1 1/4 lb pork tenderloin
2 cups pork rinds, crushed into a fine powder
1 cup parmesan cheese
2 eggs
1/4 cup oil for frying

Steps:

  • Preheat oven to 350 degrees F.
  • Take the pork tenderloin and cut into 1 inch pieces.
  • Place a piece into a baggie and using a skillet or meat mallet, pound the pork into thin pieces.
  • Place the egg into a shallow dish and beat.
  • In another shallow dish add the crushed pork rinds and Parmesan cheese and mix well.
  • Dip the pork into the egg and then the pork rind mixture to bread it.
  • Place on a dish until you finish them all.
  • Heat the oil to medium high in a large frying pan.
  • Place a few pieces of meat in the pan and cook for about 3 minutes per side or nice and brown.
  • Transfer cooked meat to a baking dish and continue working in batches until all the meat is browned.
  • Bake for 10 minutes.

3 boneless pork chop loin ((about 5 oz each), trim off the fat then flatten to ¼-inch thickness.)
1 large egg
½ cup panko breadcrumb
¼ cup freshly grated parmesan cheese ((lightly packed))
¼ tsp Italian seasoning
⅛ tsp garlic powder
kosher salt ((to taste))
black pepper ((to taste))
¼ cup vegetable or canola oil
lemon wedges
arugula

Steps:

  • With your hand at least 12 inches away, lightly sprinkle salt and black pepper on all sides of the meat in a single layer.
  • In a large bowl, season coarsely crush panko with Italian seasoning, garlic powder, and parmesan cheese. Stir to combine. In another bowl, lightly beat the egg.
  • Dip the meat in egg wash then gently shake off excess. After that, thoroughly coat the meat with breadcrumbs and shake off excess.
  • In a large skillet, heat oil over medium-high heat. Gently lay the breaded pork in your pan. Do not overcrowd the pan. Turn the meat over when it's lightly golden browned, about 2 minutes on each side or longer until cooked through. Do not overcook.
  • Remove the cooked pork cutlet from the pan and set it on dry paper towels to absorb the excess oil. Let the pork rest for at least 3 minutes before serving. Serve with lemon wedges and/or arugula salad. Enjoy!

1/3 cup all-purpose flour
2 large eggs, lightly beaten
1 cup dry bread crumbs
1/4 cup grated Parmesan cheese

Steps:

  • Cut pork diagonally into 8 slices; pound each to 1/4-in. thickness. Place flour and eggs in separate shallow bowls. In another shallow bowl, combine the bread crumbs, cheese and salt. Dip pork in the flour, eggs, then bread crumb mixture., In a large skillet, heat oil over medium-high heat. Add pork, in batches, and cook until a thermometer reads 145°, 2-3 minutes on each side. 2 eggs, lightly beaten
1/4 cup milk
1 1/2 cups dry breadcrumbs
1/2 cup freshly gated parmesan cheese
1 1/2 teaspoons garlic powder
1/2-1 teaspoon salt (I use seasoned salt)
1/2 teaspoon black pepper (can use more)
1 pinch cayenne pepper (optional)
1 tablespoon dried parsley
1/2 teaspoon dried Italian seasoning (rubbed between fingers to release the flavor)
2 tablespoons oil
1 tablespoon butter
7 thick-cut pork chops
seasoning salt

Steps:

  • Set oven to 350 degrees F.
  • Butter a 13 x 9-inch baking dish or a medium jelly-roll baking sheet (or use a baking dish large enough to hold the chops in).
  • In a bowl whisk together the eggs with milk.
  • In a shallow dish mix together the dry breadcrumbs with Parmesan cheese, garlic powder, salt, black pepper, cayenne, parsley and Italian seasoning.
  • Let the chops sit at room temperature for about 45 minutes.
  • Heat oil and butter in a skillet over medium-high heat.
  • Dip the chops into the egg/milk mixture (allowing any excess to drip off of the chops).
  • Coat in the breadcrumb mixture completely.
  • Brown the chops in the skillet on both sides (about 4-5 minutes per side) sprinkling both sides with seasoned salt when browning (you may omit this step if desired and just bake in the oven).
  • Place in prepared baking dish.
  • Bake the chops for about 25 minutes or until cooked (the cooking time will vary depending on how thick your chops are).

1 cup Italian seasoned bread crumbs
1 teaspoon ground black pepper
1 teaspoon garlic powder
4 (5 ounce) boneless center-cut pork chops, 1/2-inch thick
1 tablespoon olive oil

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking dish with aluminum foil and spray with cooking spray.
  • Combine Parmesan cheese, bread crumbs, pepper, and garlic powder in a bowl.
  • Rub pork chops with olive oil and dip in the Parmesan mixture. Press mixture into pork chops to make sure they are well coated. Transfer to the prepared baking dish.
