MOM'S NOVA SCOTIA SEAFOOD CHOWDER

Mom's Nova Scotia Seafood Chowder image

Being from the Easy Coast, I've tried a lot of different chowders; however, my Mom's takes the cake. She makes a huge pot of this chowder every Christmas Eve and all of it is gone by Christmas night. Although it is not very healthy, it is an awesome treat once in awhile for any of us that love seafood! I normally throw in a dash of garlic and onion powder. Enjoy!

SEAFOOD CHOWDER

Seafood Chowder image

Hearty, creamy & decadent (not to mention easy!) -- Even those who don't love seafood, will eat two bowls of this. The lack of potatoes is what distinguishes it from most chowders.

Provided by KimAnRivers

Categories     Chowders

Time 2h10m

Yield 4-6 serving(s)

Number Of Ingredients 11

1/2 cup chopped celery
1/2 cup chopped onion
1 teaspoon dill weed
2 (10 3/4 ounce) cans cream of celery soup
1 (10 3/4 ounce) can cream of shrimp soup
1 (12 ounce) can corn kernels
1 (12 ounce) can evaporated milk
8 tablespoons butter
1 lb white fish fillet (any mild variety, cut into bite size pieces)
1 (6 ounce) can crab
1 (3 ounce) can clams

Steps:

  • Sautee celery and onions in butter until onions are translucent.
  • Pour butter mixture and all other ingredients into slow cooker.
  • Cook on High for one to two hours or on Low for three to four hours.
  • Note: I prefer to let the fish cook from the beginning The loss of the chunks of fish is more than paid for with the infusion of flavor throughout the chowder. However, if you prefer otherwise, add the fish during the last hour of cooking.

SEAFOOD CHOWDER

Seafood Chowder image

One night I started throwing stuff in the soup kettle, and this is what came out. Pretty darned good, actually! I use frozen and canned veggies and dried herbs for ease of preparation, but fresh ingredients could only make it even better.

Provided by Buckeye Karen

Categories     Chowders

Time 25m

Yield 4 serving(s)

Number Of Ingredients 19

4 tilapia fillets
1 cup cannellini beans
1 cup corn
3 tablespoons olive oil
1 cup diced onion
2 large tomatoes, peeled and diced
10 1/2 ounces 98% fat free condensed cream of celery soup
2 cups water
1 tablespoon minced garlic
1 teaspoon minced dried lemongrass
1 tablespoon pesto sauce
1 large vegetable bouillon cube
2 tablespoons dried cilantro
2 tablespoons lemon juice
20 medium shrimp
1 tablespoon soy sauce
3 tablespoons cooking sherry
1 dash Tabasco sauce
fresh ground pepper

Steps:

  • In bottom of stock pot, heat olive oil on medium heat. Brown onions and garlic.
  • Add remaining ingredients and bring to a boil.
  • Do not bother to cut up the fish; it will disintegrate as the soup cooks, leaving you with lovely chunks of fish to enjoy by the spoonful. You may wish to remove the tails from the shrimp, though I leave them on for visual appeal.
  • Reduce heat to medium low and simmer for about 15-20 minutes until the soup is the consistency you like (I prefer a fairly thick consistency). You may wish to add a tablespoon of flour or cornstarch as a thickening agent. Stir frequently.
  • Garnish with fresh parsley, a few spoonfuls of grated parmesan, and/or some crispy garlic croutons.
  • Options: I'd like to try this with potatoes, but didn't have any on hand. Milk would also probably be a great addition (as a substitute for part or all of the water) if you would like a creamier chowder.
