BLACK LICORICE CARAMELS

I make these every year for Christmas candy and every March for my uncle on his birthday! I get requests for the recipe EVERY time I make these and always have to hide some when I take to family parties so the people who arrive late can have some too! Very easy!

Number Of Ingredients 7

1 (14 ounce) can sweetened condensed milk
2 cups sugar
1 cup butter
1/4 teaspoon salt
1 1/2 cups Karo syrup, light corn syrup
2 teaspoons anise extract
1 teaspoon black food coloring, paste

Steps:

  • In a large heavy pan melt butter on low-med heat; add sweet cond milk, Karo syrup, sugar and salt.
  • Place a candy thermometer on side of pan, be careful to not touch bottom of pan.
  • Stirring CONSTANTLY, cook on medium heat to 234 degrees.
  • Remove from heat.
  • Add Anise extract and black food coloring paste.
  • Pour into a buttered 9x13" pan.
  • Cool and cut into desired pieces.
  • Wrap in wax paper.
  • It will be gone before ya know it!
  • * This caramel is soft and chewy. If you would like it more firm, cook until about 244 degrees. I find that using the brand Karo for the corn syrup works best, because some of the "off" brands contain water in the ingredients*.

2 envelopes unflavored gelatin
4 cups diet cherry soda, divided
3 packages (.3 ounce each) sugar-free cherry gelatin
2 teaspoons anise flavoring

Steps:

  • In a large bowl, soften gelatin in 1/2 cup soda. In a small saucepan, bring remaining soda to a boil. Remove from the heat; add to gelatin mixture and mix well. Stir in flavored gelatin; until dissolved. Add anise., If necessary, skim foam. Pour into a 13-in. x 9-in. pan. Chill until firm. Use small star-shaped or other holiday cutters or cut into 1-in. squares. Store in the refrigerator.

A great keto licorice recipe was all we needed for long term happiness. If you are reading this you are more than likely a big licorice fan. Otherwise you wouldn't have looked right?

80 g water
20 g gelatin leaves 170 bloom (or 40g gelatin powder 220 bloom, See Note 1 and 2)
100 g sweetener of choice (I use Sukrin:1, See Note 3)
30 g Sukrin Gold Syrup (or 40g Lakanto Gold sweetener, See Note 4)
5 g salt (See Note 5)
3 teaspoons anise extract (See Note 6)
1 tablespoon black food colouring (See Note 7)
50 g whey protein isolate (See Note 8)

Steps:

  • Line a 30 x 30 cm baking tray with baking paper. See Note 9.
  • Pour water into a medium-sized saucepan. Sprinkle gelatin over surface of water or add gelatin leaves one at a time to the water, ensuring they are completely immersed in the water. Leave gelatin to bloom for 10 minutes.
  • Combine sweetener, syrup, salt and anise extract in a small bowl. Reserve
  • Place saucepan onto low-medium heat and begin to melt the gelatin. Whisk until all gelatin is dissolved and completely lump free. Add in sweetener mixture and whisk to combine.
  • Over low-medium heat bring licorice to a low boil. Whisk through black colour, if using. Once mixture has come to a low boil allow to bubble for 1-2 minutes.
  • Whisk whey protein isolate into licorice and continue to heat for 1-2 minutes whisking continuously. Do not leave it or allow it to burn.
  • Pour licorice into prepared tray. Work fast as licorice will begin to set. Spread mixture and tap tray to remove any bubbles and smooth the mixture. Place into the fridge or freezer for 5-10 minutes. Cut into strips.

1/4 cup unflavored gelatin
1/2 cup xylitol (OR 1/4 cup Gentle Sweet)
1/4 cup heavy cream
1/2 cup water
2 Tbsp butter
1 Tbsp molasses
1/2 tsp fine sea salt
1 tsp activated charcoal (optional: for color)
1 Tbsp anise extract

Steps:

  • Add gelatin, xylitol, heavy cream, water, butter, molasses, and sea salt to a saucepan. Cook over medium heat, stirring constantly until gelatin and sweetener are completely dissolved and mixture beings to boil. Remove from heat. Whisk in activated charcoal and anise extract until smooth. Pour into candy molds or 9x13 and chill in the fridge until set, about 15-20 minutes. Cut into the desired size if not using candy molds.

1/4 cup table cream
1/4 cup salted butter
3 tablespoons light corn syrup
3 tablespoons molasses
1/4 cup granulated sugar
1/4 cup muscovado sugar (or dark brown sugar)
1/2 teaspoon kosher salt
6 tablespoons white whole wheat flour
1 dram anise candy oil (I use LorAnn's super strength candy oil)

Steps:

  • Line a 9 x 5" loaf pan with parchment paper.
  • In a heavy pot, combine cream, butter, corn syrup, molasses, sugars and salt to a boil.
  • Reduce heat to medium-low and cook, stirring constantly, until the mixture reaches 260°F.
  • Remove from heat and thoroughly stir in the flour, candy oil and food colouring if using.
  • Quickly and carefully pour the candy into the pan.
  • Allow to set for 10 minutes, then score with a bench scraper or sharp chef's knife and allow to cool completely before separating and wrapping the pieces.
