LOW-CARB ROOT BEER FLOAT POPSICLES



Low-Carb Root Beer Float Popsicles image

Delicious creamy low-carb, gluten-free popsicles with flavors of root beer and vanilla.

Provided by Harper Slusher

Number Of Ingredients 5

3/4 cup heavy whipping cream (preferably organic and grass-fed)
1/4 cup granulated stevia/erythritol blend
1 teaspoon vanilla extract
1 teaspoon natural root beer flavor
3/4 cup milk of choice (we used unsweetened almond)

Steps:

  • Pour cream into a medium mixing bowl. Using an electric mixer, whip until stiff peaks form.
  • Add sweetener, vanilla extract and root beer flavoring and beat until incorporated.
  • Add milk and blend to combine. Mixture will thin.
  • Whip mixture until it is frothy and thickens again slightly.
  • Pour into mold. Add popsicle sticks and freeze for several hours before enjoying.
  • To release popsicles, pour hot water over the outside of the mold.

Because of the extra sugar these do not freeze up rock solid. Their taste and texture is like the store-bought. You can get the same results with cream soda and it's delish. Teenager approved, by the way.

1 (2 liter) bottle root beer
½ cup white sugar
¼ teaspoon root beer flavoring (such as Zatarains® Root Beer Extract)

Steps:

  • Pour root beer into a wide pot. Bring to a boil; reduce heat to low. Stir in sugar until dissolved. Simmer until reduced by 1/3, 15 to 20 minutes. Remove from heat; cool completely, about 30 minutes. Stir root beer flavoring into mixture. Pour root beer mixture into ice pop molds; freeze until firm, about 1 hour and 30 minutes.

  • In a large bowl, combine the whipping cream, sweetener, and vanilla extract. Beat until it hold stiff peaks.
  • Remove about 1/3 of the whipped cream to another bowl and reserve. Whisk in the flat root beer and the root beer extract, if using.
  • Dollop whipped cream into the bottom of each of the popsicle molds. It doesn't need to be perfect, streaks make it fun. Gently tap the molds on the counter to get the whipped cream to the bottom.
  • Pour the root beer mixture into the molds. Freeze one hour, then push wooden popsicle sticks 3/4 the way into each popsicle. Continue to freeze until firm, at least another 3 hours.
