LONE STAR STEAK AND PASTA
A simple steak pasta dish that is so tasty it is fast becoming a popular request.

Steps:
- Cook pasta according to package directions.
- While pasta is cooking, trim fat from steak and cut lengthwise in half and then crosswise into 1/8" thick strips.
- Heat oil in large nonstick skillet over medium-high heat.
- Add steak, half at a time and cook 1-2 minutes or until outside surface is no longer pink. Remove steak and set aside.
- In same skillet, add lime juice, tomatoes and chilies, black beans, green pepper, corn, onion, cilantro, garlic, cumin, and salt. Cook and stir until hot.
- Add cooked meat and cook until heated through.
- Serve with steak and vegetable mixture over pasta.

- Preheat the oven to 350°F. Bring a large pot of water to a boil. Add the pasta and cook at a rolling boil until just tender. Drain, rinse under cold water, drain again and set aside in a large bowl. Bring the half and half just to a boil in a heavy saucepan and set aside. Meanwhile, melt the butter in another heavy saucepan. Add the flour, and whisk over low heat for 5 minutes. Do not brown. Remove from the heat. Add the hot liquid to the flour mixture, and whisk well. Add the paprika, season with the salt and pepper, and return the pan to a low heat. Add half of all of the cheeses and stir until combined. Cook over medium heat, whisking constantly, until the mixture thickens; about 5 minutes. Add sauce to the pasta. Toss well to coat completely. Coat a large baking dish/casserole with olive oil, and fill it with half of the sauced pasta. Distribute half of the remaining cheese evenly over the pasta. Repeat layering. Place the dish on a baking sheet, and bake in a preheated oven until hot, lightly browned and bubbly, about 20 to 25 minutes.
LONE STAR CHICKEN FRIED STEAK
My boys love chicken fried steak any which way it comes served. We have had many an argument over what is the correct name; chicken fried or country fried. To me they are the same! I have included the gravy recipe as well, no chicken fried steak would be complete without it ! The original recipe came from a Texas cookbook, but I have changed it up a bit. Serve with a big pot of mashed potatoes and plenty of bread and butter for dipping!

Steps:
- Combine flour, salt and pepper in pie plate.
- In another pie plate, combine eggs and milk.
- Dredge meat in flour mixture, shaking off excess flour.
- Dip steak into egg mixture and dredge again in flour.
- Heat 1/2 inch oil in a heavy skillet.
- Place steaks in skillet and fry until golden brown on both sides.
- To make gravy, remove steaks to warm oven. (I use my toaster oven for this step).
- Remove all leftover oil except for 6 T. and the brown bits.
- Add flour to skillet.
- Cook and stir until flour begins to brown.
- Add hot milk and whisk until thickened.
- Season with salt and pepper and pour over warm steaks.

- In a nonstick skillet, saute onion and green pepper in butter until tender; remove and set aside. In the same skillet, brown beef over medium heat until no longer pink; drain. Add the tomato sauce, water, seasoning blend, thyme, pepper and vegetables. Cover and simmer for 20-30 minutes or until meat is tender., Remove from the heat. Sprinkle with cheese; cover and let stand for 5 minutes or until cheese is melted. Serve with spaghetti.

- Begin Boiling water on high heat with with salt and pepper in it.
- Cut the steak into smaller pieces about and inch to two inches.
- Once the water is boiled put pasta in and stir occasionally. Cook for 8-10 minutes.
- Heat up a pan to medium-high, put butter and steak together.
- Add the lemon juice, and pepper to the steak and mix them together. Cook until steak it is cook to your desire, about 6-10 minutes. The butter that is left over will be the sauce used.
- Put the pasta into the bowl then add the steak and butter sauce together and mix then served.
