ZUCCHINI-RONI PIZZA

Number Of Ingredients 9

1 (14-ounce) jar roasted red peppers or 2 medium homemade roasted red peppers
1/2 pound smoked fresh mozzarella, sliced thin
1 thin crust packaged pizza shell, 12 inches
1/2 medium zucchini, sliced very thin into discs (think of pepperoni slices as a guideline)
2 cloves garlic, minced
A drizzle extra-virgin olive oil (about 1 tablespoon)
1 teaspoon crushed red pepper flakes
1 teaspoon dried Italian seasoning
Coarse salt

Steps:

  • Preheat oven to 400 degrees F.
  • If you are using jarred red peppers, drain them very well and pat peppers dry with paper towels. Place peppers in a food processor and pulse-grind into a paste. Spread paste in a thin layer on a thin crust shell. Top paste with thin slices of smoked fresh mozzarella cheese.
  • Place very thinly sliced zucchini discs in a small bowl and combine with remaining ingredients. Toss discs well to evenly coat with seasonings. The zucchini discs will have a flavor similar to pepperoni. You have just made zucchinironi!
  • Arrange your zucchinironi slices around your pie: as little or as much as you like, but do not overlap slices or you pie will be wet.
  • Bake directly on oven rack or on a preheated, perforated pizza pan. Bake 10 minutes on the middle rack of preheated oven or, until cheese is bubbly and golden and edges of pizza are crisp.
  • Tidbits: How to roast red peppers: To roast in your oven, preheat broiler to highest setting. Halve red peppers and rip out seeds. Place pepper halves, skin side up, on a cookie sheet. Broil peppers until the skins are completely black. Leave the oven door ajar while peppers roast to let steam escape. Place blackened peppers in a large brown paper sack and close tightly. Let peppers stand 10 minutes or until cool enough to handle. Peel skins away from red pepper flesh, and discard skins. To roast peppers on the outdoor grill, leave peppers whole and roast covered over high heat on a gas stove or close to coals. Follow above method to peel.
  • If your market does not carry smoked fresh mozzarella cheese, you can substitute 1 1/2 cups of shredded smoked Gouda (the yield of grating about 8 ounces of cheese).

1 cup butter
1 cup packed brown sugar
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon coffee flavored liqueur
2 ½ cups rolled oats
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
1 ½ cups candy-coated milk chocolate pieces

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • In a large bowl, cream the butter and the sugars using an electric mixer. Mix in the eggs, vanilla and coffee flavored liqueur.
  • Measure the oatmeal and blend in a blender to a fine powder. In a separate bowl, mix together the flour, oatmeal, baking powder, baking soda and salt. Stir the dry ingredients into the butter mixture until blended, then stir in the candy pieces. Roll into balls and place two inches apart on cookie sheets.
  • Bake for 10 to 12 minutes in the preheated oven, until the edges start to turn golden.

Lauralie41 (Lori) gifted me with a RecipeZaar premium membership renewal and I wanted to thank her for her kindness! Please feel free to change the ingredients to personalize it to your tastes. If you don't want to use the crockpot, just make everything in a large pot, cover and let simmer on low for at least an hour. I have included some of Lori's favourite ingredients in this hearty soup and I hope that she and you like it. Enjoy!

2 lbs extra lean ground beef
2 cups onions, diced (1 large onion, can use white, red or a combination)
1 cup celery, diced
2 garlic cloves, minced
1/3 cup low-sodium taco seasoning (I use CoffeeB's Taco Seasoning Mix with less salt)
2 cups beef broth (may need more)
1 cup corn
1 (19 ounce) can chickpeas (or your preferred bean)
1 (19 ounce) can kidney beans (or your preferred bean)
1 (10 ounce) can mushrooms, sliced, with juice
1 (28 ounce) can tomatoes, crushed or diced
cheddar cheese, grated (optional)
avocado, diced (optional)
tortilla chips, broken (optional)

Steps:

  • In a nonstick pan, lightly brown ground beef. If you are using anything other than extra lean beef, you may want to strain off the fat now. Add onion, celery and garlic and saute for about 5 minutes.
  • Add taco seasoning and beef broth and simmer for 15 minutes. This will infuse a lot of flavour into the ground beef. Meanwhile, add remaining ingredients to the crockpot. You can add the liquid from the beans or not - I did.
  • Add ground beef mixture to the crockpot. If you find that there isn't enough liquid, add more beef broth. I cooked it on low for 6 hours, but I can't imagine why it can't be cooked longer. The longer you cook soups in a crockpot, the better they taste!
  • If you can taste the soup partway through, you may want to season it to your tastes at this point. Add some freshly ground pepper, chili powder or any of your favourite spices or seasonings.
  • Top with grated cheese and diced avocado and tortilla chip pieces if you wish.

1 (16-ounce) package elbow macaroni or small seashell macaroni, uncooked
1 pound ground beef or turkey
1 (15-ounce) jars spaghetti sauce
Optional: sliced pepperoni
1 (8-ounce) package shredded mozzarella cheese

Steps:

  • Cook macaroni according to package directions; drain and place in a lightly greased 13"x9" baking pan. Meanwhile, brown meat in a skillet over medium heat; drain. Spoon meat and desired amount of sauce over macaroni. Stir gently and spread evenly in pan. If desired, arrange pepperoni slices over top. Cover with cheese. Bake, uncovered, at 350 degrees for 30 minutes, or until cheese is melted and golden. Tip:Serve up some tasty soft pretzels instead of dinner rolls. Twist strips of refrigerated bread stick dough into pretzel shapes (or let the kids do it!) and place on an ungreased baking sheet. Brush with beaten egg white, sprinkle with coarse salt and bake as the package directs.
