1 cup warm water, 110 to 115 degrees F
1/2 ounce active dry yeast (2 packets or 4 1/2 teaspoons)
2 tablespoons granulated sugar
3 1/4 cups all-purpose flour
1 cup warm milk, 110 to 115 degrees F
4 tablespoons olive oil
1 teaspoon kosher salt
Canola oil, for frying
1 cup coarsely ground or chopped pistachios, for serving
1/2 cup honey
2 orange peels plus 1/2 cup fresh orange juice (from about 1 orange)
2 tablespoons granulated sugar
1/2 teaspoon ground cinnamon
Pinch of kosher salt

Steps:

  • For the donuts: In the bowl of a stand mixer fitted with the whisk attachment, combine the warm water, yeast and pinch of the sugar and whisk to combine. Let stand until the yeast is very foamy, about 10 minutes.
  • Next, add the flour, warm milk, olive oil, salt and remaining sugar and mix until a smooth batter forms, 2 to 3 minutes. Cover and let rise in a warm place until doubled in size, about 1 hour.
  • Set up your grill for even heat. If using a charcoal grill, build the coals evenly. If using a gas grill, heat both sides evenly.
  • For the honey syrup: In the meantime, in a small saucepot on the grill, combine the honey, orange peels, orange juice, sugar, cinnamon and a pinch of salt. Bring to a strong simmer and stir to dissolve the sugar. Simmer for 15 minutes, then remove from the heat and set aside.
  • Heat 4 to 6 inches of canola oil to 350 degrees F.
  • When the batter is ready, dip a small ice cream scoop into the hot oil to coat, then scoop some of the batter out. Drop into the hot oil and repeat until the donuts are frying comfortably in an even layer. You may need to do this in 2 to 3 batches depending on the size of your pot so you do not overcrowd the pot. Fry until golden brown on all sides and puffed, about 2 minutes per side, using a spoon to flip them. Remove to a draining rack and repeat with the remaining batter.
  • After the donuts have drained of excess oil, transfer them to a serving platter. Pour the honey syrup all over and sprinkle with the pistachios.

2 eggs

1 1/2 cups all-purpose flour
oil, for frying
1/2 cup honey, slightly warmed
1 tablespoon cinnamon (approx)

Steps:

  • Dissolve the yeast in the warm water with the sugar, about 10 minutes.
  • Beat the eggs and add them to the yeast mixture, gradually adding the flour and salt, beating well.
  • Cover and let rise for 2 hours.
  • Heat some canola or vegetable oil to about 375F in a skillet or deep fryer, and drop the risen dough by the tablespoon-full into the oil. Turn it often to brown evenly.
  • Dip each donut in the warmed honey and sprinkle with cinnamon.

500 g flour (1 lb 1oz)
2 teaspoons yeast
1 teaspoon salt
2 teaspoons ground cinnamon
warm water, for disolving yeast etc
oil (for frying)
2 cups honey
1 cup sugar
1 cinnamon stick
2 cups water
cinnamon (to garnish)

Steps:

  • Dissolve the yeast in a little lukewarm water, mix flour and salt in a bowl and slowly add yeast mixture being sure to mix well.
  • Slowly add more warm water until you have a medium paste. Cover the bowel with a clean cloth and stand in warm water for about 1 hour. The batter should have doubled in size and formed "bubbles".
  • Heat oll and add teaspoonfuls of the batter to the oil, cook until they turn golden brown.
  • Remove from the oil and drain on kitchen paper while making the syrup.
  • Syrup: boil the honey, sugar, water and cinamom for 10 minutes. Pour the syrup over the honey puffs/ loukoumades and garnish with a sprinkle of cinnamon powder. Serve hot.

  • In the bowl of a stand mixer, with the dough attachment, add 1 cup lukewarm water and 2 1/2 tbsp of active dry yeast. Whisk together and let stand for 5 minutes to allow the yeast to activate.
  • While waiting, measure out flour, sugar and salt into a separate bowl and mix to incorporate sugar and salt into flour.
  • Once the yeast has had time to activate, add the lukewarm milk, turn the mixer on to a slow speed 2 to start and slowly begin to add the flour, sugar, salt mixture into the bowl of the stand mixer.
  • While waiting for the dough to rest and rise, prepare the syrup and chocolate sauce for the Loukoumades. Combine the sugar, water, honey and cinnamon stick into a saucepan and bring to a boil while slowly stirring.
  • For the chocolate sauce, simply melt the milk chocolate or semi sweet chocolate chips in a double boiler over medium heat. Be sure to stir to prevent chocolate from burning.
  • Prepare a pot to fry the loukoumades by adding 2-3 inches vegetable oil and bringing oil to a temperature of 350° F. Have a glass of water near the bowl with the dough so that you can dip the spoon into the water before each dip into the batter.
  • Begin to add a tablespoon full of dough into the hot vegetable oil, dip the spoon in water and then repeat until you have enough loukoumades to comfortably fill the pan and so that you are still able to move them around with a meshed strainer or slotted spoon.
  • For half the loukoumades, dunk several at a time into the syrup mixture and stir with a large spoon to cover them with the syrup. Remove from the syrup and put on a serving dish.
