RASPBERRY BASIL LIMONCELLO COCKTAIL

Ingredients

1 pint fresh raspberries, plus more for garnish
12 fresh basil leaves, roughly torn, plus sprigs for garnish
1 lemon, cut into sixths, plus wheels for garnish
1/4 cup simple syrup, chilled (more if you prefer the cocktail a little sweeter)
2 ounces Limoncello
4 ounces citron vodka
Crushed ice
Sparkling rose wine, chilled

Steps:

Combine the raspberries, basil, lemons and simple syrup in a small pitcher and muddle until the raspberries are mashed. Add the Limoncello and vodka. Let chill in the refrigerator for 30 minutes to allow the flavors to meld.
Put crushed ice into rocks glasses and add some of the raspberry mixture. Fill to the top with sparkling wine. Garnish with lemon and raspberries and basil sprigs if desired.

3/4 cup sugar
3/4 cup water
8 ounces fresh raspberries, 6 reserved for garnish
Ice
2.5 ounces (5 tablespoons) bourbon, such as Bulleit Bourbon
3 ounces (6 tablespoons) lemon juice, chilled

Steps:

Make the raspberry syrup: In a small saucepan, combine the sugar, water and raspberries. Bring to a simmer and then remove from the heat. Stir until the sugar dissolves. Strain the syrup, pushing the pulp of the berries through but leaving behind the seeds. Discard the seeds. Chill the syrup at least 30 minutes and up to 24 hours.
Get ready: Prepare a cocktail shaker with a fitted lid. On 2 small cocktail skewers, skewer 3 raspberries on each and set aside.
Make the cocktail: In a cocktail shaker filled with ice, add the bourbon, lemon juice and 4 ounces of the raspberry syrup. Shake until chilled.
Serve: Add a few ice cubes into two glasses and pour half of the cocktail into each. Garnish with the raspberry skewers.

Ice
1 1/2 ounces whiskey
1 1/2 tablespoons fresh lemon juice
Lemon slice, for garnish

Steps:

Rub the rim of an old fashioned glass with lemon wedge. Fill a saucer with sugar, and dip the glass, upside down, into the sugar.
Fill a cocktail shaker with ice. Add whiskey, lemon juice, and 1 teaspoon superfine sugar, and shake until sugar dissolves. Strain into an ice-filled old fashioned glass, and garnish with lemon slice and a cherry.
