- Mix all the ingredients together apart from the salt. Form the mixture into four patties and season with salt on both sides.
- Grill or fry until cooked to personal preference.
- Optional - load up the burger with crumbled feta cheese, diced cucumber, fresh mint leaves and marinated red onions.

- For the sauce: Mix together the yogurt, adobo sauce, mustard and Worcestershire sauce in a small bowl. Set aside.
- For the burgers: In a bowl, combine the ground chuck, salt, black pepper and Worcestershire sauce. Form four patties and set aside.
- Heat a skillet over medium-high heat. Cook the patties until done in the middle, 4 to 6 minutes per side.
- For the toppings: Cut the base of each lettuce leaf on the head and carefully peel it away so that it stays as intact as possible.
- Top the patties with avocado slices, tomato slices, red onion rings and chopped pickles, then drizzle with the sauce to taste. Use two or three lettuce leaves per patty and wrap them around the patty as tightly as you can. Slice in half and serve immediately!

- To make the burgers, fire up the grill or grill pan to medium heat. I used a grill pan for this recipe. While the grill pan is heating up, mix the ground lamb with garlic, mint, shallot, lime juice, salt and pepper. Form 4 equal-sized lamb patties.
- Now comes the fun step: grill the lamb burgers for approximately 4 minutes per side, making sure to only turn them once. You can also enjoy listening to the lovely sizzle in the pan while these burgers are cooking.
- When the burgers are ready, it's building time. Layer the lamb burgers on the lettuce leaves with red peppers and onions. Serve with zucchini chips, if desired.

- In a medium mixing bowl combine the lamb, salt, pepper, rosemary, chili powder, smoked paprika, turmeric, cumin, cinnamon, half of the lime juice, and feta cheese until well-combined.
- Taking portions of lamb in your palm, form either two half-pound or four quarter-pound patties. Use your thumb to form a small indentation in the center of each patty.
- Over medium heat (preferably in a cast-iron skillet), cook the burgers for about 15 minutes, flipping every 2-3 minutes for even cooking. Burgers are done when they reach an internal temperature of 145 degrees F. When burgers are done, squeeze the remaining lime juice over them.

- Burgers: Add the lamb and beef to a medium bowl, tear up into small pieces and mix gently with your hands to distribute more evenly. Chop the garlic and rosemary and add to the meat. Add the rest of the dry ingredients to the meat, sprinkling it evenly over the surface. Mix well. I use my hand mixer. Form into 6 balls and flatten into patties. Refrigerate overnight or cook now. The flavor is better the next day.
- Grill or pan fry the lamb burgers to your preference. I grilled mine 2 1/2 minutes on 1 side and 2 minutes on the other.
- Tomato & Cucumber Salad: Halve the tomatoes and place into a medium bowl. Peel the cucumber and dice or cube putting it on top of the tomatoes. Halve the olives and place on the cucumbers. Chop and add the onions, add the cheese and then the mint. Do not mix or add the olive oil, salt and pepper until ready to serve.
