This is my favorite Mexican casserole! I changed much of the original to suit our taste. I love it with a dollop of sour cream on top. My family loves it!

1 tablespoon canola oil (or vegetable)
1 medium sweet onion, chopped
1 garlic clove, minced
5 cups cooked and shredded chicken breasts
2 (1 1/4 ounce) packets enchilada seasoning (or taco)
1 cup water
12 soft flour burrito-size flour tortillas
2 (15 ounce) cans dark red kidney beans, drained
2 cups frozen corn, thawed
2 cups shredded cheddar cheese
1 cup shredded monterey jack cheese
1 (16 ounce) jar salsa (mild)
3 tablespoons cilantro, divided

Steps:

  • Preheat oven to 350°F.
  • Spray a 13x9-inch baking dish with nonstick cooking spray.
  • In a large skillet, heat oil and cook onion and garlic, stirring occasionally, until onion is tender.
  • Stir in enchilada (or taco) seasoning, 1 tbsp cilantro and 1 cup water; heat through.
  • Remove from heat and stir in shredded chicken.
  • Arrange 4 tortillas to cover the bottom of baking dish. Spoon 1/2 chicken mixture over tortillas. Evenly spoon 1/2 kidney beans, then 1/2 of corn, then 1 cup cheddar cheese over top for first layer.
  • Repeat layers.
  • Top with last 4 tortillas. Evenly pour salsa over top and sprinkle with Monterey jack cheese and remaining 2 tbsp cilantro. Bake at 350°F for about 45 minutes.

2 pounds skinless, boneless chicken breast halves - cooked and diced
1 (10.75 ounce) can condensed cream of celery soup
1 (10.75 ounce) can condensed cream of chicken soup
1 (10 ounce) can enchilada sauce
1 (14.5 ounce) can diced tomatoes with green chile peppers
1 (4 ounce) can diced green chiles
1 onion, chopped
1 pinch garlic powder
1 cup chicken broth
1 teaspoon chili powder
16 ounces processed cheese spread
10 (6 inch) corn tortillas

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a 5 quart pot combine the chicken, cream of celery soup, cream of chicken soup, enchilada sauce, diced tomatoes and green chiles, onion, garlic, chicken broth, chili powder and cheese. Heat over medium high until the cheese is melted and all of the ingredients are mixed together well.
  • In a 9x13 inch baking dish, layer the mixture and the tortillas like you would lasagna. Make sure to put a thin layer of the mixture on the bottom of the baking dish to prevent sticking. After layering, place dish in the preheated oven and bake for 45 minutes to 1 hour, until cheese starts to brown and bubble. Let stand and cool for at least 10 minutes before serving!

5 cups reserved Double-Duty Hearty Chili without Beans or any thick chili without beans
1-1/2 cups frozen corn (about 8 ounces)
1 can (15 ounces) black beans, rinsed and drained
1 can (15 ounces) pinto beans, rinsed and drained
6 flour tortillas (10 inches)
3 cups shredded Mexican cheese blend, divided
1 can (10 ounces) enchilada sauce
Optional: Shredded lettuce and chopped fresh tomatoes

Steps:

  • Preheat oven to 375°. In a large bowl, mix reserved chili, corn and beans. Spread 1 cup chili mixture into a greased 13x9-in. baking dish. Layer with 2 tortillas, 2 cups chili mixture, 1 cup cheese and 1/2 cup enchilada sauce. Repeat layers. Top with the remaining tortillas and chili mixture., Bake, covered, 20-25 minutes or until heated through. Sprinkle with remaining cheese. Bake, uncovered, until cheese is melted, 10-15 minutes longer. Let stand 10 minutes before cutting. If desired, serve with lettuce and tomatoes. Freeze option: Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 375°. Cover casserole with foil; bake as directed, increasing covered time to 40-45 minutes or until a thermometer inserted in center reads 165°. Serve as directed.

I got my picture in the paper for this one! My friends' husbands always fall in love with this when I bring it to parties! My 4 picky kids eat it! If you want to skip the charring step, simply tear the tortillas into fourths so they absorb the sauce better.

4 skinless, boneless chicken breast halves
garlic salt to taste
18 (6 inch) corn tortillas, torn in half
1 (28 ounce) can green chile enchilada sauce
1 (16 ounce) package shredded Monterey Jack cheese
1 (8 ounce) container reduced fat sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • Season chicken with garlic salt. Arrange in the prepared baking dish. Bake 45 minutes in the preheated oven, until no longer pink and juices run clear. Cool, shred, and set aside.
  • With metal tongs, char each tortilla half over the open flame of a gas stove burner for about 1 minute, until lightly puffed.
  • Pour about 1/2 inch enchilada sauce in the bottom of a medium baking dish, and arrange 6 tortillas in a single layer. Top with 1/2 the chicken, 1/3 cheese, 1/2 the sour cream, and 1/3 of the remaining enchilada sauce. Repeat. 1 can Old El Paso* Chopped Green Chilies, undrained
3/4 cup (175 mL) low fat sour cream
1 pkg (8 large) Old El Paso* Smart Fiesta* made with Whole Grain Tortillas
1 can (398 mL/14 floz) Old El Paso* Refried Beans
1 jar (215 mL) Old El Paso* Taco sauce
1/4 cup (50 mL) sliced green onions
1 cup (250 mL) shredded lettuce
3/4 cup (175 mL) chopped tomato

Steps:

  • Heat oven to 350ºF. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In medium bowl, mix chicken, 1 1/2 cups of the cheese, the chiles and sour cream.
  • Layer 3 tortillas in baking dish, overlapping as necessary and placing slightly up sides of dish (cut third tortilla in half). Spread about half of the beans over tortillas. Top with about half of the chicken mixture and half of the taco sauce. Layer with 3 more tortillas and remaining beans and chicken mixture. Green Chicken Enchiladas will be a huge hit with the family, everyone loves the flavors of this easy to make dish! Keep the ingredients on hand for an easy pantry meal!

8 corn tortillas
2-3 cups cooked chicken (diced)
1/2 cup diced onion
12 ounces evaporated milk
10.5 ounces can cream of chicken soup
4 ounces can diced green chilis
3 cups shredded cheddar cheese

Steps:

  • Preheat the oven to 375 degrees. Prepare 9x13 baking dish by spraying with non-stick cooking spray, set aside.
  • In a medium mixing bowl, whisk together the cream of chicken soup, evaporated milk and chopped green chilis.
  • Ladle a 1/4 cup sauce in the bottom of the prepared baking dish, then layer four tortillas on the bottom of the casserole dish.
  • Top with diced cooked chicken, half the cheese and half the remaining sauce.
  • Layer the second layer of tortillas on top of the cheese, spread with remaining sauce over the entire surface and top with a layer of cheese.
  • Cover the casserole tightly with aluminum foil and bake for 40 minutes or until the casserole is hot and bubbly.
  • To brown the top of the layered green chili chicken casserole, place it under the broil for 3-5 minutes. Watch carefully so it doesn't burn.
  • Cover loosely with foil and allow to set/rest for 10 minutes before serving.

  • Heat oven to 350F degrees.
