Like the taste of deviled eggs but not all the added fat and cholestrol? These are so close to eggs my family couldnt hardly taste diffrence. I got this from Taste of home light n' tasty.

10 hardboiled egg
3/4 cup mashed potatoes (prepared with skim milk and low fat butter or margarine)
1 tablespoon fat-free mayonnaise
1 teaspoon prepared mustard
2 -3 drops yellow food coloring (optional)
paprika

Steps:

  • Slice eggs in half lengthwise; remove yolks and refrigerate for another use. Set whites aside. In a small bowl, combine mashed potatoes, mayonnaise, mustard and food coloring if desired; mix well. Stuff or pipe into egg whites. Sprinkle with paprika. Refrigerate until serving.

6 hard-boiled large eggs
3 tablespoons reduced-fat mayonnaise
2 tablespoons hummus
1/2 teaspoon curry powder
1/8 teaspoon salt
1/8 teaspoon pepper
Dash cayenne pepper
Toasted pine nuts, cayenne pepper and additional curry powder, optional

Steps:

  • Cut eggs in half lengthwise. Remove yolks; set aside egg whites and 4 yolks (discard remaining yolks or save for another use)., In a large bowl, mash reserved yolks. Stir in mayonnaise, hummus, curry powder, salt, pepper and cayenne. Stuff or pipe into egg whites. If desired, garnish with toasted pine nuts, cayenne pepper and additional curry powder. Chill until serving.

Inspired by my hubby's latest diet. His own personal idea of blending south Beach and low fat. Thus I was tasked with developing a deviled egg recipe that didn't overdo it on the mayo and was still low-carb. These are really yummy!

2 hard-boiled eggs
1 teaspoon low-fat mayonnaise
1 tablespoon Dijon mustard
1 tablespoon lemon juice
1 tablespoon low fat cottage cheese
1/4 teaspoon cracked black pepper
1/4 teaspoon paprika, for dusting

Steps:

  • Peel hard-boiled eggs, halve and remove yolks to a bowl.
  • Add remaining ingredients except for paprika.
  • Blend thoroughly. I use an immersion stick blender. You could use that or hand-held electric mixer. But you want something to make it creamy and take away texture of cottage cheese.
  • Fill egg halves and dust with paprika. Enjoy!

Remove the eggs from the water and run under cold water for about 1 minute, until cool enough to touch. Peel the eggs under cold running water. Pat them dry.
  • Slice the eggs in half lengthwise. Scoop out the yolks and discard 6 of them. Set aside the whites. Place the remaining yolks in a medium bowl and mash with the tofu, mayonnaise, mustard, hot sauce, horseradish, and chives. Season with salt and pepper. (You can prepare the filling and store it separately from the egg whites in the refrigerator in airtight containers for up to 2 days.)
  • Spoon the yolk mixture into the corner of a plastic bag and snip off the end. Pipe the yolk mixture into the egg whites. Arrange the deviled eggs on a platter and sprinkle with paprika and chives. You can hold the stuffed eggs in the refrigerator for up to a few hours before serving.
