Crunchy Scotch Eggs With Horseradish and Pickles image

6 large eggs
2 fat garlic cloves, finely chopped
Pinch kosher salt
1 pound Italian sausage, casings removed
1 1/2 to 2 tablespoons prepared horseradish
1/4 cup all-purpose flour
1/4 cup panko bread crumbs
Olive oil, for frying
Cornichons or other pickles, for serving

Steps:

  • Place 4 eggs in a medium saucepan and cover with cold water. Bring to a boil over high heat; remove from heat and cover for 3 minutes. Uncover and allow to sit for 10 minutes. Peel eggs under running cold water and pat dry.
  • Using a mortar and pestle or the back of a knife, mash the garlic with a pinch of salt until a paste forms. In a medium bowl, knead together the sausage, garlic paste and horseradish until just combined. Divide into 4 equal portions.
  • In a small bowl, lightly beat the remaining 2 eggs. Place the flour and panko in separate bowls. Coat each hard-boiled egg in flour and then enclose each one completely in a sausage patty, molding the sausage into place. Dredge the sausage-coated eggs in the flour, shaking off the excess. Dip them in the beaten eggs, letting the excess drip off, and roll them in the panko, coating well.
  • Fill a medium pot with 1/2-inch oil. Heat to 350 degrees, or until the oil is shimmering and bubbling slightly around the edges. Fry the eggs, 2 at a time, turning them occasionally until golden and cooked through, about 7 to 9 minutes. Transfer to a paper-towel-lined plate. Sprinkle with salt and serve while still warm, with pickles.

2 teaspoons sriracha hot chili sauce (optional)

Steps:

  • You will need a large mixing bowl.
  • The following items add to taste, the amounts listed above are approximate: hot dogs (depends how much meat you want); pickles (Depends how salty you want the salad. This is the only source of salt in the salad.); oregano; black pepper; white pepper; sour cream (add more if salad too dry); mayonnaise (add more if salad too dry); horseradish; hot sauce (depends how spicy you want).
  • Boil potatoes, carrots, hot dogs until cooked.
  • Hard boil the eggs.
  • While the above are boiling, add to bowl sweet peas.
  • Finely chop and add to bowl: cilantro, dill.
  • Cut to small pieces (to size of a pea) and add to bowl pickles.
  • Once all the boiled items are cooked: peel, chop (to size of a pea) and add them all to the bowl: potatoes, carrots, hot dogs, eggs.
  • Add the rest of the ingredients to the bowl: oregano, black pepper, white pepper, sour cream, mayonnaise, horseradish, hot sauce.
  • Mix well and serve or place in fridge for later use.

2 pounds beef soup bones
salt to taste
4 ½ pounds beef eye of round roast
2 small onions, quartered
2 medium (blank)s carrots, chopped
2 stalks celery, chopped
1 small leek, chopped
2 cloves garlic, crushed
1 bunch parsley, chopped
1 large bay leaf
1 pinch ground nutmeg
3 tablespoons chopped fresh chives
2 medium apples - peeled, cored, and grated
2 tablespoons white wine vinegar
1 teaspoon white sugar, or to taste
2 tablespoons freshly grated raw horseradish, or to taste
⅛ teaspoon salt
⅛ teaspoon white pepper

Steps:

  • Rinse beef bones and place in a large pot, cover with water, add salt to taste, and bring to a boil. Add beef roast and bring back to a boil, making sure roast is covered by water. Skim frothy liquid several times if necessary. Reduce heat and let simmer for 1 hour.
  • Stir onions, carrots, celery, leek, garlic, parsley, bay leaf, and more salt to soup. Bring to a boil, skimming off froth on top as necessary.
  • Cover and continue to simmer until beef can be easily pierced with a sharp knife point, about 2 hours.
  • During the last half hour of cook time, prepare apple-horseradish sauce. Place apples in a small saucepan and add sugar and vinegar. Cook over low heat for 10 to 12 minutes. Let cool, about 5 minutes. Stir in horseradish and season with salt and pepper.
  • Remove meat to a heated serving platter. Strain stock through a fine sieve and add nutmeg and salt to taste. Reserve stock. Toss vegetables and bones. Slice meat across the grain and pour a little stock over it; garnish with chives.
