Raspberry Cordial is a sweet and tart drink made with fresh raspberries. You can drink it alone or add it to some soda water for a sparkling treat!

24 ounces raspberries (fresh or frozen)
1 1/4 cups sugar
3 lemons
4 cups water

Steps:

  • Combine raspberries and sugar in a saucepan.
  • Cook on medium-high heat until all the sugar has dissolved, about 20 minutes. Mash any remaining berry pieces.
  • Pour the mixture through a fine mesh strainer. Strain twice if you want to ensure no pulp gets through. Add the lemon juice from two of the lemons.
  • Boil the water, and then add it to the raspberry syrup in a large pitcher. Let the mixture cool, and then chill it all the way in the fridge.
  • When you are ready to serve, slice the remaining lemon. Pour cordial into glasses and top with a lemon slice.

500g raspberry
500g caster sugar
3 tbsp red wine vinegar

Steps:

  • Put the raspberries in a pan with the sugar and vinegar. Mash over a low heat for 10 mins until smooth and syrupy. Rub through a sieve into a clean pan.
  • Tip the seeds from the sieve into a bowl and stir in 300ml water, then sieve again to remove the last of the pulp from seeds. Pour the liquid into the pan with the sieved pulp, stir well and boil for 1 min. Pour into small sterilised bottles and seal. The cordial will keep unopened for a few months. Once opened, store in the fridge.

1 quart blackberries
1 quart vodka

Steps:

  • Pour the sugar into a 1 quart jar. Fill the remaining space with berries, but do not pack down. Fill the jar with vodka so that the berries are completely covered. Seal the jar. Let the jar stand for 2 months, shaking the jar every week. The sugar should dissolve, and the vodka will become colored.
  • Strain the liquid through a metal sieve, and then through a coffee filter to remove the fruit. Pour into pretty bottles. Drink as a cordial, or use it to flavor lemonade or iced tea.

1 1/4 cups sugar
6 cups boiling water
3 lemons

Steps:

  • Put the unthawed raspberries into a saucepan and add sugar.
  • Cook on medium, stirring occasionally until all the sugar ahs dissolved.
  • Using a potato masher, mash the raspberries and syrup thoroughly.
  • Pour the mixture through a strainer, extract all the juice.
  • Squeeze two of the lemons and strain the juice, add it to the raspberry juice.
  • Add the boiling water to the raspberry juice.

Sweetened raspberry-infused vinegar mixed with seltzer is refreshing to drink on a summer's day.

2 pounds red raspberries
2 cups cider vinegar or white wine vinegar
4 1/2 cups sugar (2 pounds), or to taste
Ice, for serving
Seltzer, for serving

Steps:

  • Mash berries with a wooden spoon in a large bowl. Stir in vinegar. Cover with plastic wrap, and let stand until liquid turns deep red, 24 to 36 hours.
  • Line a fine sieve with cheesecloth. Pour berry mixture through sieve into a medium saucepan, pressing to release juice; discard solids. Stir in sugar.
  • Bring berry mixture to a boil over high heat. Cook 10 minutes. Remove from heat. Skim foam from surface. Let cool completely. Cordial can be refrigerated in an airtight container up to 4 months.
  • To serve, fill each glass with ice; add about 3 tablespoons cordial, and top with about 1 cup seltzer.
