- Slice onions crosswise and separate into rings.
- Combine milk, eggs and salt to taste in mixing bowl. Soak onion rings in mixture 30 minutes.
- Place pancake mix in shallow bowl. Heat oil for frying in skillet to 375 degrees F. Remove onion rings from milk mixture, dip in pancake mix and place in hot oil. Fry rings until golden brown. Drain fried onion rings on paper towels. Pack fried onion rings solidly, but loosely, without pressing, into 8 x 4-inch loaf pan. Bake at 400 degrees F for 10 to 15 minutes. Turn onto serving plate. Garnish with parsley.

- Combine milk, eggs, and salt in a mixing bowl. Soak the onions in this mixture for about 30 minutes. Place pancake mix in a shallow bowl. Heat oil for frying in a heavy skillet to 375 degrees F. Remove the onion rings from milk mixture, dip in pancake mix and place in hot oil. Fry rings until golden brown. Transfer to a plate lined with paper towels to drain. Pack fried onion rings solidly, but loosely, without pressing too hard, into an 8-by 4-inch loaf pan. Bake at 400 degrees F for 10 to 15 minutes. Turn out onto serving plate. Serve with your favorite dipping sauce. FAQ: Do you fill the loaf pan with the rest of the pancake mix/milk mixture? Answer: No, you do not add the rest of the mixture. You just press the breaded/fried onion rings into the loaf pan gently. Then bake it. But do not press the onions in the loaf pan too tightly, keep them loosely packed.

- Make the dough by tipping the flour, yeast and salt into a large bowl and making a well in the middle. Pour in most of the water and use your fingers or a wooden spoon to mix the flour and water together until combined to a slightly wet, pillowy, workable dough - add a splash more water if necessary. Tip the dough onto a lightly floured surface and knead for at least 10 mins until smooth and elastic. This can also be done in a tabletop mixer with a dough hook. Place the dough in a clean oiled bowl, cover with cling film and leave to rise until doubled in size.
- Heat oven to 220C/fan 200C/gas 7. Knock back the dough by tipping it back onto a floured surface and pushing the air out. Mould the dough into a rugby ball shape that will fit a 900g loaf tin and place in the tin. Cover with a clean tea towel and leave to prove for 30 mins. Dust the top of the loaf with a little more flour and slash the top with a sharp knife if you want. Bake the bread for 15 mins, then reduce the heat to 190C/fan 170C/gas 5 and continue to bake for 30 mins until the loaf sounds hollow when removed from the tin and tapped on the base. Leave the bread on a wire rack to cool completely. The loaf will stay fresh in an airtight container for 3 days or can be frozen for 1 month.

Steps:
- Put water in mixer bowl and dissolve the yeast.
- Put 4 cups of the flour into the bowl and whip it for 10 minutes.
- Add the salted water.
- If your mixer is heavy duty, put the dough hook on and add the remaining flour (otherwise knead it in by hand) let the dough hook work until it is smooth and elastic.
- Put the dough on the counter and cover with an inverted steel bowl. Let it rise once.
- Punch it down and let it rise again.
- Punch it down and form into 2 or 3 loaves.
- Place loaves on baking sheet (or stone) dusted with cornmeal and rise until doubled.
- Bake in preheated 450F oven for about 25 minutes or until the crust is golden. The loaves will sound hollow when thumped.
- Use common sense in raising the dough. I frequently use my warming drawer.
- Prep time does not include raising time as it will vary based on your conditions.

- In a large bowl, dissolve yeast in warm water. Add the sugar, salt and 3 cups flour. Beat on medium speed for 3 minutes. Stir in remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top.
