cover; blend with on-and-off pulses until pureed. Pour into 2 drinking glasses. Serve immediately.

4 cups chopped fresh or frozen rhubarb, thawed
1 cup sugar
1/4 cup strawberry gelatin powder
1 package white cake mix (regular size)
1 cup hot water
1/2 cup choppeed sweetened shredded coconut
1/3 cup slivered almonds, toasted
6 tablespoons butter, melted

Steps:

  • Arrange rhubarb evenly in a greased 13x9-in. baking dish. Combine sugar and gelatin powder; sprinkle over rhubarb. Sprinkle dry cake mix over gelatin mixture. Pour hot water over cake mix (do not stir). Top with coconut and almonds. Drizzle with butter., Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool on wire rack.

Edited with twissis' excellent tips: The base mix cooks down to a volume of about 3 cups which would provide 6 servings. For each shake use 1/2 cup base mix, 3/4 cup strawberries or other fruit, and 1/2 cup ice cream (no milk). Thanks to Twissis for these refined directions for using the base mix.

1/4 cup orange juice
4 cups fresh rhubarb, chopped
1/2 cup rhubarb, base
1/2 cup frozen blueberries or 3/4 cup strawberry

Steps:

  • RHUBARB BASE:.
  • In a non-reactive medium saucepan, stir together sugar and orange juice.
  • Stir in rhubarb and bring to boil over medium-high heat.
  • Reduce heat to medium and simmer, stirring occasionally, until rhubarb is tender, 5 to 7 minutes.
  • Transfer to airtight container.
  • Cool, cover and refrigerate for up to 1 week.
  • FOR EACH PICK-A-FRUIT AND RHUBARB MILKSHAKE:.
  • Toss the 1/2 cup rhubarb base mix and chosen fruit into a blender.

During the holidays, I'll at times serve this unusual salad in place of cranberry sauce. It goes well with pork or poultry . Honestly, though, it's good with any everyday meal, too. It's just a little tart, so it rounds out rich food. I've been cooking ever since I made corn bread to surprise my family when I was 9. My brothers wouldn't eat it-but my parents did! My husband and I are dairy farmers in partnership with our grown son.

3 cups sliced fresh or frozen rhubarb (1-inch pieces)
1 tablespoon sugar
1 package (3 ounces) raspberry gelatin
1 cup unsweetened pineapple juice
1 teaspoon lemon juice
1 cup diced peeled apples
1 cup diced celery
1/4 cup chopped pecans

Steps:

  • In a medium saucepan, cook and stir rhubarb and sugar over medium-low heat until rhubarb is soft and tender, 5-7 minutes. Remove from the heat; add gelatin and stir until dissolved. Stir in pineapple and lemon juices. Chill until partially set. , Stir in apples, celery and pecans. Pour into a 4-1/2-cup mold or glass bowl coated with cooking spray. Chill several hours or overnight.
