Ham and Broccoli Quiche (Keto, Gluten-Free) image

A basic low-carb quiche featuring ham, cheese, and broccoli. The crust is made with a blend of gluten-free almond and coconut flours.

1/2 cup almond flour
1/3 cup parmesan cheese (grated)
2 Tablespoons coconut flour
3 Tablespoons butter (melted)
1 egg
1 cup heavy cream
1 1/2 cups cubed ham
1/2 cup broccoli (cooked and chopped)
3 eggs
1/4 teaspoon salt
1/8 teaspoon pepper
1 cup cheddar cheese (grated)
1/2 cup mozzarella cheese (optional)

Steps:

  • In medium bowl, combine almond flour, parmesan cheese, coconut flour, butter, and egg.
  • Press into a 9-inch glass pie dish with fingers or back of a spoon.
  • Bake in 350°F (180°C) oven for 10 minutes.
  • In large bowl, beat eggs with salt and pepper. Beat in cream.
  • Stir in ham, broccoli and cheddar cheese.
  • Pour filling mixture over crust. Sprinkle with mozzarella cheese, if using.
  • Bake 15 minutes at 400 degrees F (200 C). Reduce heat to 325 degrees F (160 C); bake for 20-25 minutes more. Let stand 10 minutes before serving.

This Low Carb Ham and Broccoli Crustless Quiche is the perfect healthy breakfast or brunch made with fresh veggies, lean protein, eggs and cheese! Only 2 grams of carbs per serving!

6 large eggs
1/3 cup whole milk
1/3 cup half and half cream ((or substitute milk, if desired))
1 cup shredded cheddar cheese
1/2 cup chopped ham
1/2 cup chopped broccoli florets
1/2 teaspoon salt
1/4 teaspoon black pepper
chopped green onions for garnish (optional)

Steps:

  • Preheat your oven to 350 degrees Fahrenheit and grease a 9-inch pie dish (or equivalent baking dish) with butter or cooking spray.
  • Crack the eggs into a bowl and add the milk and cream.
  • Whisk the eggs, milk and cream together well until the mixture is smooth and well combined.
  • Add the shredded cheese (reserve about 1/4 cup for the top), the ham, the broccoli and salt and pepper, and stir in gently until combined.
  • Pour the mixture into the greased baking dish and top with the remaining shredded cheese.
  • Bake at 350 degrees Fahrenheit for about 30-35 minutes, or until the top is golden brown and there's only a very slight jiggle in the centre.
  • Remove the quiche from the oven and let it cool for at least 10-15 minutes before slicing and serving with some chopped green onions.

A friend who is low-carbing it gave me this recipe. I think she got it from a low-carb website; I'm not sure. Use your imagination to come up with filling ingredients - this is simply my favorite variation.

6 large eggs
3/4 cup heavy cream
8 ounces shredded cheddar cheese
4 slices deli ham, shredded (more to taste)
1 small broccoli, crown cooked and chopped (or 1 sm. box frozen broccoli)
3 green onions
salt & pepper
2 tablespoons olive oil

Steps:

  • Heat olive oil in a medium sized heavy skillet.
  • Saute green onions until soft and add the shredded ham and stir until slightly browned.
  • In a large bowl, beat the eggs and heavy cream together by hand; stir in the onions& ham, broccoli,cheese and seasonings.
  • Pour into a buttered deep-dish pie plate.
  • Bake at 375degrees for 45-50 minutes, or until a knife inserted in the center comes out clean.
  • NOTE: You will have to tent the quiche with aluminum foil to prevent over-browning.
  • Start checking it halfway through the cooking time.
  • Let stand 10 minutes and cut into wedges to serve.
