LOW CARB/NO GRAIN CEREAL
A delicious nutty cereal with no grains, fills you up. Inspired by girl gone primal and comforting eats. Makes a large batch of cereal. Input for calorie count:)

Steps:
- 1.Beat eggs whites until soft peaks form.
- 2.Add stevia, pumpkin pie spice and vanilla.
- 3.Add nuts to egg white mixture and mix well. Taste for sweetness.
- 4.Line a cookie sheet with parchment paper.(do not use wax paper!).
- 5.spread granola evenly over parchment paper with spatula.
- 6.Bake in a preheated oven just below 225 degrees.
- 7.Cook for 80 minutes,stirring/breaking up every 20 minutes(set a timer).
- 8.Then you can turn off oven and leave for 1 hour or longer to continue to dehydrate.
- 9.Remove and allow to cool.Crumble/ break up with clean hands before placing in an air tight container.
- 10.Makes about 8 cups(serving is 1/2 cup).

- Preheat the oven to 325 degrees F (163 degrees C). Line a large baking sheet, or two small ones, with parchment paper. (I used two 13x9 in (33x23 cm) cookie sheets.)
- Pulse almonds and hazelnuts in a food processor intermittently, until most of the nuts are in chopped into large pieces (about 1/4 to 1/2 of the full size of the nuts).
- Add the pecans. Pulse again, stopping when the pecans are in large pieces. (Pecans are added later since they are softer.)
- Add the pumpkin seeds, sunflower seeds, erythritol, and golden flaxseed meal. Pulse just until everything is mixed well. Don't over-process! You want to have plenty of nut pieces remaining, and most of the seeds should be intact.
