These classic diner-style hash browns are crispy on the outside and fluffy on the inside.

2 russet potatoes, peeled
3 tablespoons clarified butter
salt and ground black pepper to taste
1 pinch cayenne pepper, or to taste
1 pinch paprika, or to taste

Steps:

  • Shred potatoes into a large bowl filled with cold water. Stir until water is cloudy, drain, and cover potatoes again with fresh cold water. Stir again to dissolve excess starch. Drain potatoes well, pat dry with paper towels, and squeeze out any excess moisture.
  • Heat clarified butter in a large non-stick pan over medium heat. Sprinkle shredded potatoes into the hot butter and season with salt, black pepper, cayenne pepper, and paprika.
  • Cook potatoes until a brown crust forms on the bottom, about 5 minutes. Continue to cook and stir until potatoes are browned all over, about 5 more minutes.

3 green onions, chopped
4 ounces cheddar cheese, shredded

Steps:

  • In cast iron skillet, cook bacon until crispy. Set aside to cool, do not drain bacon fat.
  • Spread potatoes evenly in skillet. Cook potatoes and green onions in bacon fat. Do not stir, let brown on one side before flipping over and browning on other.
  • Crumble bacon over top of potatoes. Sprinkle cheese on top. Place under broiler until cheese melts.

And as a bonus, you can cook your bacon in the oven at the same time, just not as long.

1 (30 ounce) package frozen hash brown potatoes, thawed
½ cup diced onion
3 tablespoons canola oil
½ teaspoon garlic powder
½ teaspoon ground paprika
salt and ground pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a large baking sheet with foil and spray generously with cooking spray.
  • Add potatoes and onion to a large bowl and stir well. Drizzle oil over the potatoes and stir until the potatoes are coated. Gradually sprinkle garlic powder, paprika, salt, and pepper over the potatoes, tossing to combine. Distribute potatoes evenly on the prepared baking sheet, but don't pack down.
  • Bake in the preheated oven until hash browns are golden brown and crispy, 35 to 40 minutes.

I created this just this morning. Was trying to find something special to make for hubby and I for our anniversary. I served a little sour cream to go with it.

3 potatoes, medium, shredded
1 onion, small, shredded
1 cup ham, shredded
1 cup mushroom, fresh, shredded
1/4 cup butter
1/2 cup cheddar cheese, shredded

Steps:

  • Place butter in fry pan -- I used electric skillet. Turn on to med heat.
  • Mix shredded potatoes, onion, ham, and mushrooms. Add to fry pan in an even amount around the pan.
  • Cover and leave alone for 10 minutes or until bottom is crisp and top is tender.
  • Flip, cover and let cook about 10 minutes more or until bottom is crisp.
  • Remove lid and add shredded cheese. Let sit for a few minutes until cheese is melted.
  • Serve with sour cream, hot sauce or ketchup as desired.

  • Fill preheated waffle iron with approximately half of the potato mixture. (I used a round waffle iron, so there were enough for two waffle sized servings (enough servings for 4 people). Just fill your waffle iron enough to form a nice layer of potatoes. No need to overstuff.
