DOUBLE CHOCOLATE MUFFINS (LOW-FAT)
These low-fat muffins are so good. They have a great texture and good chocolate flavor, especially considering that they are so much healthier than the regular version. This recipe is from a book called Gloria's Gourmet Low-Fat Muffins.

Steps:
- Preheat the oven to 400.
- Sift the dry ingredients together in a large bowl.
- Add the chocolate chips and stir to combine.
- Whisk the wet ingredients in a medium bowl.
- Pour into the dry mixture.
- Stir just until mixed.
- Do not overstir.
- Spoon the batter into a greased or papered muffin tin.
- Fill each cup nearly to the top.
- Bake for 15 to 20 minutes.
- Cool the muffins at least 10 minutes before removing from the tin.

- Stir in yogurt, milk and vanilla just until moistened.
- Coat muffin cups with nonstick cooking spray; fill two-thirds full.
- Bake at 400 degrees for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack; dust with confectioners' sugar if desired.

- Preheat oven to 425°F (218°C). Spray 12-count muffin pan with nonstick spray. Do not use liners.
- In a large bowl, whisk the applesauce, sugar, honey, egg whites, greek yogurt, and vanilla extract until smooth.
- Sift* the flours, cocoa powder, salt, baking soda, and baking powder together. Slowly stir in the wet ingredients, being careful not to overmix. Get any dry pockets of flour out. Fold in the mini chocolate chips. The batter will be a little chunky.
- Divide the batter evenly among the muffin cups – fill them all the way to the top. Bake for 5 minutes at 425°F (218°C) then, keeping the muffins in the oven, reduce the oven temperature to 375°F (191°C). Bake for an additional 13 minutes or until a toothpick inserted in the center comes out clean.

- Preheat oven to 350 degrees F. Grease a standard 12 cup muffin tin with non-stick cooking spray.
- In a large bowl, combine the dry ingredients: flours, sugar, cocoa, baking soda, cinnamon, salt and chocolate chips and stir to combine.
- In a medium bowl, beat together the eggs, yogurt, milk, applesauce and vanilla. Make a well in the center of the dry ingredients and stir in the wet mixture, stirring just until moistened (don't over-mix).
