REFRESHING LIMONCELLO CAKE
This is a perfect ending to an Italian dinner! A favorite of my family's, this recipe was born as we were trying to figure out how to incorporate our bottles of imported limoncello into a yummy dessert. It's our adult twist on the always refreshing lemonade cake (and surprisingly guilt-free!).

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Prepare an 8-inch cake pan with cooking spray.
- Whisk together the yogurt, eggs, canola oil, lemon juice, lemon zest, sugar, and 4 tablespoons limoncello in a large bowl. In a separate large bowl, mix the flour, baking powder, baking soda, and salt. Gently stir the dry ingredients into the wet. Do not over mix or the cake will be tough. Pour batter into prepared pan.
- Bake in the preheated oven until top is golden and a toothpick inserted in the center of the cake comes out clean, about 35 minutes. Remove from oven and allow to cool slightly.
- Stir the powdered sugar and 3 tablespoons of limoncello together in a small bowl until smooth. Poke small holes all over the top of the still-warm cake with a fork or toothpick. Spoon the glaze over the cake and spread with the back of a spoon. The glaze will seep into the cake and add moisture.

LIMONCELLO DESSERT BY RACHAEL RAY
This is an easy way to assemble sorbet and ice cream with a nice garnish! I keep my limoncello in the freezer so I'm all set for a summer dessert!

Steps:
- Take out 4 dessert cups and put a scoop of lemon sorbet and a scoop of vanilla ice cream in each cup.
- Top each serving with 1 oz. of limoncello and a quarter of the lemon zest.
- Garnish each serving with 2 wafer cookies.

RACHAEL RAY'S MAMACELLO PASTA
Rachael Ray says that her mother loves limoncello and she made this lemon pasta for her mom. My children love pasta in any form and they thought this was wonderful. I have to agree. Perfect for hot summer nights.

Steps:
- Bring a large pot of water to boil.
- Add the pasta and salt the water.
- Cook the pasta until al dente, 6 to 7 minutes.
- Heat a large deep skillet over low heat and add the olive oil.
- When the olive oil is warm, add the garlic and red pepper flakes.
- Turn off the heat and set the garlic aside for 5 minutes, then raise the heat to medium, add the wine and lemon zest and boil to reduce the wine by half, about 3 minutes.
- When the pasta is just about cooked, add a ladle of starchy pasta cooking water to the skillet with the sauce and stir in the heavy cream.
- When the cream is warmed through, whisk the lemon juice into the sauce and season with salt.
- Drain the pasta and toss with the sauce, then let the pasta stand for 1 minute so it can soak up a little of the sauce.
- Toss with the parsley, basil and cheese.
- Serve immediately.
