Epic Chunky Beef and Mushroom Pie image

Tender, fall apart chunks of beef with mushrooms in the most incredible gravy ever. The secret ingredient - Dried Porcini Mushrooms! They add a savoury earthiness that can't be replicated and takes this pie to the next level.

20 g / 0.7 oz dried porcini mushrooms ((slices, whole or chopped) (Note 1))
1 ¼ cups / 312 ml boiled water
1 kg / 2 lb chuck beef (, cut into 2.5cm/1" cubes (Note 2))
1 - 2 tbsp vegetable oil
2 garlic cloves (, minced)
1 onion (, finely chopped)
1 celery (, finely chopped)
1 carrot (, finely chopped)
3 carrots (, halved lengthwise then cut into 1.5cm/ 3/5" chunks)
1/3 cup flour ((any))
300 ml / 10 oz dark ale ((or substitute with red wine, Guinness or more beef stock))
2 cups / 500 ml beef stock
3 sprigs thyme or 1 tsp dried thyme leaves
2 bay leaves (, fresh or dried)
200 g / 7 oz bacon (, diced)
300 - 400g / 10 - 13 oz Swiss brown mushrooms (, larger ones halved)
1 - 2 sheets puff pastry ((enough to cover pie))
1 egg yolk

Steps:

  • Place porcini in a bowl and add hot water. Leave to soak for at least 30 minutes. Strain mushrooms and reserve soaking liquid. Roughly chop porcini.
  • Sprinkle beef with salt and pepper.
  • Heat 1 tbsp oil in a large heavy based pot. Add half the beef and brown all over, then remove and repeat with remaining beef. Set beef aside.
  • Turn stove down to medium low. If the pot is looking dry, add more oil. Add onion and garlic, cook for 2 minutes. Add finely chopped carrots and celery, cook for 6 minutes or until softened and sweet (taste test!). Add carrot chunks and cook for 2 minutes.
  • Add flour and stir through.
  • Add ale, beef stock, and stir to dissolve the flour.
  • Add thyme, bay leaves, porcini, reserved porcini soaking liquid (don't tip in gritty bits settled at bottom) and cooked beef. Turn heat up slightly, mix, bring to simmer, then cover. Adjust heat so it is simmering gently, not energetically.
  • Cook for 1 hr 45 minutes or until beef is tender. (See video)
  • Meanwhile, cook bacon in a skillet over high heat until golden. Remove and reserve bacon drippings in pan. Add mushrooms and cook for 5 minutes until golden all over. Return bacon into skillet, toss to coat mushrooms, then stir through stew.
  • Simmer stew, uncovered, for 15 minutes until mushrooms are tender. Then remove from stove and cool.

30g dried porcini mushroom , finely chopped
1 tbsp vegetable bouillon powder
1 tbsp balsamic vinegar
2 medium baking potatoes , cut into chunks (475g)
1 small celeriac , peeled and cut into large chunks (500g)
½ tsp ground white pepper
2 tsp rapeseed oil
2 large onions , halved and sliced
400g 5% lean beef mince
125g baby chestnut mushrooms , halved if large
2 tsp chopped sage
25g stilton , crumbled (optional)
320g spinach or chard
320g frozen peas

Steps:

  • Tip the dried mushrooms, bouillon and vinegar into a bowl and pour over 400ml boiling water. Boil the potatoes and celeriac together for 18-20 mins until very tender, then drain and leave to steam-dry. Mash with the white pepper.
  • Meanwhile, heat the oil in a large, deep, non-stick frying pan and fry the onions for 10 mins, stirring occasionally, until golden. Add the mince and fresh mushrooms and fry for 5-10 mins until the mince is browned. Tip in the dried mushroom mixture and the sage, then half-cover the pan and simmer for 20 mins, stirring occasionally, until thickened.
  • Spoon the mixture into four 175ml pie dishes and top with the mash and stilton, if using.
  • If eating straightaway, heat the grill to high. Put the pies on a baking tray (in case they bubble over) and grill for 5 mins. To make ahead, leave to cool completely, cover and freeze for up to three months. Reheat in the oven until piping hot. Wilt the spinach in a pan or the microwave and cook the peas following pack instructions. Serve the pies with the veg on the side.

6 tablespoons butter, divided
1 ½ pounds baby bella (crimini) mushrooms, sliced
¼ cup chopped sweet onion
½ lemon, juiced
½ teaspoon dried thyme
5 tablespoons all-purpose flour
1 ¼ cups Swanson® Chicken Broth
⅓ cup Marsala wine
2 tablespoons half-and-half
salt and pepper to taste
1 (17.3 ounce) package frozen puff pastry, thawed
1 egg, beaten

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a 9-inch pie plate with non-fat cooking spray.
  • Melt 3 tablespoons butter in a large skillet over medium heat. Add mushrooms, and onions, stirring occasionally, until liquid from the mushrooms has cooked down, about 10 minutes. Stir in lemon juice and thyme and simmer 2 minutes.
  • Melt 3 tablespoons butter in a separate saucepan. Whisk in flour and stir constantly for about 1 minute. Gradually add the Swanson® Chicken Broth, Marsala, and half-and-half, whisking until sauce is smooth and thickened, about 3 minutes. The sauce should be very thick. Season to taste with salt and pepper.
  • Transfer the mushroom mixture to the sauce broth/Marsala mixture; stir well.
  • Roll out one sheet of puff pastry to fit the pie plate. Press evenly into the bottom and sides of the pie plate; trim the excess pastry. Spoon the mushroom mixture into the pastry shell.
  • Roll out the second sheet of puff pastry, and place on top. Trim excess, and crimp the edge to seal. Cut a few slits in the top for steam to escape. Brush the top of the pie with the beaten egg.
  • Bake in the preheated oven until golden brown and mushroom mixture is bubbly, about 40 minutes. Allow the pie to cool slightly before serving.

  • Stir the flour and salt together in a large bowl. Add the butter and shortening pieces and toss to coat with the flour, then flatten the butter and shortening pieces between your fingers until there are pea-sized pieces of butter and shortening throughout the flour. Sprinkle ½ cup of cold water over the mixture, and gently use a rubber spatula or bowl scraper to hydrate the flour until the mixture sticks together. Add more water by the tablespoonful as needed until the dough holds together. Divide the dough in half, form into two disks, and wrap each disk with plastic wrap. Chill at least two hours or preferably overnight.
  • To make the filling, heat 1 tablespoon of oil in a Dutch oven over medium-high heat, and add the beef in two batches, searing on each side until crusty brown, about 4 minutes per side. Transfer each batch to a plate and set aside.
  • Add the remaining oil to the pan and reduce the heat to medium. Add the onions and mushrooms and cook, stirring and scraping up the fond (browned bits) until the onions and mushrooms have softened. Add the flour and mix until combined, then stir in the tomato paste. Slowly add the broth, mixing well to make sure the flour doesn’t leave lumps. Return the beef to the pan, add the thyme, and season with salt and pepper, but be careful not to overseason as the mixture will reduce significantly. You can always season more later.
  • Lower the heat, cover the pan, and simmer for 1 ½ hours, stirring occasionally. Remove the lid and continue to simmer uncovered for another 30 minutes, until liquid has reduced to a thick gravy-like consistency. Stir often to make sure the mixture doesn’t stick, especially once it has thickened considerably. Adjust seasoning as needed. Transfer to a bowl or storage container and let cool to room temperature. You can make the filling ahead of time and refrigerate for up to a couple days if needed. You’ll have about 3 cups of filling.
