Steps:
- Preheat oven to 425 degrees F (220 degrees C). Arrange potato nuggets in a single layer on a baking sheet.
- Bake in the preheated oven until lightly golden, 20 to 25 minutes.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and chop coarsely.
- Melt butter in a saucepan over medium heat; add shallot and cook until fragrant. Stir in flour and cook until light golden, about 2 minutes. Whisk in milk and 2 tablespoons sour cream; stir until smooth and thick, about 5 minutes. Season with black pepper and nutmeg. Stir in 1 cup Cheddar cheese until fully melted.
- Transfer potatoes to a 9x13-inch baking dish. Sprinkle bacon on top. Pour cheese sauce over the potatoes. Sprinkle remaining 1/2 cup Cheddar cheese on top.
- Bake in the preheated oven just until cheese melts, about 7 minutes. Remove from the oven; top with green onions and 2 tablespoons sour cream.

LOADED TATER TOT BAKE
Steps:
- Preheat oven to 350°. In a large skillet, heat oil over medium heat. Add onion; cook and stir until tender, 2-3 minutes. Add Canadian bacon; cook until lightly browned, 1-2 minutes, stirring occasionally. Remove from heat. , Line bottom of a greased 11x7-in. baking dish with Tater Tots; top with Canadian bacon mixture. In a large bowl, whisk eggs, sour cream, cream and seasonings until blended. Stir in cheese; pour over top. Bake, uncovered, until golden brown, 35-40 minutes.

LOADED BAKED POTATO SKILLET DIP
You know the velvety soft and rich creamy filling of a twice-baked potato? This dip is basically a skillet full of that, served with a side of thick-cut potato chips, so potato lovers be warned: You might need to reserve this recipe for parties, to avoid overindulging. (In case it's not clear, we are speaking from experience, this addictive dip was inspired by our endless appetite for spuds!). At a party though, this is just the thing, especially because you can whip it up 30 minutes before your guests arrive-thanks to quick-and-easy Betty Crocker™ roasted garlic mashed potatoes. The potatoes are made even more decadent by the addition of sour cream, cream cheese and butter. Not to mention the loaded baked potato-inspired toppings which include: bacon, green onions, cheddar cheese and some chopped parsley. With such a crowd-pleasing array of ingredients, we think this appetizer would be welcome on game day, at the church potluck and anywhere else you want to take it!

Steps:
- Spray 12-inch skillet with cooking spray; place over medium heat. Add bacon; cook 7 to 9 minutes or until crispy. Using slotted spoon, transfer bacon to paper towel-lined plate. Discard all but 2 tablespoons of drippings.
- Add water, milk and butter to drippings in skillet; heat to boiling over medium-high heat. Reduce heat to low. Stir in potatoes; remove from heat.
- Stir in cream cheese until smooth. Stir in 1 cup of the cheddar cheese, the sour cream and pepper until cheese is melted.
- Garnish with remaining 1 cup cheddar cheese, the green onions, parsley and cooked bacon. Serve with potato chips.

CHEESECAKE FACTORY BAKED POTATO TOTS
Steps:
- 1. Bake tator tots according to directions on the bag. 2. Blend up tator tots until mostly smooth with a few chunks - a food processor works best for this, but you can hand mash as well. 3. Mix tator tots in a bowl with other ingredients except Panko. 4. Roll into a teaspoon sized ball. 5. Roll ball in panko and place on a baking sheet. 6. Cover and freezer for about 15 minutes. 7. In the mean time, heat your oil to about 375 degrees. 8. Remove potato balls from the freezer and fry until golden brown. 9. Drain excess grease on paper towel. 10. Search with ranch dressing and Sriracha Mayo. 11. Enjoy

- When tater tots are thawed, slice each one in half and put into a large mixing bowl. Then add the cooked hamburger meat, sour cream, 1 cup of the mixed cheese, seasoning blend, and the salt and pepper if desired. Mix to combine all ingredients.
- Pour this mix into your prepared cooking dish and add the remaining 1 cup mixed cheese on top. Okay, I admit that maybe I added a little extra cheese to the top!

- Follow directions on the tater tot package and pre-heat oven (usually 400°F) and place tater tots on large cookie sheet in a single layer. While waiting for the oven to heat up, cook bacon until crispy and set aside.
- Once the tater tots are close to being done, remove from oven. Push tater tots close together and sprinkle cheese over the top. Then add bacon bits. Turn on your broiler. Place cookie sheet on a high rack and let the cheese melt. About 1-2 minutes. Remove and serve hot.
