This is not the kebab you would think of. My husband makes this based on the recipe in "Great Book of Coucous". You could make your own french fries for a real treat but this tastes pretty good anyway.

2 tablespoons oil
1/2 cup onion, chopped
1 lb skinless chicken piece, rid of fat and skin
10 sprigs flat leaf parsley, leaves only, chopped
1/4 cup chickpeas, cooked
1 teaspoon black pepper
1 teaspoon salt
1/2 teaspoon cinnamon
3 cups water
2 lbs frozen french fries
1 egg, beaten
lemon wedge, for serving

Steps:

  • Mix together in pan, 2 tablespoons oil, onion, chicken, 1/2 the parsley, chick peas, pepper, salt and cinnamon.
  • Fry this mixture over low heat, covered for 10 minutes.
  • Add water and bring to boil. Cook over medium heat for 40 minutes.
  • Meanwhile prepare the french fries according to package directions.
  • Add the cooked fries to the chicken mixture along with the egg and simmer for 10 minutes.
  • Garnish with remaining parsley.

Here's what you need: canola oil, medium onion, garlic, pepper, salt, red chili flakes, chopped tomato, sardines, baked beans, eggs, butter, yukon gold potato

3 tablespoons canola oil
1 medium onion, sliced into rings
1 teaspoon garlic, minced
1 teaspoon pepper
1 teaspoon salt
1 teaspoon red chili flakes
7 oz chopped tomato
4 oz sardines
7 oz baked beans, in tomato sauce
6 eggs, beated
4 tablespoons butter, cut into small pats
5 lb yukon gold potato, 1 bag, boiled

Steps:

  • Heat the oil in a medium nonstick pan over medium heat.
  • Add the onion, garlic, pepper, salt, and chili flakes, and cook for a 1-2 minutes, but don't let the onions brown.
  • Add the tomatoes, sardines, and baked beans, and cook for 4-5 minutes until the liquid reduces a bit.
  • Stir in the eggs and cook for about 2-3 minutes. Remove the pan from the heat.
  • Place a pat of butter on 3-4 potatoes, then spoon the egg mixture on top.
  • Enjoy!

2 kg potatoes (boiled, peeled & grated)
3 teaspoons salt
6 teaspoons red chili powder
8 teaspoons mango powder (amchoor powder)
4 green chilies (chopped)
2 tablespoons mint (chopped)
3 tablespoons coriander (chopped)
1 egg (beaten)
1/2 cup oil (or as desired for frying)

Steps:

  • Put the already boiled & grated potatoes in a big bowl.
  • Add all ingredients except eggs & mix well.
  • Take a small amount of this mixture in the hand and flatten to a disc shape.
  • Dip in beaten eggs & then fry in a pan on medium high heat till they turn golden brown.
  • Serve with ketchup, chutney, raita or as a side dish with anything.

1 lemon , juiced
1 tsp dried mint (optional)

Steps:

  • Simply mix all the ingredients together and season with salt and pepper - add a splash of water if you want to make it a drizzly consistency. The mint is optional but goes nicely with lamb. The sauce can be made the day before.
