FULLY LOADED DIRTY CHIPS
We love these fully loaded dirty chips on a Friday night after a busy week at work. Just like you'd get at the pub with a pint, but far better for you than you might think.

Steps:
- Cook the oven chips according to the packet instructions.
- While the chips are cooking, cut the bacon into small pieces. Fry in a splash of oil until crispy.
- Allow the bacon to cool on a piece of kitchen paper on a plate. The kitchen paper absorbs the fat.
- When the chips are cooked, remove from the oven and transfer to a small, oven proof dish. Cover with the grated cheese and return to the oven for a couple of minutes, just long enough to melt the cheese.
- When the cheese has melted, remove the dish from the oven. Top the chips with the bacon pieces, the sour cream and the chopped spring onion. Enjoy immediately!

LOADED PUB FRIES
Steps:
- Preheat oven to 425 degrees.
- Peel the potatoes, if preferred, and cut into equal size wedges. Wash potato wedges and place them in a bowl. Pour butter and olive over potatoes, add garlic powder, paprika, salt and pepper; toss potatoes with spices and butter. Pour the potatoes to a large baking sheet and bake for about 30 to 45 minutes or until nice and golden and crisp.
- You can now leave the potatoes on a baking sheet or place them in an oven safe skillet. Top the oven fries with the cheese and place them under the broiler for 2 minutes or until cheese melts.
- Top oven fries with sour cream, green onions and turkey bacon.

EASY LOADED COOKIE BARS
These cookie bars are delicious! They are simplified by using a cake mix for the base and adding all your favorite chips, nuts etc. You could even add holiday M&M's or your favorite candy bars chopped up! Easy to take to a potluck or office!

- 1. Preheat oven to 350 degrees. Spray a 9X13 glass pan with PAM or grease lightly with shortening.
- 2. In a large bowl combine cake mix, eggs and melted butter. Stir just to combine.
- 3. Add chips, nuts and coconut, mix just to combine- don't over mix.
- 4. Place batter in pan and push into place, I find it easier using my hands. Even the dough out in the pan.
- 5. Bake 20-23 minutes until golden brown, do not undercook! Cool completely, cut into squares to serve.

Making homestyle potato chips is fun and easy. Guaranteed they won't last long! A food processor with a slicing attachment is very helpful. Experiment with the thickness; you may like them thicker or thinner. I like to use olive oil because it has less trans fats, but you can use safflower, corn, or peanut oil as well as vegetable oil.

- Place potato slices into a large bowl of cold water as you slice. Drain, and rinse, then refill the bowl with water, and add the salt. Let the potatoes soak in the salty water for at least 30 minutes. Drain, then rinse and drain again.
- Heat oil in a deep-fryer to 365 degrees F (185 degrees C). Fry potato slices in small batches. Once they start turning golden, remove and drain on paper towels. Continue until all of the slices are fried. Season with additional salt if desired.
