AWESOME AND EASY CREAMY CORN CASSEROLE
This truly is the most delicious stuff! A bit like a cross between corn souffle and a slightly sweet corn pudding! Try it, I know you will love the ease of preparation and especially the taste. Everyone always wants the recipe! Note: The ingredients can be doubled and baked in a 9x13 inch baking dish in almost the same amount of cooking time.

Steps:
- Preheat oven to 350 degrees F (175 degrees C), and lightly grease a 9x9 inch baking dish.
- In a medium bowl, combine butter, eggs, corn bread mix, whole and creamed corn and sour cream. Spoon mixture into prepared dish.
- Bake for 45 minutes in the preheated oven, or until the top is golden brown.

BAKED CORN CASSEROLE
Steps:
- Gather the ingredients.
- Preheat the oven to 350 F. Prepare a 9-inch-square baking dish by spraying it lightly with pan spray or greasing it with a bit of extra butter.
- In a medium-sized saucepan over low heat, melt the butter.
- Add flour and whisk to create a roux.
- Slowly pour in the milk, stirring continually to incorporate the liquid.
- Add corn, sugar, salt, and pepper. Mix well, and cook for 5 minutes.
- Crack the eggs into a small bowl and whisk until they're well-beaten.

ANN'S BRUNCH CASSEROLE (LOW CARB)
This is a recipe Mom got from a church friend decades ago and made many times. Although there are many brunch-type casseroles already posted, I decided to add this one because it doesn't call for bread or potatoes, just some flour(I use whole wheat) and it's yummy. Like many of the others, it can be mixed the day before and popped in the oven about 1 hour ahead of serving time. Enjoy!

Steps:
- Preheat oven to 350.
- Butter 9x13 baking dish.
- Combine cheeses, arrange half in the dish.
- Saute onion, green pepper abd fresh mushrooms in 1/4 c butter. Let most all the moisture cook out of mushrooms.
- Arrange sauted mixture over the cheese, then sprinkle with ham.
- Top with remaining cheese.
- Beat eggs with milk, flour, salt and pepper.
- Pour over gently other ingredients. Top with crumbled bacon.
- Bake 45-60 mkinutes until center is firm. Cool 5 minutes before serving.
