POTSTICKER DIPPING SAUCE

1/4 cup soy sauce
1/4 cup of water
2 tbsp rice vinegar (**Chinese black vinegar is great too!)
1 tbsp green onions, (diced)
2 tsp toasted sesame oil
2 tsp brown sugar
1 clove of garlic, (minced)
1/4 tsp fresh ginger, (minced)
1/4 tsp sriracha, or more to taste (optional)

Steps:

  • Combine the soy sauce, water, rice vinegar, green onions, toasted sesame oil, brown sugar, minced garlic, ginger, and sriracha sauce together in a small bowl or glass jar; whisk until well combined.
  • Cover and set aside for at least 30 minutes for the flavors to mingle. Whisk very well before serving.
  • Serve as a dipping sauce for potstickers, egg rolls, gyoza, or wontons. Enjoy.

This yummy soup uses Ling Ling brand frozen pot stickers that I buy from Costco. Instead of frozen veggies, I use fresh ones and add water chestnuts and bamboo shoots. If using fresh....it will depend on how crisp you like them...as to when you add them to the soup to cook). This is something my teenage boys really like!

12 cups chicken broth
2 cups water
8 cups frozen mixed vegetables
40 ling ling chicken pot stickers, frozen
2 tablespoons grated fresh ginger
1/3 cup dipping sauce, thawed (2 packets=approximately 1/3 C. included with the Ling Ling Chicken Pot Stickers)
1/4 cup cornstarch
2 teaspoons chopped scallions, plus more
scallion, for garnish
salt and pepper

Steps:

  • In a large pot combine broth and water. Bring to a boil. Add frozen Ling Ling Pot Stickers. Return to a boil and cook 4 minutes, stirring occasionally.
  • Add frozen vegetables, ginger and scallions. Cook 4 minutes.
  • In the meantime, mix Ling Ling Potsticker Sauce with cornstarch in a small bowl.
  • Add the sauce mixture to the soup and bring to a simmer. Season with salt and pepper. Garnish with a few more scallions.

12 frozen ling ling potstickers
1 tablespoon olive oil or cooking spray
dipping sauce packets

Steps:

  • Take out the potstickers from the bag. It is not necessary to thaw them.
  • Spray oil over the Ling Ling potstickers to prevent them from sticking together.
  • Transfer them to the air fryer basket. Lay them out in a single layer, leaving space between potstickers.
  • Cook at 360ºF (182ºC) for 8 minutes. Pull the basket out and turn them over halfway through cooking. This will ensure that the potstickers are cooked evenly. If you would like them crispier, air fry 2-5 minutes longer and they will become golden brown. For small air fryers, cook in batches
  • Meanwhile, place the sauce packets in a water bath to warm.
  • Serve with the dipping sauce and enjoy!

1 tablespoon chopped ginger root
2 teaspoons minced garlic
1 tablespoon olive oil
1 carton (32 ounces) chicken broth
1 medium carrot, sliced thin
1 cup sliced shiitake mushrooms
12 frozen Ling Ling Chicken & Vegetable Potstickers
2 cups sliced bok choy
2 green onions, chopped
1/4 cup freshly chopped cilantro
the sauce packet included with the Ling Ling Chicken & Vegetable Potstickers

Steps:

  • Add 1 tablespoon oil to large saucepan. Add ginger and garlic and turn heat to medium. Cook until fragrant. Add chicken stock and bring to a boil.
  • Add carrots, shiitake mushrooms and Ling Ling Chicken & Vegetable Potstickers to boiling water. Add sauce pack. Simmer for 8 - 10 minutes.
  • Add bok choy and simmer for 2 - 3 minutes, or until wilted.
  • Serve garnished with green onions and fresh cilantro.
