CHINESE HOUSE SPECIAL FRIED RICE

Chinese House Special Fried Rice image

I am always trying to raise the bar on fried rice recipes. This one reminds me of some Vietnamese versions and has a hint of sweetness both from the lup cheong and the ketjap manis. With char siu it will taste more distinctively Chinese.

Provided by PalatablePastime

Categories     < 60 Mins

Time 40m

Yield 6-8 serving(s)

Number Of Ingredients 16

1/2-1 large onion, chopped
3 eggs (lightly beaten with 1 teaspoon sesame oil, salt, and pepper)
2/3 cup lup cheong sausage or 2/3 cup char siu pork
2/3 cup chopped cooked chicken breast
2/3 cup chopped shrimp
1 cup frozen peas and carrot, thawed
1 cup uncooked long grain rice, steamed and chilled overnight
1/2 cup sliced scallion
1 cup fresh bean sprout (optional)
1 -2 tablespoon soy sauce
1 -2 tablespoon dark sweet soy sauce (ketjap manis)
1 tablespoon chopped garlic
1 tablespoon toasted sesame oil
salt
pepper
peanut oil

Steps:

  • Cook the eggs in a thin layer in a skillet and then chop and set aside.
  • Cook onions in oil in a hot wok until they just begin to brown; add garlic and stir-fry until fragrant.
  • Crumble the rice between your fingers so there are no clumps and add to the wok with additional oil if needed to keep from sticking, season it with salt and pepper, and stir-fry until it is nicely separated on the grains.
  • Move the rice to one side and add the sausage/pork/shrimp/chicken mixture, cooking that part until the sausage/pork renders any fat and the shrimp turn opaque.
  • Stir in the peas and carrots, scallions, bean sprouts, and chopped egg and stir-fry until the bean sprouts go limp or the carrot is tender, whichever way you want to test it.
  • Stir in the soy sauce, sweet soy sauce, and sesame oil, mixing well, then serve.

JAPANESE STEAKHOUSE FRIED RICE RECIPE - (3.9/5)

Japanese Steakhouse Fried Rice Recipe - (3.9/5) image

Provided by AzWench

Number Of Ingredients 9

2 eggs
3 tablespoons unsalted butter
2 cloves garlic, minced
2 carrots, finely chopped
2 cups cooked medium-grain rice
3 tablespoons soy sauce
3 green onions, finely chopped
2 tablespoons gomasio (sesame and salt seasoning)
Black pepper, to taste

Steps:

  • In a large wok or on a griddle, scramble the eggs in 1 tablespoon of the butter over low to medium heat. Remove from the wok and set aside on a plate. Melt the additional 2 tablespoons of butter in the wok or on the griddle over high heat. Add the garlic and carrots, stirring constantly. After 1 to 2 minutes, stir in the cooked rice and soy sauce. Toss to thoroughly incorporate the ingredients. Add the cooked eggs and onion and mix in the gomasio and black pepper to taste; cook for another 6 to 8 minutes, or until the rice is warmed through and the flavors incorporated. Serve immediately alongside grilled meats or a teriyaki-style main dish. Tips: Make your fried rice stand out by varying the ingredients. Yumiko Kanou, chef and owner of the Tokyo restaurant Nakaiseki Sen, leaves out the egg, butter and gomasio and adds pine nuts, sesame oil and chiles de arbol to her brown fried rice. A splash of sake added along with the soy sauce adds another layer of flavor to fried rice, too. Cook the rice the day before and refrigerate it overnight. Refrigerated rice is less likely to stick together when fried, so you'll get separated grains, rather than a mushy mass. To give the rice even more flavor, cook it in chicken or vegetable broth. That Steakhouse Flavor Although this recipe is a close approximation of Japanese steakhouse fried rice, it can't duplicate it exactly. Teppanyaki-style restaurants usually cook the rice straight on the grill that's used to cook the meat and multiple other dishes. This imparts a flavor into the rice that's unique and almost impossible to replicate without a highly seasoned grill.

  • Heat 1/2 tablespoon of butter in a large sauté pan* over medium-high heat until melted. Add egg, and cook until scrambled, stirring occasionally. Remove egg, and transfer to a separate plate.
  • Add an additional 1 tablespoon butter to the pan and heat until melted. Add carrots, onion, peas and garlic, and season with a generous pinch of salt and pepper. Sauté for about 5 minutes or until the onion and carrots are soft. Increase heat to high, add in the remaining 1 1/2 tablespoons of butter, and stir until melted. Immediately add the rice, green onions, soy sauce and oyster sauce (if using), and stir until combined. Continue sautéing for an additional 3 minutes to fry the rice, stirring occasionally. (I like to let the rice rest for a bit between stirs so that it can crisp up on the bottom.) Then add in the eggs and stir to combine. Remove from heat, and stir in the sesame oil until combined. Taste and season with extra soy sauce, if needed.

HOW TO FRY RICE | ALLRECIPES

From allrecipes.com
Estimated Reading Time 4 mins
  • Use rice that's cold and day-old. Recipes will tell you to use cold, day-old rice. Why? Because freshly cooked rice is just too soft and sticky to stand up to all the tossing you'll do when you make fried rice.
  • Bite-size is best. Fried rice isn't meant to be knife-and-fork food. For easy cooking and eating, cut up ingredients into small, thin, uniform pieces. If you're using raw meats and uncooked vegetables, cook them before adding rice to the pan.
  • Use a bigger pan than you think you'll need. Fry rice in a large skillet or wok. You'll need all that room to toss and mix ingredients thoroughly. Related: The 4 Best Woks You Can Buy, According to Our Test Kitchen.
  • The right way to add eggs. It's very common to add beaten eggs to fried rice, but you have to do it right otherwise you end up with eggy mush. Here's what works: After you've combined your rice with any other proteins and vegetables, and it's all sizzling along nicely, push your rice to the side of the pan to clear a space to add the beaten eggs and cook them right in the pan.
  • Make it sizzle. Be sure to turn up the heat at the end to let the rice get sizzling hot and get the flavors working together. After all, you want fried rice, not just warm rice.

AUTHENTIC THAI FRIED RICE RECIPE (ข้าวผัด) - STREET …

From eatingthaifood.com
  • If you’re using whole fresh shrimp like I did, first pinch off the head, and peel the outer shell of the shrimp, leaving only the tail on (that’s Thai style).
  • Take just 1 leaf of Chinese broccoli (kai-lan), slice it in half first along the spine, and then slice it into 1 centimeter sized strips.
  • Turn on your stove to medium high, heat up your wok (or frying pan), and add about 1 tablespoon of oil.
  • Once your oil is hot, add the garlic first, and stir fry continuously for about 15 seconds or so, until it gets nice and fragrant.
  • Next, toss in your shrimp, and fry for about 30 seconds - your shrimp should start to turn pink and feel more firm.
  • Add in a little less than ½ of your rice first. This is going to soak up all those delicious shrimp juices and oils and keep your rice nice and dry. Stir fry for about 10 more seconds - This is a little known trick to make good rice, so it remains nice and dry.
  • Scoot all your rice to one side of the pan, and then crack in the egg into the empty side.
