PRALINE SWEET POTATOES

Steps:
- Butter one 2 quart casserole dish. Preheat oven to 350 degrees F (175 degrees C).
- In a mixing bowl, combine the sweet potatoes, sugar, vanilla extract, eggs and cream. Blend well, and spread evenly in casserole dish.
- Prepare the topping by combining the butter, brown sugar, flour and pecans. Mix until crumbly, and sprinkle over sweet potato mixture.
- Bake for 30 minutes in the preheated oven.

I found this recipe on the back of a can of sweet potatoes. Everyone seemed to really like them... even those who don't usually like Yams.

- Heat oven to 350 degrees.
- Place drained yams in an ungreased 1/2 quart casserole or baking dish.
- In a small bowl, combine remaining ingredients; blend well. Sprinkle over yams.
- Bake at 350 for 35 to 40 minutes or until bubbly.

- Combine yams, sugar, salt, eggs, vanilla, rum (if using), and milk. Whip until smooth. Fold in raisins if using. Spoon mixture into a greased 2 quart casserole.

- Bake 25-30 minutes or until thoroughly heated through.

PRALINE YAMS
I cut this recipe out of the Denver Rocky Mountain News Food Section 30-some years ago. I've made it every Thanksgiving and Christmas since. It's quick and simple to prepare (right on the stove), and a nice addition to a big dinner.

Steps:
- Heat yams, in their liquid, till hot.
- Keep hot on low heat while you mix up Praline sauce.
- Mix together the brown sugar, heavy cream, butter/oleo, pecans, salt, cinnamon, and nutmeg in a saucepan.
- Stir over medium heat till mixture comes to a gentle boil.
- Keep hot on low burner while you drain liquid off yams.
- Place yams in serving bowl.
- Pour hot Praline sauce over yams.
- Serve and enjoy!

LOUISIANA PRALINE CAKE
This cake has all the ingredients of a Praline! But to me, in a much more enjoyable way of eating it...a cake!

Steps:
- Combine the oats and water; let stand for 15 minutes. Beat 1/2 cup butter with an electric mixer until creamy; gradually add 1 cup sugar and 1 cup brown sugar; beating well. Add the eggs, one at a time, beating after each addition.
- Combine the flour, soda, and salt; add to butter mixture alternately with the oat mixture, beginning and ending with the flour mixture. Mix at low speed after each addition until blended. Stir in 3/4 cup pecans.
- Pour into a greased and floured 13x9x2 inch pan. Bake at 325 degrees for 45 minutes or until a wooden pick inserted in the center comes out clean.
- Combine 3/4 cup brown sugar and the remaining 3 ingredients; spoon evenly over the top of the cake. Broil 5 1/2 inches from heat (with electric door partially opened) 2 minutes or until bubbly. Cool in the pan on a wire rack.
